GLUTEN FREE ICE CREAM SANDWICH How To Make Homemade Ice Cream Sandwiches Recipe Summer Dessert

For the homemade dairy free vanilla ice cream:

  • Full Fat Coconut Milk + Coconut Cream: It is very important when making homemade dairy free ice cream to use full fat coconut milk and coconut cream from a can. The extra fat content is what helps make the ice cream creamier. Do not attempt to use boxed or bottled coconut milk as it will NOT work for this recipe.
  • Vanilla Bean Paste: It is preferable to use vanilla bean paste for a bold vanilla flavor, however if you only have vanilla extract available, that will work just fine.
  • Gelatin: If you are following a vegan diet, you can substitute agar agar for the gelatin in the ice cream. Alternatively, you may omit altogether, but I find that using gelatin/agar agar helps the dairy free ice cream maintain creaminess.
  • Monk Fruit Sweetener:I use monk fruit in all of my low FODMAP dessert recipes in place of refined white sugar. If you prefer + tolerate, you may swap this for white sugar.

For the gluten free chocolate chip cookies:

Low FODMAP Tip: If you are following low FODMAP for SIBO, you are likely avoiding refined sugars. Stock your pantry with unrefined sugars like granulated monk fruit, coconut sugar, and powdered monk fruit sugar. These are the perfect 1 to 1 substitutes for white sugar, brown sugar, and powdered sugar. Its important to note personal tolerances when choosing ingredients.

How To Make A Gluten

Ive made these sandwiches with a ice cream sandwich maker and without, and I think its just a bit easier with the ice cream sandwich maker. The ice cream sandwich maker I used for this post is the Norpro Ice Cream Sandwich Maker. You dont have to use an ice cream sandwich maker. You can use a rectangle cookie cutter or a large round cookie cutter, and make the sandwiches yourself. I prepared them like that before I started using the sandwich maker.

Step 1:

Bake up the Chocolate Wafers recipe on pages 279 280 of my cookbook, Celestes Best Gluten-Free, Allergen-Free Recipes or any cookie recipe. I find the thinner you can roll out the cookie dough, the better. I roll mine out to 1/8-inch thick. Cut the cookies into the desired shape for the sandwiches. Let the cookies completely cool.

Step 2:

Prepare the ice cream. For the sandwiches pictured on this blog, I used the Vanilla Ice Cream recipe found on page 347 of my cookbook.

Step 3 Prepare Workspace

Cut a small sheet of parchment paper, a 7-inch square, to place your sandwich on which will help prevent it from sticking.

Nothing will ever beat those…the best. I can still remember unwrapping those ice cream sandwiches, delicately pealing off the paper and revealing the somewhat gooey ice cream that was exposed on the sides to the paper . I can even still remember the fake soft chocolate bar and fake vanilla ice cream taste…one in a million. That, my friends, was a quality childhood delicacy!

New Perfectly Free Pints

I love perfectly free frozen bites. The creamy coconut ice cream center and the delicious outsides are amazing. I was so excited when they came out with pints. They come in three flavors- fudge stripe, caramel cafe, and strawberry sundae. All are delicious, but for this gluten free ice cream sandwich, I chose to use the fudge swirl and caramel cafe. The fudge swirl is a bit more of a coconut ice cream flavor, whereas the caramel cafe has this delicious coffee taste with that caramel swirl.

When most people make a DIY Gluten Free Ice Cream Sandwich, they usually use cookies, which of course are good, but if memory serves me correctly, an ice cream sandwich has that cakey cookie outside. When I wanted to remake it, I wanted to recreate that same cakey cookie. This gluten free ice cream sandwich has that perfect texture that will remind you of childhood summers, eating ice cream sandwiches by the pool.

Food allergy awareness week is over but I wanted to share some more thoughts and feelings regarding food allergies in general. I usually only post things that are positive and encouraging. But lets be honest. Food allergies can be downright depressing and very upsetting. Another great word is UNFAIR. Certain times it becomes overbearing and I cant help but cry and feel sorry for my sons.

This whole food allergies week has been a double edged sword.

Yes, its wonderful to hear all the other stories of families managing food allergies. Yes, its great to read some success stories and learn some great tips. Yes, it gets people talking about food allergies and hopefully educates more awareness.

But

Some the stories are down right sad and infuriating all at the same time. The stories that upset me are about family members that do not understand/accommodate/care about childs known allergy. Family in my opinion, should be the first and most supportive of any special diet requests. And by requests, I dont mean personally expecting others to cook safe food, but merely not serving the anaphylactic foods that the child is allergic too.

