How To Bake Gluten-Free Bread in a Breadmaker

Tip 1: You can leave out the xanthan gum if your brand of gluten-free flour contains it. Check the ingredient list to make sure. You can, however, still add a little xanthan gum without impacting the end result significantly if you’d like.

Tip 2: There is a short preheat at the beginning of the gluten-free cycle . So don’t worry if you don’t see the machine actively working during this time.

Mix-Ins: Seeds, nuts, and other optional mix-ins must be added with all other ingredients. Add mix-ins after the yeast, not during the mix-in signal.

Storing: Store homemade gluten-free bread in a bread bag for up to 3 days. After this, it won’t be good for sandwiches but can still be used for toasting or making breadcrumbs. This recipe is freezer-friendly for up to 3 months when stored in plastic freezer-safe bags. Slice prior to freezing for easy individual thawing.

How Long To Bake Gluten

This gluten-free bread recipe works best when baked for 60-65 minutes in the oven or on the gluten-free setting in a bread machine.

Remember to cover your gluten-free bread with foil half-way through baking so it doesn’t over-brown.

You might read that a loaf is done baking once it hits around 200 degrees F. Please bake this loaf 60-65 minutes even if your thermometer says otherwise.

Does The Flour Blend Really Matter

Yes. Is the straight answer. The two gluten free flour blends that I have developed for this bread machine recipe are finally-tuned to work. One is oat-based and the other is oat and corn free for those unable to tolerate these particular ingredients.

While it is possible that you can switch out one flour for another, I would do this carefully using a flour that is as similar as possible and only on the basis of intolerance. Test cautiously and expect some changes in texture and structure. My Gluten Free Flours and Flour Blending Page may help.

It may seem that I am being picky, but by the last few development-loaves, I was literally switching flour ratios in 5 to10g portions. If you want good gluten free bread, that tastes like bread, the detail matters.

To be sure, I did test the loaf with other commercial flour blends with limited success. The white starch-based blends tested were unstable and had that typical cakey or gummy texture. The wholegrain blend I tried was quite dry and had a much shorter shelf-life.

Add milk mixture and yeast to the mixing bowl and mix for 1 minute on low, scraping the bowl down.6. Add the 3 eggs and increase speed to medium and mix for 3 minutes.7. Stop machine and add raisins. Mix again for 30 seconds.8. Pour batter into a 9″x5″ baking pan and let rise for 45 minutes or until batter crests the top of the pan.9. Preheat oven to 350F. Makes 1 loaf.

1/2 cup skim milk powder3 tablespoons sugar2 1/2 teaspoons xanthan gum1 1/2 teaspoons salt2 1/4 teaspoons gluten-free yeast

    Why Was My Gluten Free Bread Dense

    For your bread machine, does it have a gluten free setting? This setting is important because it only does one mix cycle, not two mix cycles like you get with other settings.

    If you don’t have the gluten free setting option, use a quick program that features one mixing cycle, rather than two. Mixing it twice will always cause the bread to be denser.

    Are you scooping your measuring cup into the flour? Or spooning the flours into the cups then leveling? You should always spoon then level.

    Otherwise you’ll end up with more flour then you want which causes the bread to be dense.

    Are you storing your flours in the freezer or refrigerator? If flours are stored that way they loose moisture and when they are mixed with other ingredients they tend to absorb more of the moisture and the bread is denser.

    You can try, but I cannot then advise you on timings whatsoever, unfortunately. I just whack on the gluten-free setting and hit start! I have no idea how long it mixes for or proves for as it does both in one straight session.

    In the same way, I also couldnt advise you on baking timings because the size of the breadmaker tin is very different to a regular tin. Also, breadmakers dont have a clear timer, so I cant easily say when it starts baking and how long for.

    So the answer is: you can try, but youd need be somewhat experienced to know how long to mix for , when the dough is sufficiently proved and when the bread is done baking in the oven. Sounds like a bit of an experiment to me!

    The best idea if you want to make non-breadmaker bread is to just use the crusty white loaf in my first book.

    Not everyone has a bread maker. And buying one is not a cheap investment for sure. We first got ours after Coeliac diagnosis, thinking we could make better bread than we were buying. We could. But is still wasnt good enough and it wasnt that long before the bread machine got relegated to the cupboard and hand-baked loaves became the norm.

    With the learning from my hand-baked Wholemeal Breadhowever and a number of requests from readers for a gluten free bread machine recipe, the time seemed right to work harder!

    But what bread maker is best for gluten free bread?

    Ill be honest, I only have experience of one. The Panasonic SD-2501. It is quite old now, but it has a specific gluten free setting. The current equivalent model is thePanasonic SD2511KXC. But bread machines have come a long way and there is now an all-singing all-dancing Panasonic SD-ZX2522 with a whole range of gluten free programmes, including for pasta and cake. Id love one, but to be honest it is a little above my price range.

    There are of course a number of appliance companies that now make bread machines with a gluten free setting option. Just bear in mind that all bread makers are different. So whatever machine you own or buy, get to know it to understand how best to use it. If making gluten free bread, always use a gluten free setting if possible. And if you already own a bread maker which hasnt got one, use a quick/basic/rapid programme setting that only kneads once.
