  • Whizz until completely smooth.

Tip: Make sure not to over-blend the mixture as that will make the oats become very sticky.

  • Heat up a tiny bit of oil in a frying pan and add a few tablespoons of the pancake batter.

Tip: Control the amount of oil you use by using a spray-on oil or rubbing a piece of greased kitchen paper over the bottom of the frying pan too much oil will make the pancakes ragged at the edges, and too little will make them hard to flip over.

  • Cook on a low-medium heat for a few minutes until you see little bubbles appear on the surface of the pancake.

Tip: Use a non-stick frying pan so that the pancakes dont stick to the bottom of the frying pan!

  • Flip over and cook for another few minutes, until golden brown and crispy on both sides.

Tip: Use a spatula to flip over the pancakes.

For this diy pancake mix recipe, I wanted it to be like a complete meal in terms of macros. Just add fruit and maybe some yogurt and go.

This recipe is also gluten free for anyone for whom that is a concern. To make it vegan, use a plant based protein powder in the mix and egg replacer when making the pancakes.

Start with your oats. Youll need 2 cups of oat flour, store bought or ground at home.

I always blend mine myself because it is economical and easy.

Just add about 1 cup of oats at a time to your blender or Nutribullet .

How To Make Yogurt Pancakes

  • Add all of your pancake ingredients to your blender and blend on high until the batter is smooth.

    Birch Benders Paleo pancake mix is the one mix in this list of 8 that I intend to do 2 exciting things with. I intend to buy it again . And I would like to try to recreate it at home.

    I do already have a recipe for almond flour Paleo pancakes here on the blog. I also have one for coconut flour pancakes that are truly light and fluffy .

    But I dont have a recipe for Paleo pancakes that uses cassava starch. Ive experimented a bit with Ottos Cassava Flour, but I havent fallen totally in love. And since its a starch, its not like its all that nutritious on its own.

    But the pancakes I made with this Birch Benders Paleo pancake mix just taste so good in every way. Theyre very moist, and tender and just sweet enough without any toppings .

    Theyre not very thick and fluffy, but they still manage to be super light. And perhaps my favorite part? You only have to add water to them to make pancakes.

    My next favorite gluten free pancake mix is from Stonewall Kitchen . First and foremost, please be sure youre purchasing their gluten free pancake mix, based on the red gluten free stamp on the side.

    And please note that the mix does not have a certified gluten free seal. If youre uncomfortable with this product because of the relative lack of proof of gluten free status, please dont purchase it.

    All that being said, I decided to include this brand because its just simply really, really good. In fact, if it werent for the lack of certified gluten free status, it probably would have beat out King Arthur Flours mix for first place.

    The pancakes turned out incredibly tender, not gritty at all , and not at all dense. I generally dont like most things that contain soy, since it tends to make baked goods tougher, but these pancakes are really quite perfect.
