Can I Freeze Your Gluten Free Pizza Base Dough

Vegan, Gluten free Pizza Dough Recipe No Yeast

Yes you can! And to be honest, this is probably better than freezing the finished product as they will ALWAYS come out better when freshly baked.

Simply pop your dough into an airtight container and freeze for up to 2-3 months. I like to freeze my dough ready-portioned out in 2 separate containers so I have the option of defrosting as much or as little dough as I like at a time.

Simply pop in the fridge and allow to defrost overnight, or leave at room temperature for 5 hours. If you freeze one huge ball of dough without portioning it out, it will of course take much longer to defrost.

Where Is The Best Place For Rising Gluten

Yeast pizza dough rises best in a warm location. My oven has a bread proofing mode and that is where I allow my pizza dough to rise. When the oven is set in bread proofing mode it is 100°F.

If your oven does not have a proofing mode you can preheat the oven to 200°F. Once it gets to 100°, turn off your oven.

I know that some people proof their dough ontop of their oven as they preheat it to 425°F. The pizza dough needs warmth to rise properly.

Easy To Throw Together

This crust recipe is actually super easy. We used a stand mixer to get the dough to form but you can also do it with a strong spoon & hand hand power. If you are using your own strength you may need to get in there with you hands to get the dough to form. You can add a touch of oil to your fingertips if they are sticking during this process or when you roll it out on your pan.

A great trick I love to do with pizza dough is make a big batch & save some of it for a rainy day by freezing it. If you want to do that I recommend to double this recipe & cook half now & then freeze the other half in a baggie or plastic wrap. When youre ready to cook it, take it out of the freezer the a couple night or night before & leave it in the fridge to thaw out. It should be ready to go the next day, for homemade pizza in a pinch!

It is gluten free, though nobody would know just by tasting it trust me!

How To Make Gluten Free Pizza Crust

The first step is to combine the yeast, warm water and sugar or honey in a bowl. I like using honey, but if you follow a strict vegan diet, regular sugar is fine. Maple syrup may work, but its not best from a flavor point of view.

Combine the rice flour, tapioca corn starch, baking powder, salt, psyllium husk powder and garlic powder in a large mixing bowl.

Pour in the water/yeast mixture, oil and apple cider vinegar.

Use a wooden spoon to mix until combined. There should be some air bubbles and should be moist, and definitely not too wet or dry.

Transfer to a clean surface and knead with your hands for 90 seconds. I suggest setting a timer because if you knead for too long it can make the dough gummy, but too little and it wont rise properly.

Transfer back to the bowl, cover with plastic wrap and let sit in a warm and dark environment for 90 minutes to 2 hours. If its a cold day, preheat the oven to 110 Fahrenheit, turn it off and then the dough sit in the off oven. Otherwise, in a regular off oven or the warming drawer below the oven is perfect.

After about 90 minutes, the dough should roughly double in size. If your dough doesnt rise much, that is likely an indicator that your yeast was old, expired or inactive. You can absolutely still make the recipe, itll taste delicious, but the texture may not be the same as the original recipe.

My Dough Was Too Dry And Cracked And Crumbly

If the dough seems a little crumbly in the bowl, get it out of the bowl and knead it on a floured surface first before adding any extra wet ingredients.

This will ensure that its truly combined and there isnt any yoghurt not properly mixed in at the centre of the dough. If you measured out all of your ingredients accurately, you should avoid getting dough thats either too dry or cracks and crumbles.

Do I Need Weighing Scales To Bake Your Gluten Free Pizza Recipe

In short yes, yes and yes! And I wouldnt advise attempting any of my recipes without them. One of the worst things you can do in any baking recipe is alter the quantities by mistake or on purpose.

A lot of work went into fine tuning ratios and quantities so I wouldnt mess around with them unless you really know your stuff. Id recommending using digital cooking scales like these so you know youre getting an accurate measurement.

Tips For Measuring Gluten

The best way to measure gluten-free flour is the spoon & level method. Using a spoon, scoop the flour into the measuring cup. After youve spooned the flour into the measuring cup, use the back of a knife to level off the top of the measuring cup. Please do not scoop the flour out of the bag with your measuring cup or you could get more gluten-free flour than the recipe calls for.

Also, use a measuring cup made for dry ingredients .
