These soft, intensely buttery gluten free crescent rolls are just as flaky and soft as the ready-made kind from the grocery store. And the dough is just as useful!

I assume you already know about the crescent rolls in the refrigerated section of nearly every grocery store in nearly every town in America. And if you havent been gluten free your whole life, youve probably already bought that dough and used it in a bunch of interesting and fun ways.

Well, with this gluten free crescent roll dough, you can have all of those recipes back. And, of course, you can have back the classic basket of buttery rolls that makes any dinner instantly better.

The dough will keep in the refrigerator, as long as its in a tightly sealed container, for a few days. Bake off the rolls on the same day you plan to serve them, preferably warm, though. Bread is always best the same day its baked.

  • Try not to roll your crescent roll dough too tightly. A tight roll will not allow air to bake into the layers, making your rolls denser.
  • When placing the rolled crescent rolls down on the cookie sheet, make sure the triangle tip is not tucked under the crescent roll. This will allow the crescent roll to expand more while baking.
  • Make sure not to rush your rises, especially in the cooler winter months. I really advise rising the dough in the bowl overnight.
  • I recommend using high-fat butter for this recipe. European butter brands and butter from Vermont have a higher fat ratio than traditional butter brands.

Can you make these dairy-free?

Unfortunately, you can’t make these rolls dairy-free. The creamy high-fat butter is what makes these so buttery and soft and I am not sure you can get this effect with vegan butter.

How do you reheat these?

Because the butter gets cold, these crescent rolls will get dense when they are cooled. To warm them and make them fluffy again, I suggest putting them in the microwave for a few seconds before eating.

How long will these gluten free crescent rolls keep fresh?

These rolls will keep up to 3 days in an air-tight container, or up to 4 months in the freezer.

How To Make Homemade Vanilla Sugar

Vanilla Crescent Cookies get their signature taste from Vanilla Sugar which is commonly used in Europe for baking instead of Vanilla Extract. To make homemade Vanilla Sugar, you just need 2 ingredients: granulated white sugar and one vanilla bean.

To make Homemade Vanilla Sugar, place 2 cups of granulated sugar in your food processor or blender. Cut your vanilla bean in half lengthwise and with a knife to scrape out the seeds.     • I do not recommend using any flour blend with coconut flour in it! I tried this recipe with Gluten Free Mamas Coconut Flour Blend as well, but alas I didnt have good results. I wouldnt recommend using any flour blend with coconut flour in it for this recipe. The problem is that coconut flour really absorbs the liquids in a recipe, and mine turned out like hockey pucks.
    • Yes, you can make this egg-free if you need to. I have tried GFMs egg free option and it worked well & tasted great! Gluten Free Mama recommends this egg free option: ¼ cup water + 1 Tbsp. ground flaxseed. Simmer water and flaxseed over medium low heat for about 5 minutes until thickened. Stir frequently. Allow to cool. This is equal to one egg.
    • Yes, you can make this dairy-free if you need to. Substitute the 2 Tablespoons of butter for a good dairy-free margarine or Spectrum organic shortening, melted. You can also either not brush the finished rolls, or brush with a good tasting dairy-free margarine.

  • Make sure youryeast AND baking powder are fresh and not expired, which will affect the successful rise of the rolls.
  • Dont be surprised by the texture of the cinnamon roll dough. Its like a very soft play dough vs pliable and stretchy like regular cinnamon roll dough. Be extra gentle with it.
  • Dont roll the dough too thin otherwise it will fall apart. This is the #1 thing to keep in mind to successfully get the rolls into the pan.
