Gluten Free Crescent Rolls

| Posted In:Breads

These soft, intensely buttery gluten free crescent rolls are just as flaky and soft as the ready-made kind from the grocery store. And the dough is just as useful!

I assume you already know about the crescent rolls in the refrigerated section of nearly every grocery store in nearly every town in America. And if you havent been gluten free your whole life, youve probably already bought that dough and used it in a bunch of interesting and fun ways.

Well, with this gluten free crescent roll dough, you can have all of those recipes back. And, of course, you can have back the classic basket of buttery rolls that makes any dinner instantly better.

The dough will keep in the refrigerator, as long as its in a tightly sealed container, for a few days. Bake off the rolls on the same day you plan to serve them, preferably warm, though. Bread is always best the same day its baked.

Expert Tips And Recipe Faq:

  • Try not to roll your crescent roll dough too tightly. A tight roll will not allow air to bake into the layers, making your rolls denser.
  • When placing the rolled crescent rolls down on the cookie sheet, make sure the triangle tip is not tucked under the crescent roll. This will allow the crescent roll to expand more while baking.
  • Make sure not to rush your rises, especially in the cooler winter months. I really advise rising the dough in the bowl overnight.
  • I recommend using high-fat butter for this recipe. European butter brands and butter from Vermont have a higher fat ratio than traditional butter brands.

Can you make these dairy-free?

Unfortunately, you can’t make these rolls dairy-free. The creamy high-fat butter is what makes these so buttery and soft and I am not sure you can get this effect with vegan butter.

How do you reheat these?

Because the butter gets cold, these crescent rolls will get dense when they are cooled. To warm them and make them fluffy again, I suggest putting them in the microwave for a few seconds before eating.

How long will these gluten free crescent rolls keep fresh?

These rolls will keep up to 3 days in an air-tight container, or up to 4 months in the freezer.

How To Make Homemade Vanilla Sugar

Vanilla Crescent Cookies get their signature taste from Vanilla Sugar which is commonly used in Europe for baking instead of Vanilla Extract. To make homemade Vanilla Sugar, you just need 2 ingredients: granulated white sugar and one vanilla bean.

To make Homemade Vanilla Sugar, place 2 cups of granulated sugar in your food processor or blender. Cut your vanilla bean in half lengthwise and with a knife to scrape out the seeds. Place the seeds on top of the sugar and pulse 10-15 times until the vanilla bean seeds are fully incorporated in the sugar.

Transfer your homemade vanilla sugar to an airtight container. Add the empty vanilla bean pod and store it at room temperature in your cupboard. Make sure to give it a shake every so often since it can clump up.

The sugar will continue to develop flavor. Use your homemade vanilla sugar in this recipe for Gluten-Free Vanilla Crescent Cookies.

Tip: The dough will be soft like cookie dough but shouldnt be incredibly sticky.

Scrape down the sides of the bowl then place it somewhere warm to let the dough double in size, about 1 hour. I use my ovens bread proof setting, though in the past Ive placed the bowl on top of a heating pad set to low. A warm sunny spot should work too!

Although this time of year is fun to see family and friends, it can also be extra stressful for those managing food allergies. Each year has been a bit tricky for us and Ive had to change our menu drastically. We even bring our own food when visiting our friends. It can be hard seeing all the regular non-allergy food that looks and smell so good. The first thing usually served is fresh warm rolls, straight from the oven. And Im not going to lie, this is the thing I miss the most.

This year, I really wanted to make something everyone could enjoy, food allergies or not.

    Step : Roll And Shape

The trick to making gluten free crescent rolls is to make the dough sticky by adding liquid and/or reducing the amount of flour. This recipe includes those changes. If you want to shape the dough which we do youll need to coat the dough in starch so its workable. We like to use starch instead of flour because it doesnt weigh down the dough as much.

Be careful not to work the starch into the dough, coat it only as much as needed to be workable. Potato starch works best but you can use another starch you have on hand if needed. Worst case scenario you can use extra flour but the rolls might be more dry and heavier if you do so.

We love using a pie bag to roll out the dough, it helps keep the dough from sticking and makes it super easy!
