Glutino Gluten Free Chocolate Wafers

Glutino: Lemon & Milk Chocolate Gluten Free Wafer Review

I had to include these! They arent exactly a cookie, but they are chocolate wafers which I think is enough for them to be in this section. They are gluten-free and kosher, and quite honestly, the perfect snack to get you through the day. The taste is very similar to that of a KitKat and since my diagnosis, I have certainly been missing them.

Theyre made with potato starch instead of wheat as the main ingredient and they are very moreish, so be sure to stock up!

Homemade Oreo Filling Options

Sandwich the crispy gluten-free chocolate wafers with your choice of vanilla or peppermint buttercream. Once winter rolls around, I’m a peppermint fanatic.

To get in the holiday spirit, I use peppermint and vanilla extracts to flavor the filling. The result is a cross between an Oreo and a Thin Mint. Start with a small splash of peppermint extract, taste, and adjust, being careful not to turn your filling into toothpaste territory. These chocolate peppermint sandwiches are a new staple on my holiday cookie plate.

If you’re averse to peppermint, no problem! Just swap out the peppermint extract for extra Rodelle organic vanilla extract. You could even add a tablespoon of matcha to the filling!

When I tested these homemade Oreos, I tried out both buttercream and cream cheese frosting filling options. I was certain I’d love the cream cheese filling the most.

While I loved the cream cheese filling equally as much, the flavor strayed quite a bit from the classic Oreo notes. The cocoa wafer was less prominent. For that reason, I’m sticking with buttercream. If you’re not an Oreo purist, feel free to swap out half the butter for cream cheese. The cream cheese frosting filling adds tangy notes that make the homemade Oreos taste a bit like a whoopie pie.

Whichever choice you make, these homemade gluten-free Oreo copycats deserve a place on your holiday cookie plate!

What Flour To Use To Make Them

I like to use my universal homemade gluten-free flour blend. Which is a mix of the following flours :

3. Sweet Rice Flour

4. Tapioca Flour

5. Xanthan Gum

If you cant make that one, you can try with any gluten-free flour mix . The final result using different flour mix might vary slightly, depending on what flours your mix contains.

Rolling Out Cookie Dough

Please just wait and hear me out. I know you dont like to roll out any dough, including cookie dough. For some of you, its even a deal-breaking page-turner.

You see a recipe that calls for rolling out cookie dough ), and youre out of there. But this recipe is different, for real.

The dough is so incredibly soft when its first made that it rolls out incredibly easily between two sheets of parchment paper. And since youre not rolling it thin, but instead 1/4-inch thick, before you start to roll your eyes ?its already rolled out plenty.

Then, you just press a cookie cutter into the dough, and chill it before you even attempt to remove the shapes from the surrounding dough. That way, it pulls off the paper easily.

How To Make The Cookies

  • Cream the butter and sugar until light and fluffy.
  • Add the egg and vanilla then beat until combined. I like to scrape the sides of the bowl with a spatula to make sure everything is incorporated.
  • Add the dry ingredients and beat until a chocolate cookie dough forms.
  • On a floured surface roll out the cookie dough and cut out round cookies that are inch thick. My cookie cutter was about 2 ¼ inch wide. You can chill the dough for a couple hours if you find it hard to work with while soft.
  • Bake the cookies at 350 degrees Fahrenheit on a lined sheet pan turning halfway through. Let them set for 1 minute before transferring to a cooling rack.
  • Let the cookies cool completely before crushing in a food processor to make cookie crumbs.

Why You Need Chocolate Wafer Cookies

Remember those Nabisco chocolate wafer cookies that come in those narrow packages? These crispy, crunchy chocolate cookies are just like those, but of course, theyre gluten free. And they are perfect for doing some very important things, especially in the summertime.

When you see blunt edges on cutout cookies, that means that they really havent spread or risen much during baking. They have a way different texture than soft & chewy chocolate cookies, which are more cakey. Those give when you bite into them, which makes them perfect for an ice cream sandwich.

These crunchy cookies make excellent cookie crumbs when crushed. Plus, theyre lovely for icebox cakes of all kinds. I know that you cant really call something no bake when you had to bake cookies first to make it. But hear me out!

Ive searched high and low, and I simply cant find any simple Nabisco-style gluten free chocolate wafer cookies for sale. You can find packaged GF graham crackers , and even crispy chocolate chip cookies.

But the simple, noble chocolate wafer must be baked. But they keep for weeks on the kitchen counter when stored in a sealed glass container, or for months in the freezer.

Gluten Free Chocolate Cookies

These Gluten Free Chocolate Cookies are also Dairy Free! They are easy to make and taste simply delicious! Nice and crispy wafer cookies!

If you have been here before, you have probably seen that I do quite a lot of gluten free and dairy free recipes. My Mom is intolerant of both, so I try to make her something special for the holidays!

Her favorite dessert is lemon meringue pie, so I thought it would be fun to try a lemon meringue pie with a chocolate cookie crust. My motivation for the chocolate crust was two- fold really. #1. I have yet to find a GF & DF pie crust that does not taste like chalk, and I have tried at least 10! #2? Well, its chocolate, obviously! And who doesnt like chocolate with lemon? I ask.

I almost did not have enough for my pie crust because my 18 year old son, stole one every time he walked past! He loved them and he is not even on a restricted diet !

I am not a huge baker, so I researched a crispy chocolate cookie on Google, and liked the sound of this one, from Gluten Free on a Shoestring the best! I adapted her recipe to render the cookies dairy free. It worked out perfectly!

These chocolate cookies are wafer thin, so they are perfect for what my intended use for them was! They are a bit crispy and a bit chewy, at the same time, so they are great!

Can You Make Gluten Free Chocolate Cookies Ahead

Yes. These chocolate cookies can be made up to a week ahead, if stored on the counter, in a cookie tin. Dont store in plastic, because, again, the texture will suffer! Dont refrigerate them either, because they will get soggy.

If you dont like to make cutout cookies, dont be afraid of these because it is a nice dough. The dough works easily!!
