Most veggie burgers are made of yep, you guessed it vegetables. Once a novelty, these meat-free burgers are now a staple at just about any burger joint, giving vegetarians a great go-to order.

But if you’re following a gluten-free diet, this menu option may not be safe to eat.

Gluten is a protein found in wheat, barley and rye as well as derivative grains. While some veggie burger recipes may include wheat, rye or barley-based ingredients, others may be totally gluten-free, according to the Celiac Disease Foundation.

Ordering veggie burgers at a restaurant can be risky. Since there are countless ways to make veggie burgers, ingredients and recipes will vary depending on the restaurant and brand.

Ive had so many veggie burgers in my time, and I always find them disappointing. Some dont taste good theyre bland and cardboard-y and force you to chew, chew, chew before swallowing. Other ones taste great, but not in the way I want a veggie burger to . There are still others with ingredient lists filled with soy derivatives and other processed products that I dont want anywhere near my body. As someone who actually eats beef on occasion, I wanted a veggie burger that wooed me not because it was my only option but because it was outstanding. I wanted the Goldilocks of veggie burgers: a burger that was chock-filled with nourishing, pronounceable ingredients. A burger that had a beautiful umami flavor. A burger that held together, that wasnt too moist or too dry and crumbly. A burger that was just right.

After some experimentation, I finally found something that Im happy with. A lentil base provides just the right texture, with a flavor that is neither bland nor overpowering. I round that out with some actual veggies : a mirepoix, to be exact. A mirepoix is a mix of roughly chopped celery, carrot and onion, and serves as the basis for much of French cuisine. Here, it adds both delicious flavor and wonderful moisture to the finished burgers.

This Is The Story Of How The Worlds Best Veggie Burger Recipe Came About

Okay, I may be bias, but hear me out.

Recently, Ive had this little voice stuck in my head. It says, things to remember. And the voice is from audiobook! Its a calming, yet articulate voice saying these little words over and over in my head. You see, Im listening to an audiobook by Joyce Meyer called OVERLOAD. At the end of each chapter she goes over things to remember. What does this have to do with a vegan veggie burger recipe? A lot, actually!

You see, it turns out, this voice is a friendly reminder to not feel OVERLOADED. How does one do that? It might be as simple as planning ahead.

Heres what goes on in my mind: I need to start meal prepping more! I need to make more freezer friendly meals for meal prep. Oh, and I while I am it, lets crank up the veggie intake. I need it! Still trying to get over this dang cold! How can I accomplish all these needs so that I dont feel overwhelmed?

And you know what? I learned that when you ask yourself these questions your brain automatically looks for answers. Which is how these vegan veggie burgers came about. Phew, sorry that took some explanation, but Im sure you can relate. Right?

Healthy Homemade Vegan Burger Patties

These homemade vegan burgers have a thick and meaty texture, taste incredibly delicious, and are also so much healthier than traditional burgers. Theyre loaded with protein, fiber, nutrients, vitamins, have no cholesterol, and very little fat, making them the perfect vegan alternative when you crave a true American burger but in a healthier way. You really dont need any meat or fat to make a delicious burger patty that can be served with crispy French fries, colorful salads, or any sides you like for a perfect summertime dish!

How To Make Vegan Black Bean Burgers

Making Black Bean Burgers only involves a few steps, a food processor, and a baking sheet! Its a super easy recipe that gives you delicious black bean burgers in no time!

First, you slice your mirepoix, the carrots, celery, onion, and mushrooms. Then, you roast the vegetables for about 20 minutes to dry out the vegetables and also get them caramelized to bring out their delicious taste.

Once your vegetables are roasted, add the vegetables, seasonings, black beans to the food processor. To note: It is important that the black beans are drained as much as possible to avoid having too much moisture in the patties.

If you do happen to have some moisture in your burgers, you can add cooked quinoa or rice to help absorb any excess moisture. I recommend adding no more than ½ of a cup.

Once the black bean mixture is complete, begin forming patties. I like to make my patties at least 1 inch thick to resemble large burgers. I tend to get about 7-8 burger patties from the mixture. You can always play around with the size and quantity to suit your liking!

After the patties are formed, simply place these burgers in the oven for 25 minutes, gently flipping halfway through!

How To Store Veggie Burgers

You can store leftover veggie burgers either uncooked or cooked. I prefer storing uncooked and baking them when needed. However, if youre trying to get ahead and prepare meals you can just quickly reheat, storing cooked veggie burgers might be a better option for you.

  • Refrigerating: allow veggie burgers to cool to room temperature . Transfer to an airtight container and refrigerate for 3-4 days or for up to 5 days .
  • Freezing: allow veggie burgers to cool to room temperature . Transfer to an airtight, freezer-safe container, separating each row with a piece of parchment paper , and freeze for up to 3 months.
  • Reheating: transfer frozen veggie burgers into the refrigerator 24 hours before reheating. If reheating uncooked veggie burgers, follow the instructions for baking above. If reheating cooked veggie burgers, arrange the veggie burgers on a plate and microwave to reheat. Then transfer onto a baking sheet, spray with a little bit of oil, and bake in a 400°F/204°C oven until the surface is crispy again, about 5 minutes.

How To Make Gluten Free Beet Burgers:

  • In a food processor, chop garlic and scallions. Add diced sweet potatoes, beets and chickpeas, and pulse until very finely chopped.
  • Transfer the mixture to a bowl and fold in lemon juice, cumin, coriander, a beaten egg and chickpea flour . Season with salt and pepper.
  • Form the mixture into 4 patties .
  • Cook the veggie burgers in a nonstick skillet until they’re golden brown on the bottom. Flip the patties over, cover the pan, and cook until browned on the other side.

Why Are My Veggie Burgers Mushy

Moisture. Are you sensing a theme? LOL! Its easy to make a mistake and add unwanted moisture to your homemade veggie burgers.

  • veggies not cooked when they should be, or not cooked enough
  • not using enough binder
  • your bean ratio is too high
  • using grains that are not fully cooked
  • cooked them at too high of a heat, medium is perfect or they will develop a crusty outside and mushy inside.

While store-bought vegan burgers are typically made with extracts of this and scientific combinations of that, we wanted to do something different something better for you with wholesome, recognizable ingredients.

We start by caramelizing onions for a sweet-savory component. Then add shiitake mushrooms for their meaty texture and natural supply of vitamins B2, B3, B5, B6, selenium, zinc, and more!

Next, we pulse the sautéed veggies in a food processor with cooked brown rice to create the perfect burger texture. This neutral-flavored whole grain also provides additional B vitamins and minerals.
