What Makes This The Best Gluten Free Chocolate Chip Recipe

For starters, just look at that texture! These cookies are definitely up to par with regular gluten-filled chocolate chip cookies. They have all the right chewiness and gooiness that can sometimes be lacking in gluten free cookies.

This recipe also only calls for 2 types of gluten free flours all purpose gluten free flour blend and oat flour. Both are very easy to get ahold of and helps makes this recipe super simple.

The dough also only needs to chill for 2 hours. Many of my cookie recipes require the dough to chill overnight, but not these! Just prep the dough in the morning and you can have freshly baked chocolate chip cookies by noon.

Last but not least, these cookies are NOT cakey. Gluten free cookies tend to be on the puffy and cakey side because its tough to achieve that chewy texture without the cookie falling apart. But with the use of brown sugar and an extra egg yolk, these cookies are dense and chewy perfection.

How To Make Pumpkin Cookies In Air Fryer

Pumpkin chocolate chip cookies can be cooked in the air fryer, and that can be really handy if you are making a small batch of cookies. I have made these cookies in the Instant Vortex air fryer but this should also work in any other air fryer.

Since air fryer are small compared to the oven, the cookies are baked at a lower temperature of 330 °F in the air fryer. If you bake them at a higher temperature, they will brown faster, not expand enough, and may not cook thoroughly.

To make the cookies in the air fryer, first preheat the air fryer to 330 °F. Then place a parchment paper in the air fryer basket and line the cookie dough balls, about a centimeter thickness, on the parchment paper. Allow some space of about an inch between the cookies to allow them to expand.

Air fry the pumpkin cookies at 330 °F for about 8 minutes. You can also check in between if needed. Once the cookie edges start turning golden brown, they are done. Remove the air fryer basket and allow the cookies to cool down for a few minutes in it, else they can break.

Once the cookies have cooled down a bit, transfer them to a cooling rack and allow them to cool down completely. If you have more cookies dough, you can make another batch in the air fryer.

Whether Baking For Your Childs Valentines Day Party Or Your Sweetheart Use These Seven Tips To Produce The Perfect Batch

Gluten free chocolate chip cookies from scratch : glutenfree

A perfectly baked cookie can delight people of all ages. Yes, even gluten-free cookies. While recipes vary depending on the type of dough, flour and other ingredients, using the best-quality ingredients is the first step in creating a little piece of heaven. Here are seven tips for getting the most out of your cookies.

  • Table butter contains added salt for flavor, but theres no need to use it in baking. Even unsalted butter generally contains the most fat and excessive sodium that can intensify during baking, making the cookies too salty. Opt for the unsalted variety of a vegetable oil-based margarine. What about using one of those butter alternatives commonly known as spreads? I advise against it as they contain a lot of water and are truly intended to spread on your toast, etc.
  • Flour blends. The big question is, which variety of gluten-free flour should you use? I find that experimentation is the key. The type of cookie, including the desired spread, texture and chewiness, factors in to your flour selection. One brand of all-purpose flour may work well in one cookie but not at all in another. Be patient and willing to blend your own combinations. If you have at least two different types of flour, experiment with different ratios, starting with 1:1. Then, depending on the results, consider a 1:3 or 2:3 ratioor, reverse that ratio. Weigh the flour to visualize how it affects the characteristics of the cookie. This way you can truly see and taste the results.

How To Know When Pumpkin Cookies Are Done

Pumpkin chocolate chips take about 14 minutes in the oven and about 8 minutes in the air fryer. However, it can vary a little bit depending on the appliance and the placement of the rack in the oven.

When the cookies start turning brown from the edges, it is a sign that they are done. You must remove the cookies immediately else they can over bake or end up becoming more brown than desired which would not taste best.

And Refrigerate The Dough If It’s Too Sticky

Gluten-free cookie dough is stickier than standard cookie dough, but chilling it can help. This is because cold dough is less sticky, and it doesn’t spread as easily, too. If you’re making a gluten-free cookie recipe that you don’t want to spread too much , make sure to chill the dough before baking it.

Everyone loves chocolate chip cookies. Harder, yes, but not impossible.

These eggless, gluten free pumpkin chocolate chip cookies are very easy to make at home with only a few ingredients. Of course, as the name suggests, you will need pumpkin and chocolate chips.

You can use homemade pumpkin puree or store bought one. Ensure that you are using the pumpkin puree, the can usually says pumpkin, and not the pumpkin pie filling or puree. Pumpkin flavor is incomplete without the warm flavors of pumpkin spice, it makes these cookies delicious.

