Can I Make This Recipe Vegan

If you follow the steps above to make this recipe dairy free then all youve got left to contend with is one egg.

Heres a few ideas you can use as egg replacements, so each of these = 1 egg.

  • 3 tablespoons of aquafaba water from a can of chickpeas. Keep the chickpeas for a future dinner!
  • Egg replacement powder Id recommend using Orgran as its gluten free.
  • 1 tablespoon of chia/flax seeds mixed with 2 tablespoons of water and left for 10 minutes in the fridge.
  • 3 tablespoons of applesauce.

So use one of those egg replacement options and youve got gluten free AND vegan peanut butter cookies!

How To Make A Flax Egg Or Chia Egg

You can probably also use a chia egg if you dont have flax on hand. I use a chia egg in my vegan raspberry brownies and Vegan Sugar Cookie recipe. If youve never heard of a chia egg, dont be freaked out. No, its not made from a chia chicken! Chia eggs are very simple. They work just like eggs!

  • Just grind up 1 Tbs of flax seeds or chia seeds in a coffee grinder
  • Mix ground up flax seeds in a small bowl with 2 Tbs water.
  • It will thicken and become like an egg!

These gluten-free peanut butter blossoms have a chewy, soft center and lovely crackles around the edges, and instead of a milk chocolate kiss I use dark chocolate feves the perfect complement.

I worked the highest amount of peanut butter into the cookie without sacrificing integrity, so youll find a whopping 2/3 cup peanut butter in them, which is creamed with butter and both granulated and brown sugar. If you cant have peanuts, you can have actual gf peanut butter cookies. But you can still have gluten free nut butter cookies.

This recipe works well with no-stir almond butter. I really love Barney Butter brandbut it is ridiculously expensive.

Just like it wont work with the drip-off-the-spoon peanut butter, the recipe wont work with that sort of almond butter.

I do not recommend trying this recipe with Sunbutter, which is by its nature very drippy.

Can I Freeze The Cookie Dough

You can freeze cookie dough for up to 3 months. Scoop out the dough into balls just like before you are about to bake it, but place the cookie sheet in the freezer.

Once the cookies are frozen place the frozen cookie balls plastic freezer bag. Cookie dough can be frozen for up to 3 months.

Because the baking dough is frozen, you will need to add 1-2 minutes to the baking time.

This is a recipe for gluten free peanut butter cookies made with gluten free flour. Flourless peanut butter cookies are made without anything ground into a flour.

Flourless peanut butter cookies are naturally gluten free, since conventional flour is the main gluten-containing ingredient in most cookie recipes. In this recipe, you can use any of my recommended all purpose gluten free flour blends.

Flourless peanut butter cookies also have a different texture than these classic cookies. Theyre crisp on the outside, but chewy in the center.

These gf peanut butter cookies are crispy and crunchy all the way through. If you under bake them a bit, these cookies can also be softer in the center.

But the outside of these cookies made with flour will always be crispier than a flourless cookie.

Can I Bake This Recipe Using Just One Type Of Sugar Instead Of Two

Of course! Just bear in mind that light brown sugar adds more of a caramel-like flavour so its worth making sure you use some brown sugar in your mix.

Feel free to experiment with whatever sugars you like, as long as it isnt less than 200g.

I wouldnt recommend using any syrups in place of sugar either, as it can greatly affect the consistency of your mixture I wouldnt imagine youd be able to roll them into balls as theyd be too wet!

Im not sure if its the allergies that are slowly waging World War III on my immune system, or perhaps its the fact that its only April and Sacramento is already reaching temps of 90 degrees. Maybe its the fact that Im gaining weight like crazy or the fact that Im about to start a healthy diet for said weight-gain . Either way, Im totally, madly, hopelessly frazzled.

So theres that.

I think my brain needs to pack a suitcase, put on a bikini and go on vacation, because seriously processing an actual, meaningful thought at this point is like performing brain surgery. I need an engineering degree just to formulate a proper sentence.

So without further adieu, methinks Im starting my mental vacay right about now but not until after I share the recipe for these fabulous peanut butter cookies. These truly are the best-ever in my not-so-humble opinion. Theyre soft, chewy and have crisp edges which I find irresistible and necessary for any good peanut butter cookie. Theyre packed with sweet-and-salty peanut butter flavor and have the classic cross-hatch pattern on top like any good cookie should. And theyre flourless, netting a fudgier, denser cookie thats absolutely marvelous and which happens to make them naturally gluten-free.

And yes, my mental vacay will consist of cramming these cookies in like hunger-fighting soldiers in one-by-one before my diet starts. Calories clearly dont count on vacation.

  • Make the dough. Youll want to use a gluten-free flour blend for these cookies. Flourless gluten-free peanut butter cookies dont hold their shape well enough for peanut butter blossom cookies.
  • Scoop the dough and roll into rounds. A cookie scoop make this easy!
  • Roll dough into sugar. You can use regular granulated sugar or coarse sugar. If you roll the cookies in coarse sugar, they have a bit more shine and crunch. For the holidays, I love to use colored sugar.
  • Bake. Place the cookies onto a parchment-lined baking sheet and bake until the edges are set.
  • Add Hersheys Kiss. As soon as the cookies come out of the oven, press an unwrapped kiss candy into the center of the cookie.
  • Cool. Allow the cookies to cool on the pan for about five minutes before transferring them to a wire cooling rack.

Tips For Making The Best Gluten

  • Chill the dough. After mixing, chill the dough for at least 30 minutes. You want the dough firm, so its easy to shape into a ball and then roll into sugar before baking.
  • Use a cookie scoop. Cookies scoop make it easy to round cookies into a ball. And they ensure all your cookies are the same size. Why does this matter? When cookies are a uniform size, they bake evenly. So you wont have underbaked and overbaked cookies on the same pan.
  • Line your baking sheet with parchment paper. Using parchment paper makes cleanup a snap and prevents the cookies from sticking to the pan.
  • Adjust the Baking Time. For chewy cookies, bake about eight minutes. For crisp cookies, bake about 10 minutes.

    What Flour Do You Need To Make Gluten Free Peanut Butter Cookies

    I use my own gluten free flour blend recipe to make these peanut butter cookies. You can use a different gluten free flour if you’d like, but you may need to use less gluten-free flour.

    Different gluten-free flours absorb moisture differently. If you use a different gluten free flour, this is how to test how much gluten free flour you should use.

    I always use ¼ cup less gluten free flour when I make my cookie dough, and then bake a single test cookie. If it spreads too much add 2 more tablespoons of gluten free flour and bake another test cookie. If it still spreads too much, add the remaining 2 tablespoons of gluten free flour.

    For gluten free cookies, I usually have to use less gluten free flour when I use some brands of gluten free flour, like Bob’s Red Mill’s 1 to 1 gluten free flour or Ryze’s Blue Bag. Others, like Jovial’s gluten free pastry flour, you can use a similar amount.
