- Pure maple syrup-I like the Costco Kirkland brand! It is the good stuff and in my opinion the best bang for your buck.. Make sure whatever brand you buy does not have any filler added ingredients. The maple syrup will act as the blinder in this recipe, so do not skip!
- Coconut oil-The coconut oil makes these paleo edible cookie dough balls oh so smooth.
- Vanilla extract- Adds a nice touch. If you cannot tolerate the alcohol, you can use vanilla powder.
- Sea sat-The combination of salty and sweet, this adds a nice salty touch.
- Dairy free chocolate-I love the enjoy life brand, however, any dairy free brand will work! If you are not dairy free, you can use regular chocolate chips.

I know, my love affair with cookies is no secret.

I took my favorite gluten free chocolate chip cookie recipe and made just a few changes to it to make it and egg-less gluten free edible cookie dough recipe.
Basically I just took the egg out and added in a little bit of milk or water.
I opted to use mini chocolate chips instead of the regular ones because I used my cookie dough in some gluten free cookie dough brownie ice cream and didn’t want the huge chunks of frozen chocolate to chip someones teeth. It could happen…
Be sure that the butter is cooled before you mix in the other ingredients.

Heat Treating Flour In The Microwave
I didnt really know that heat treating flour in the microwave was a thing! But it is, and its faster than using and oven, too.
Youre supposed to put your flour in a bowl and heat it in the microwave for 30 second increments until a thermometer inserted into the flour reads 165º degrees F.
I havent tried this method yet, so I have no idea how long that would take, but I assume it depends on how much flour you have in your bowl. Ill try this out soon and report back!

So you really wont need much in quantity of each ingredient for this protein cookie dough recipe:
- Oat flour or gluten free 1-to-1 flour: you can also use all purpose, but please make sure to toast the flour before making this recipe!
- Pea protein powder: I recommend using a vanilla flavored pea protein, such as the one by Nuzest!
- Vegan butter or coconut oil: I recommend Flora Plant Butter for the best flavor. Its naturally nut free and soy free.
- Coconut sugar: you can also used granulated sugar if you dont have coconut sugar on hand.
- Vanilla extract or vanilla powder: for a really lovely flavor, use vanilla powder!
- Dairy free milk
