Making edible gluten free cookie dough can be a challenge because you eat it raw.

I use my gluten-free rice flour blend. the gluten-free edible cookie dough tastes great uncooked!

Because of its higher starch content it helps the dough to be nice and smooth, not gritty or sandy.

For an even better taste, and to kill any bacteria in your flour, you can lightly toast it before making your edible gluten free cookie dough.

Spread your flour on a baking sheet and bake it in a preheated 350°f oven for 10 minutes, stirring every few minutes so it doesn’t burn.

It is really simple to make this gluten free edible cookie dough recipe. You don’t need a mixer, just a bowl and a spatula and you are set!

Tips For Those Concerned With Consuming Raw Flour Heat Treated Flour

  • If you are concerned about the raw flour as many say is actually the real risk with eating raw cookie dough and NOT the eggs. Follow the following instructions.
  • Preheat your oven to about 325 degrees F.
  • Take your measured flour and lay it out on a baking sheet.
  • Bake for 8-10 minutes.
  • Allow it to fully cool before using in recipe.
  • This should kill off any bacteria that is lingering in the raw flour that could supposedly make you sick.

Plus, lets be honest here its blasphemy to let cookie dough go to waste on that spoon! // If I see you wash off a spoon chock full of leftover cookie dough, we cannot be friends.

What Do I Need To Make Gluten Free Edible Cookie Dough

  • Almond flour- I like using almond flour for this recipe because it is dense and holds up well. I do not suggest substituting.
  • Pure maple syrup-I like the Costco Kirkland brand! It is the good stuff and in my opinion the best bang for your buck.. Make sure whatever brand you buy does not have any filler added ingredients. The maple syrup will act as the blinder in this recipe, so do not skip!
  • Coconut oil-The coconut oil makes these paleo edible cookie dough balls oh so smooth.
  • Vanilla extract- Adds a nice touch. If you cannot tolerate the alcohol, you can use vanilla powder.
  • Sea sat-The combination of salty and sweet, this adds a nice salty touch.
  • Dairy free chocolate-I love the enjoy life brand, however, any dairy free brand will work! If you are not dairy free, you can use regular chocolate chips.

I know, my love affair with cookies is no secret.

I mean, I wrote a whole cookbook filled with cookie recipes.

Because I just love cookies.

I have been dying to bake cookies in a skillet, like this Low Carb Chocolate Chip Skillet Cookie from All Day I Dream About Food. YUM! It even has a paleo option.

Now I am not one to not lick the bowl after making a batch of cookies.

Heck! I normally leave a little extra in the bottom with that in mind.

I haven’t died of salmonella yet!

All the same… if I am planning on just eating the dough, I don’t want to make it with egg.

I took my favorite gluten free chocolate chip cookie recipe and made just a few changes to it to make it and egg-less gluten free edible cookie dough recipe.

Basically I just took the egg out and added in a little bit of milk or water.

I opted to use mini chocolate chips instead of the regular ones because I used my cookie dough in some gluten free cookie dough brownie ice cream and didn’t want the huge chunks of frozen chocolate to chip someones teeth. It could happen…

Be sure that the butter is cooled before you mix in the other ingredients.

If the batter is even slightly warm those mini chocolate chips will melt and streak in the cookie dough.

Still delicious, just not as pretty.

Yes, their little balls of cookie dough won’t be as round and smooth, but it is so much fun!

Heat Treating Flour In The Microwave

Edible Cookie Dough For Two | vegan gluten free recipe

I didnt really know that heat treating flour in the microwave was a thing! But it is, and its faster than using and oven, too.

Youre supposed to put your flour in a bowl and heat it in the microwave for 30 second increments until a thermometer inserted into the flour reads 165º degrees F.

I havent tried this method yet, so I have no idea how long that would take, but I assume it depends on how much flour you have in your bowl. Ill try this out soon and report back!

Safety First Heat Treated Flour

You may have eaten regular cookie dough, with eggs and flour, and not died. I certainly have. However, to avoid the small chance of being exposed to harmful bacteria the modern way is to heat the flour and kill any potential bacteria. Test the flour with a thermometer to ensure it comes to 165°F. The can be done in an oven or microwave. I included instructions for both methods in the recipe but I think the microwave method is easiest.
