I think a cast iron skillet is one of the best pieces of equipment you can have in your kitchen. You can use it to make a steak or make a cake.

If you have an 8-inch cast iron skillet, use it! Pop it in the oven before you turn the oven on to preheat. A hot skillet gives gluten-free cornbread a crispy brown exterior. And if youve ever baked gluten-free, you know how challenging it can sometimes be to get a nice brown crumb on baked goods.

When the oven is at temperature and your batter is ready to go, remove the skillet from the oven. Grease it generously. Use either cooking oil or nonstick cooking spray. If you use vegetable oil, swirl it around in the pan to coat the pan evenly.

Have all the ingredients at room temperature. Preheat oven to 375°F. Generously grease a 9 x 9-inch gray, nonstick pan. Place entire package of cornbread mix in large mixer bowl. Add 1 1/2 cups milk, 2 large eggs and 1/3 cup canola oil or melted butter. Mix on low speed with electric mixer until blended. Beat another 30 seconds with mixer on high. Pour into baking pan. Bake 25 minutes or until nicely browned.

Is Krusteaz Cornbread Gluten

How Do You Make Gluten Free Cornbread From Scratch

  • Heat a 10-inch cast iron skillet in the oven for 10 minutes . If making muffins, line muffin tins with paper liners or spray them with cooking spray .
  • In a bowl, whisk together cornmeal, flour, sugar, salt, baking powder and baking soda.
  • Make a well in the center of the dry ingredients and crack in the eggs. Break up the eggs slightly, then pour in the buttermilk. Whisk the eggs and buttermilk, incorporating the dry ingredients.
  • Whisk in the melted butter.
  • Take the hot skillet out of the oven and swirl in a tablespoon of vegetable oil . Add the batter to the hot pan, spreading it in an even layer.
  • Bake the GF cornbread for 15-18 minutes, or until the edges are golden brown and the top is lightly cracked.

This recipe uses two different chemical leavening agents: baking powder and baking soda. As you might know, baking soda requires an acid, like buttermilk or molasses, to be present in the recipe to work. But this recipe contains no acid. So why include it? Flavor. Due to its alkalinity, baking soda deepens flavor when used judiciously in a recipe. The mere 1/4 teaspoon of baking soda enhances the flavor and helps the cornbread to brown. Pretty impressive for such a small amount!

  • Cornmeal: Use a fine or medium grain cornmeal for this recipeI use Bobs Red Mill Brand.
  • Gluten Free All-Purpose Flour: Ive tested this recipe with Bobs Red Mill 1-to-1 Baking Flour, Cup 4 Cup Flour and King Arthur Measure-for-Measure Flour. All work great! If youre not gluten-free you can use regular all-purpose flour.
  • Sugar and salt: A touch of sugar gives this cornbread subtle sweetness. Feel free to cut back or add more to taste, depending on how sweet you like your cornbread.
  • Baking Soda & baking powder: Baking soda and baking powder give the cornbread its lift, making it light and fluffy.
  • Eggs: Eggs also help the cornbread rise and provide a light crumb.
  • Buttermilk: Buttermilk helps activate the baking soda and gives the cornbread a tender texture. See below for a dairy free version! Also, if you dont have buttermilk, dont miss my hack in the tips below.

How To Make Gluten Free Cornbread

Preheat your oven and whip this skillet cornbread recipe up in no time! You can make this gluten free cornbread dairy free or dairy full. Either way, youre going to love the texture and flavor. In summary, heres how to make it :

  • First, lightly grease your skillet or pan using olive oil or butter. Preheat the oven.
  • Second, in a medium bowl whisk the milk and apple cider vinegar together. Allow to stand for five minutes.
  • Third, to the milk mixture, whisk in the eggs, and melted butter or olive oil.
  • Next, into the bowl with the wet ingredients, add the dry ingredients including flour, cornmeal, sugar, baking powder and soda and salt. Whisk.
  • Last, pour batter into prepared pan and bake until golden brown and toothpick inserted comes out clean.

Cut into wedges or squares and serve warm with butter and/or honey.

Veganized Bob Red Mills Cornbread Recipe

For Americans, cornbread is among the most popular southern comfort classics! It continues to be lovingly served as a side dish to a delicious warm meal, or as a filling afternoon snack. I can remember the frequent days when my mom would make Jiffys cornbread for our family during weeknight dinners, and holidays while she was a stay at home mom. It was honestly one of my favorite things to eat while I was growing up!

Recently, Ive been learning all of the various ways that people have enjoyed eating cornbread in their homes. Bobs Red Mill makes a cornbread mix that has gluten and another option that is gluten-free. Their Stone Ground Cornbread & Muffin Mix contains wheat flour, making it not a good option for a gluten-free diet.
