First and foremost, my mission is to try to make gluten free recipes that are just as good than those things we remember eating before going gluten free. That rarely means healthier. This is not a blog for healthy gluten free recipes.

I know one cup of sugar sounds like a lot. But you have to remember were trying to make something the same texture that we remember it being back in our BC days. Ive found that sometimes it requires more drastic measures.

Take a look at the amount of yeast in this recipe. Its more than double the amount that is usually in a bread recipe of any kind . A cup of sugar does add a little sweetness to the dough, but more importantly it feeds the yeast. This is crucial in order to create the texture we really wantlight, fluffy, softall those qualities of gluten-filled bread that we miss so much.

Also look at the amount of servings made from this one recipe. Using my 3-ounce starting point, we can make 15-16 gluten free hamburger and hot dog buns. In just ONE recipe!! Thats a whole lotta buns if you ask me! Are you gonna sit and eat all of those at once? Most likely youll have a bun with your burger or dog and then freeze the rest individually. Theyll be resting peacefully awaiting the next time you have a burger or dog.

Get your grill on this weekend and have that hamburger with a bun that squishes down just like we want. Or have a hot dog without needing a knife and fork. Or just eat one of each and call it a day!!

Portion out the dough into about 3-ounce pieces. I use my scale to measure each so theyll all be roughly the same size. Roll them into balls . Place them about 2 inches apart on a parchment-lined baking sheet.

Take your hand and press down on them to flatten them to about 1/2-inch thick. This just ensures that they all rise up and not out. Cover the rolls while you work on shaping the hot dog buns.

Udis Gluten Free Soft White Sandwich Bread Copycat Recipe

So many of my followers have been enjoying the new Udis Gluten Free Soft White Sandwich Bread that I thought I would make a copycat recipe. My husband really enjoys it for toast and for sandwiches. This bread is designed to make sandwiches in advance and the bread remains soft and fresh. It is wonderful to toast as well. Keep in mind that while this bread is denser compared to my other gluten free bread recipes, you can leave it on the counter and it will remain fresh for at least two days. The real Udis new Soft Gluten Free White Bread Ingredients:

Water, Modified Tapioca Starch, Rice Flour, Rice Starch, Canola Oil, Tapioca Starch, Cane Sugar, Sorghum Flour, Egg Whites, Sugar Cane Syrup, Modified Cellulose, Cultured Brown Rice, Brown Rice, Salt, Yeast, Guar Gum, Xanthan Gum, Enzymes.

While I did use modified tapioca starch , I did not use cultured brown rice or modified cellulose, which are all highly processed ingredients.

Invert Syrup and Brown Rice Syrup Substitute:

Youll notice that Udis recipe calls for sugar cane syrup. It is the same thing as organic invert syrup. If you do not have access to either invert syrup or gluten free brown rice syrup, just boil 3/4 cup water with 3/4 cup sugar and cook until it reduces and reaches the consistency of syrup. Just use 1/4 cup. you can also substitute with agave syrup or honey.

The No Bun Burger Should Be A Choice

Whether theres a gluten free bun available or not, I usually go for a lettuce wrap. If that makes no sense to you considering how Ive been complaining about the bun-less gluten free burger since 2011, allow me to explain.

If Im eating a burger, whether its vegetarian or meat, I just dont care for it with any sort of bread in every bite. Ive been like that for as long as I can remember, long before I even knew what gluten was. But that is my choice.

My gluten free son likes a bun, and he should have one. There are more and more fast-casual hamburger restaurants that can accommodate gluten free eaters, which is great. But many of them can only offer you a lettuce wrap. I love lettuce wraps, but I prefer to choose among alternatives.

This gluten free bun recipe is very simple, accommodates other dietary restrictions more easily than my gluten free soft hamburger bun recipe from Gluten Free on a Shoestring Bakes Bread, and the dough can be made up to 3 days ahead of time. Plus, the baked rolls freeze really well.

Baking Gluten Free Hamburger And Hot Dog Buns

Once the rolls have almost doubled in size, take them out of the oven . Preheat the oven to 375 degrees F. Make an egg wash, consisting of one egg beaten with a splash or two of water. Carefully brush this onto each roll.

Bake the rolls for about 15-20 minutes, or until golden brown and they spring back when lightly touched. Remove them from the oven and brush them with a generous amount of melted butter. Allow them to cool on a wire rack before slicing open.

Normal people actually need carbohydrates for around 55 to 60 percent of the healthy diet. Actually, gluten is found in most carbohydrate-containing foods like wheat.

This basically means that eliminating wheat, barley, rye, and other grains in the diet will take off the essential source of complex carbohydrates crucial for a balanced diet. There may also a loss in fiber, vitamin B, iron, calcium, folate, and vitamin D. Grill up those hot dogs and hamburgers this weekend because these gluten free hamburger and hot dog buns are the best youll ever have!!

One of my favorite things to eat on Memorial Day Weekend are hamburgers and hot dogs. But for years Ive eaten those either wrapped in lettuce or on their own with a knife and fork. Ive tried so many store bought buns over the years and theyre either too hard or too bread-y.
