How to make a Gluten Free, Lactose Free, Sugar Free Cake

I knew I could make a healthier cake version that provided not only satisfaction but actually nutrients. So instead of conventional sugar I used maple syrup / crystals and stevia extract.

As a butter substitute I used avocado, fat provides moisture in the cake.

Instead of regular milk I made some almond milk the day before.

As for the eggs, they are crucial in baking because eggs bind the cake together so that it doesnt crumble, they provide moisture, texture, and lift.

I wish I could use flax seeds only, but I would not recommend trying to make this cake egg free.

When it comes to the dairy free frosting it took me a while to decide which one to choose: a coconut whip frosting or a cashew frosting.

I didnt want the coconut flavor to come out in this cake and I didnt want too much cashews either so I just mixed them .

And in order to enhance the flavor I incorporated some vanilla and decaf espresso powder .

All these combination brought up the mocha name in this cake, which is what you usually ask for an espresso combined with steamed milk and chocolate.

What other sugar replacements can I use?

Great question! You should be able to use any calorie free sweetener for this recipe, but I have not tried any others myself. If you do, let me know how it goes!

Can I use almond flour instead of coconut flour?

These two flours are very different, so I do not recommend using almond flour for this cake recipe as it will not turn out!

Do I have to use greek yogurt in the frosting?

No! If you would rather just make regular cream cheese frosting for this cake, feel free to do so!

How many carbs in carrot cake?

This carrot cake only has 13g total carbs per slice and only 6g of net carbs! That is a lot less than the usual 22g+ in a normal carrot cake!

Is carrot cake high in fiber?

This carrot cake is because it uses high fiber coconut flour! At 7g of fiber per slice, this is a very healthy, high fiber cake!

Since its my birthday today, I wanted to celebrate with a pretty birthday cake. I actually made the cake yesterday and since I had all of the other recipes ready I only had to concern myself with preparing and assembling the cake.

Ive made homemade birthday cakes for my family for over twenty years. Its something I really enjoy. Eight years ago I started baking gluten-free low carb birthday cake recipes. They arent any harder to make than regular cakes and I enjoy them even more. Maybe youve seen the low carb chocolate birthday cake or the low carb peanut butter chocolate birthday cake I shared last year? They were fun.

When I first began my low carb journey I wasnt sure I would ever eat baked goods again, let alone sugar free cakes. That changed the moment I saw the beautiful cover photo of Elana Amsterdams cookbook, The Almond Flour Cookbook, which featured a chocolate almond flour cake. I knew then, that enjoying the occasional low carb keto treat would be possible.

This is the first time I have shared a gluten-free low carb birthday cake recipe that was vanilla, although I do have a nice recipe for vanilla cupcakes. I usually post low carb chocolate cake recipes just because low carb vanilla cakes made with almond flour and coconut flour are so dark in color. Theres no way around it really. Of course, I could have used a cheaper butter and egg whites instead of whole eggs, but I didnt.

But together, Im not kidding when I say that this is by far the best paleo chocolate cake recipe out there. It may even be the best chocolate cake recipe. Period.

Can I Use Baking Powder Instead Of Baking Soda

Yes! Iâs not a 1 to 1 but if youâre in a pinch you can use baking powder to help your grain-free humming bird cake. To substitute the baking soda with baking powder, use 4 teaspoons for every teaspoon of baking soda called for in a recipe.

If you are at a higher elevation, try using half as much baking powder so your cake doesn’t explode.

How To Make Sugar

If you can’t enjoy chocolate cake without frosting, I’ve got you covered.

This cake requires a creamy decadent frosting/icing, but not as sweet as you may be used to, and that’s for good reason. To live sugar-free, you need to slowly adapt your tastebuds to less sweet foods.

The cream cheese provides some sharpness to the overall flavour which I quite enjoy since I have finally lost my sweet tooth.

How To Serve Flourless Chocolate Cake

The hardest part comes next waiting! Resist the urge to dig in right away. Let the sugar-free flourless chocolate cake cool to room temperature right in the pan. Then, refrigerate overnight, for at least 8 hours.

Why? This helps the cake set and also finalizes the dense, silky texture. Please dont skip the chilling step, because the texture will not be very good without it.

Remove the pan from the fridge 1 to 2 hours before serving. Pop the sides off the springform pan and carefully flip the cake onto a towel, then flip back onto a plate or cake stand.

You can dust with additional powdered sweetener if desired. I like to add raspberries!

Make sure to let the flourless chocolate cake reach room temperature before slicing. Otherwise, it will crack when you try to cut into it. Besides, the texture is best at room temp.

This Cake Is Allergy Friendly

Healthy Gluten Free Sugar Free Carrot Cake

As someone with a severe nut allergy, I can relate to how hard it is to find an allergy friendly dessert.

  • No Gluten To make this cake gluten-free, I used a combination of coconut flour and tapioca starch as the base.
  • No SugarLakanto monk fruit is a 1:1 white sugar replacement. It is zero calorie, zero glycemic, and is sweetened using erythritol and monk fruit extract, and NOT regular white sugar.
  • No Nuts Many gluten free baking recipes use either cashews or almonds, but not this one! This recipe is totally nut free. Perfect for serving at kids parties. Gotta love that.

Tips For Baking With Almond Flour

If you store almond flour in the Freezer, make sure to bring it to room temperature before you bake with it otherwise it will absorb too much moisture from the wet ingredients.

Spoon your almond flour into your measuring cup, don’t scoop.

Almond flour is not a 1-t0-1 for regular gluten-free flour or coconut flour.

Every once in a while I’ll forget to bring the almond flour to room temperature before I need it. Don’t make that mistake, trust me. It absorbs too much liquid.

Not at all! I really enjoy working with this flour. It is very easy to bake with, and the baked goods it produces are flavorful, with a nice tender crumb.

I used to imagine gluten-free baked goods as something dry that you had to choke down. But when you get the ratios right, this is not the case at all. And this wonderful almond flour cake is a prime example. These almond flour biscuits are another great example.

Pro Tips For This Gluten Free Coffee Cake Recipe

Gluten-Free and Sugar-Free Chocolate Cake from NOW Foods

Beating the eggs and sugar at the beginning is essential in order to keep the coffee cakefluffy and airy. Try not to add more flour than specified even though other recipes require a denser batter.

If you dont want your streusel to melt entirely while baking, place it in the freezer while making the batter and add it to the coffee cake 15 min before it is done cooking. This will prevent sinking as well.

Put parchment paper at the bottom of the pan for easy removal. Otherwise it would be a little tricky taking it out of the pan.

Variations On The Basic Recipe

In addition to topping this almond flour cake, you can also add various ingredients to the batter to make interesting variatons:

  • The zest of a lemon or an orange will really elevate this cake. Add about a tablespoon, and make sure you only grate the outer peel, not the bitter white layer.
  • If you like cinnamon, try adding a teaspoon of cinnamon to the batter.
  • If you’d like to use a granulated sweetener, you’ll probably need to add a liquid to the cake . I haven’t tried it so I’m not sure how much.

How To Make Chocolate Buttercream Frosting

  • In a large bowl cream, the softened butter until smooth with a stand-up or hand mixer.
  • Add the pure vanilla extract and almond extract to the butter. Mix until fully combined.
  • Add the cocoa powder and mix until fully combined.
  • Add the powdered sugar one cup at a time to the butter mixture and mix until fully combined.
  • Add the milk to the frosting and beat until smooth and spreadable.
