Can I Make This Recipe Gluten

It is gluten-free, though nobody would know just by tasting it trust me!

Bear in mind that minimising cross-contamination is hugely important if youre Coeliac or making this for someone who is. Heres some tips from Coeliac UK on minimising the risk of cross contamination.

Also, make sure that all ingredients used dont have any gluten-containing ingredients. Then make sure that they also dont have a may contain warning for gluten, wheat, rye, barley, oats , spelt and khorasan wheat .

Preparing The Gluten Free Pancake Mix To Store

Not only can you make this recipe in stages, beginning with the dry gluten free pancake mix, and store it in your pantry, its designed to be used just like that.

You dont need a different gf pancake mix to make a gluten free breakfast bake, gluten free Bisquick-style apple coffee cake, classic light and fluffy gluten free pancakes, or miniature or standard sized gf pancake bites. This mix does it all!

Homemade Gluten Free Flour Blend

Using a homemade mix of gluten free flours made the very best, soft, fluffy pancakes.

I think this is because I was able to adjust the amount of gum needed and I used the bare minimum per recipe as any more than that tends to make them sticky, this is a problem with most ready made blends that have gum added which is often too much in my opinion.

I tested and retested this recipe with various gluten free flour combinations and the best results I got were using a combination of white rice flour, brown rice flour, and potato starch. If you can find those specific flours I recommend using them in the quantities listed in the recipe below. You could substitute one or more of the flours but the result will probably be different.

How To Make Easy Gluten

  • I always like to start by mixing my liquid ingredients first. In a large bowl whisk the egg , granulated sugar, pure vanilla extract, and the vegetable oil together.
  • Add the gluten-free flour, xanthan gum , gluten-free baking powder, and salt to the egg mixture and mix until fully combined.
  • Stir in milk and mix until smooth. For thinner pancakes stir in 1 to 2 tablespoons of milk.
  • Scoop the batter into a ¼ cup measuring cup and pour the batter onto a greased griddle or pan for each pancake.
  • Cook the pancakes until the batter starts to bubble a little and the pancakes start to puff. Flip/turn over the pancakes and cook the pancakes until they are golden brown.
  • Top with butter, syrup or favorite topping. Enjoy!
  • These pancakes can be frozen and reheated in the microwave. To freeze the pancakes, allow them to completely cool and place them on a parchment lined baking sheet and flash freeze them for 10 minutes. Flash freezing them keeps them from sticking together. Once the pancakes are flash frozen, you can remove them from the baking sheet and place them inside a freezer-safe bag or air-tight container.

What Are Gluten Free Pancakes Made With

With so many fantastic gluten-free flour blends on the market, theres no need to reinvent the wheel use a measure-for-measure gluten-free flour substitute in this recipe, instead of coconut flour or almond flour. This is the best way to match the taste and texture of the classic pancakes we know and love.

I tested this recipe using King Arthur Flour Gluten-Free Measure-for-Measure Flour. Whatever blend you use, ensure that it is a 1:1 measure-for-measure flour that already includes a binder like xanthan gum.

Ingredients In Paleo Pancakes

Almond Flour – A finely milled almond flour is the best to use when baking these paleo pancakes.

Tapioca Flour – Helps with the texture, and to hold the paleo pancakes together.

Baking Soda – This leavener helps the pancakes fluff up.

Salt – Salt helps bring out the other flavors.

Maple Syrup – For sweetness and flavor.

Eggs – For added protein and fat, and to hold everything together. Eggs also help with texture.

Vanilla Extract – For flavor and depth. Pure vanilla extract is best.

Yes, like I mentioned above, you can freeze paleo pancakes. Always bring your almond flour pancakes to room temperature first, before you freeze them.

After they are at room temperature you can store them in an airtight container or a zip lock bag for up to three months.

Some people like to place pieces of wax paper or parchment paper between each pancake. I donât find you need to.

If I Use Bananas How Ripe Should My Bananas Be

The riper the better!! I like to use bananas when theyre turning brown, or once theyve already turned fully brown. This way they are sweeter! If a banana has already turned partially or fully brown but youre not ready to make this bread yet, you can throw them in the freezer and keep them for up to 2-3 months until you are ready to make this! Once youre ready, let the bananas thaw by sitting out for 2-3 hours on a papertowel to absorb the moisture from defrosting, or else it will make a mess! Also, once the banana thaws it will be a mushy texture which is actually perfect for this recipe!

