Fried Salmon Patties With Dill Sauce

Making Gluten Free Bread Crumbs

Servings: 6

  • 1 to 2 cloves minced garlic
  • 2 teaspoons fresh lemon juice
  • 1 ½ teaspoons fresh lemon zest
  • ½ teaspoon fresh chopped dill
  • 4 green onions, sliced thin
  • ¼ teaspoon garlic powder
  • 2 tablespoons olive oil

Instructions:

  • Stir together the mayonnaise, garlic, lemon juice, lemon zest, dill, cayenne, and salt in a bowl.
  • Cover with plastic and chill until ready to use.
  • Preheat the oven to 350°F and line a baking sheet with parchment.
  • Season the salmon with salt and pepper then bake for 6 to 8 minutes until the flesh flakes easily with a fork.
  • Set the salmon aside to cool for a few minutes then remove the skin, if needed.
  • Combine the gluten free breadcrumbs, eggs, green onion, garlic powder, and a pinch of salt in a medium bowl.
  • Flake the salmon into the bowl and mix thoroughly.
  • Shape the salmon mixture into 12 even-sized patties and chill, covered, for 30 minutes.
  • Heat the oil in a large skillet over medium-high heat.
  • Fry the patties in batches, cooking for 3 to 4 minutes on each side until golden brown.
  • Drain the patties on paper towels and serve with the dill sauce.

    Not every one of my gluten free breads are the best ones to use for making breadcrumbs. Those made with sweet dough arent going to produce a good gf breadcrumb.

    The best bread to use for breadcrumbs is a lean bread or a bread thats only slightly enriched. Enrichments are just fats , milk, eggs, and/or sugar. They are in addition to what makes up a basic loaf of breadflour, water, yeast, and salt.

    In addition to store bought gluten free breads , here are all my breads you can use to make these breadcrumbs:

  • Rolledoats, ground to desired consistency as above, although it is not entirely necessary to grind them at all

  • Cooked rice or quinoa can be used to replace bread crumbs that will be used as a binder
  • Crackers, pita chips, potato chips, or tortilla chips, ground to desired consistency as above
  • Nuts. Use almond meal or finely ground almonds, pecans, or walnuts

  • Pretzels, ground to desired consistency as above
  • Toasted frozen waffles, ground to desired consistency as above

    Choosing the right 4c gluten free bread crumbs type depends on your intentions. 4c gluten free bread crumbss are versatile because of their small size. Pockets can be used to carry small items. Despite its size, I was unable to fit it into my pocket.

    Now what Im about to share is really, REALLY difficult and time consuming. Youll break a sweat, your back will hurt and youre curse me from sun up to down with how tedious this is but its totally worth it.

    Get a box of Rice Chex Gluten-Free cereal and either a baggie/rolling pin, blender or food processor. Take about a minute or 2 and youre done.

    Even if you have never had the joy of eating Gluten Free Panko, you have probably heard of Panko Breadcrumbs. But what exactly are they?