Almond flour is used to make these cookies gluten-free. It is preferred to weigh the flour using a food scale to get consistent results and to avoid adding too little or too much of flour in the cookie dough.

Apart from basic ingredients like butter, sugar, and salt, you will also need some baking powder. Usually I do not add any baking powder or baking soda to cookies, however, pumpkin does not allow the cookies to expand much, so a little bit of baking powder helps them rise.

How To Bake Chewy Gluten Free Cookies

This is the trick that makes these the BEST gluten free chocolate chip cookiesalthough it may seem kind of odd!

When the cookies come straight out of the oven, theyll spread quite a bit. The center will still be soft and doughy while the edges will be a light golden brown.

Right when you take them out, use the inside curve of a fork to push in the sides. Work fast because as the cookies cool, the sides will firm up which makes it much for difficult to round out your cookies. See the picture above for how this works.

This creates a perfectly round cookie with those crispy and chewy wrinkly edges without over-baking the center. Sprinkle with a little sea salt and transfer to a cooling rack while you bake the second batch.

    Chilling The Cookie Dough

This is another important step that you cant skip! Chilling the dough allows the dry ingredients to fully absorb the wet ingredients, creating a more robust dough that will spread more evenly when baked.

Pre-scoop the cookie dough using a large cookie scoop. Dot the tops with a few extra chocolate chips and transfer the uncovered dough to the fridge. They must chill for at least 2 hours, but its OK if they chill for longer.

If you need to let them chill overnight, allow them to sit in the fridge uncovered for 2-4 hours, then wrap the tray in plastic wrap and continue to let them chill overnight. This prevents the dough from drying out.

Scoop Your Dough Slightly Smaller Than You Would Regular Cookies

    Gluten Free Vanilla Pudding Cookies

Gluten-free baked goods can have a crumbly texture and fall apart easier than their gluten-rich counterparts. One way to prevent them from falling apart is to simply scoop the cookies smaller. The smaller sized cookies will hold together better and have less of a chance of crumbling. So, if you’re used to portioning out your cookie dough using three tablespoons of dough, try reducing it to just two.

That sticky dough also means they have a greater chance of sticking to the sheet tray, too. If you grease your tray, your cookies may spread too much and ooze butter on the tray so to prevent that, use ungreased parchment paper or nonstick baking mats. This will make sure that your sticky gluten-free dough will pop right off the tray.

    How To Store Pumpkin Cookies

Pumpkin chocolate chip cookies can be stored at room temperature for 3-4 days. If you have made a bigger batch of cookies and want to store it for a longer time, you can store them in the fridge in an air tight container for about 3 weeks.

When you are stacking the cookies in the container, place a parchment paper or a wax paper between the cookies to prevent them from sticking. Allow the refrigerated cookie to come to the room temperature or just place in in the microwave for a few seconds before eating.

    Pro Tip For Measuring Gluten

How To Make Gluten Free Chocolate Chip Cookies ð?ª

I have found the best way to measure gluten-free flour is the spoon & level method. I use a spoon to scoop the flour into the measuring cup. Then I use the back of a knife to level off the top of the measuring cup.

Please do not scoop the flour out of the bag with your measuring cup. If you do, you could end up with more flour than is called for in the recipe because the flour often gets compacted in the bags.

    The Best Chewy Gluten

I dont like to throw the term Best Recipe around casually. But when I want to really get across that Ive tested and tried and adapted a recipe a bunch until I got it PERFECT, then I feel justified in calling it the Best gluten-free chocolate chip cookies ever!

Thats a whole lot of gluten-free cookies eaten for testing purposes so that I could share the best gluten-free cookies!

Back when I used to be able to eat gluten, I worked for years to find a homemade chocolate chip cookie recipe that I loved that reminded me of my favorite mall cookies.

I grew up loving the old Mrs. Fields chocolate chip cookies. My favorite thing to get at the mall was one of the huge cookies that they sold back in the 1980s. They were the perfect chewy cookie and were about as big as my head as a child! Over the years, the cookie size and quality has gone down, but I did still love those cookies.

I also liked the famed New York Times cookie recipe that was going around about 8-10 years ago pretty well. Just when I finally had a recipe for cookies that I loved, I got diagnosed with celiac and had to start all over with my recipe testing.

Ugh, how am I going to make gf chocolate chip cookies? I had to get trying!

Heres what I wanted in a gluten-free chocolate chip cookie:

  • Crispy edged, chewy cookies with a bit of a gooey center.
  • Lots of chocolate no chance of having a bite without chocolate in it.
  • No gritty texture or weird feeling in mouth from too many starches or gums.