How To Thicken Pancake Mix

If your pancake mix doesnt have the required consistency and youve already used up your batter mix, try not to worry, there are lots of things you can do to salvage it!

  • Add more flour. The easiest way to thicken your batter is to add flour. Of course, make sure that youre adding gluten-free flour. Flour is the perfect thickening agent but be careful not to add too much. You dont want your pancakes to have a grainy texture!
  • Add dry ingredients. Adding ingredients such as gluten-free oats or cornmeal is also a quick way to thicken your batter, however, the texture will definitely not be smooth! Although it does make for much healthier pancakes.
  • Buttermilk powder. Much like flour, buttermilk powder is great at thickening. You may need to add more baking powder to ensure you get enough rise from your pancakes
  • Eggs. Eggs are a great way to thicken the batter. Youll definitely not have dry pancakes if you add an egg to your batter mix. However, the taste of egg may become quite overpowering, so if youre not a lover of eggs, this may not be the best option
  • Pancake Mix. Thats right one of the easiest ways to thicken your mix is to add more of your dry pancake mix to the batter, like the Bobs Red Mill Gluten Free pancake mix.

    Add The Wet Ingredients

    Ensure the eggs have already been whisked separately in a small bowl, for an even texture. Add the whisked eggs to the dry mix along with the milk, vanilla, and honey.

    Gently whisk again until just combined its alright if some small lumps remain in the batter, but large lumps of flour should be avoided.

    Dont over-mix the batter, because it will knock all the air out of it and lead to tough, dense, chewy pancakes instead of a light and fluffy texture.

    HEAT pancake griddle to 375°F . Lightly grease griddle.

    Can I Make Your Gluten

    Yes! Just use dairy-free milk and thats it. As milk is a large part of this recipe, Id recommend to:

    • Use a sweetened dairy-free milk, ideally youll get a result thats closer to using real milk in taste and texture.
    • Use a neutral flavoured dairy-free milk like sweetened almond milk. Otherwise your pancakes can end up tasting like your dairy-free milk its fine if they do, but bear in mind it will affect the flavour!

    Also bear in mind that dairy-free milk generally wont result in golden-coloured pancakes like mine in the photos but theyll taste identical!

    How To Make Gluten Free Pancakes:

    • First, mix together the flour, baking powder, baking soda, salt and sugar.
    • Second, add the eggs, milk and vanilla extract. Make sure to mix everything until smooth.
    • Heat the skillet you plan to use and make sure it is lightly oiled. I normally use a frying pan or electric skillet.
    • Next, pour ¼ cup pancake batter on to the pan. Brown on both sides.

    How To Make Paleo Pancakes

    Gluten Free Pancakes

    Always follow the recipe first. Don’t work with substitutions until you know how the recipe works. Once your batter is ready, heat your pan or electric griddle and start making your paleo pancakes.

    Mix dry ingredients in a large mixing bowl then transfer to an airtight container if you are saving it for later. Don’t forget to label your container with the date.

    When you are ready to make paleo pancakes: In a large mixing bowl, whisk together eggs, maple syrup, vanilla, and dairy-free milk.

    Add dry ingredients to the wet ingredients and stir until smooth. If you mixed up more than one batch of paleo pancake mix, measure out approximately 1.5 cups + 1 tablespoon of mix. In weight that’s about 180 g.

    Spoon ¼ cup of prepared paleo pancake batter onto a medium hot griddle and cook until the edges start to brown and bubbles form.

    Flip paleo pancakes over and cook until brown and cooked through.

    Always check for doneness before you remove your pancake from the pan or griddle.

    Serve these paleo pancakes hot. These almond flour pancakes freeze well.

    How To Make This Recipe:

    Step 5: Pour some batter into circles on your hot skillet. Cook 3-4 minutes until you see bubbles in the batter. Use a spatula to flip the pancakes over to the other side. Cook 2 minutes and remove from the pan to a plate.