We only want the best for our children. When something as basic as eating become complicated, life has overwhelming moments. If you ever feel like this, youre totally normal.

Dairy Free Banana Ice Cream Sandwiches

Ingredients

  • Combine all dry ingredients in a bowl and mix well.
  • Roll out between 2 sheets of parchment paper.
  • For The Cookies Youll Need:

    • Butter
    • Egg
    • Chocolate chips

    Thats it! So simple

    This recipe is perfect for the family, gatherings with friends, or to treat yourself on the weekend. You really cant go wrong with an ice cream cookie sandwich- everyone will LOVE these!!

    If you want, you can prep some ahead of time and store them carefully in a stasher bag in the freezer. They may be a bit hard to bite into for a minute or two, but they will quickly thaw after a few minutes on the counter!

    You can also make the cookies the day before serving- just be sure to store them in an airtight container onthe counter once they are cooled!

    How To Make These Gluten

    These desserts come together very easily, but time is of the essence when you’re working with ice cream.

    The first step is to bring out your Belgian waffle iron to pre-heat. This one here is very similar to the one that I use. While that’s happening, you can prepare the entire box of waffle mix in a large bowl. Mix with the prescribed additional ingredients for your particular box mix.

    Just before cooking, take your ice cream pints out of the freezer to begin to soften. You’ll want to give them 20-30 minutes so they will be soft, but not liquid. Keep an eye on them, as different non-dairy ice creams may have different melting times.

    Once ready, cook 4 full Belgian waffles, being sure to spray your iron each time for easy removal. When finished, place all waffles on a sheet pan.

    Put the sheet pan of waffles into the freezer for 10-15 minutes so they can cool and slightly freeze.

    Once your ice cream is soft, take the waffles out of the freezer. Spread each pint of ice cream on one waffle, then top with the 2 remaining waffles. You will have 2 large waffle sandwiches.

    Leave the large waffle ice cream sandwiches on the sheet pan and place in the freezer for at least 3 hours.

    Once you’re ready to serve, cut each waffle sandwich into quarters along the pre-made lines of the Belgian waffle iron. You may have to let them soften up for a minute or run your knife under warm water and dry before cutting. You will end up with 8 perfectly sized sandwiches.

    Those were the wise words of my 4 year old as I wolfed down my ice cream sandwich a special treat we made for my birthday last weekend. To hear her echo those words of mine put a huge smile on my face, because even though our diets are limited by my celiac disease and her food allergies, I have tried to instill in her an appreciation for food, to taste it and enjoy it. But I mainly smiled because it was just so darn cute!

    Anyway, enough of the chatter you say! Get to the sandwich! Okay, okay

    But first, for those of you who dont know Babycakes Bakery in NYC, it is a very hip, mostly-gluten-free, vegan bakery with delectable treats that even non-gluten-free and non-vegan people love. Erin McKenna, the founder of Babycakes, recently came out with a cookbook and appeared on Martha Stewart and shared her recipe for Chocolate Chip Cookie Sandwiches with Vanilla Frosting.

    I had been wanting to try this recipe, and finally decided to make it on my birthday but the thought of baking when it was 95 degrees outside wasnt too appealing unless it ended up being an ice cream sandwich! So we skipped the frosting and opened the freezer instead.

    Storing Gluten Free Ice Cream Sandwiches

    If you want to make a few gluten free ice cream sandwiches to have on hand, for when you have a craving, simply wrap them in foil, or store them in an airtight container in the refrigerator. Easy-peasy.

    This post originally included instructions to use gluten free graham crackers as the outer layer. This is still a great option for anyone who’s in a hurry or who doesn’t love the chocolate outer layer of gluten free ince cream sandwiches.

    Making homemade gluten free ice cream sandwiches is a super easy and inexpensive compared to buying boxes of gluten-free ice cream sandwiches from the store.

    This gluten free ice cream sandwich recipes makes about 12 ice cream sandwiches. A box of gluten free honey grahams makes 8 ice cream sandwiches.

    Ingredients In Gluten Free Ice Cream Sandwiches

    Gluten Free Flour Blend – I used Bobâs Red Mill 1-to-1 Gluten-Free Baking Flour.

    Unsweetened cocoa powder – We love Dutch processed cocoa, but you can use your favorite cocoa.

    Salt – If you use a salted butter you can leave this out.

    Baking powder – Helps with the rise and texture of the outer gluten free ice cream sandwiches layer.

    Unsalted butter – You can use dairy-free butter but make sure you omit the salt.Brown sugar – For a touch of sweetness and flavor.

    Granulated sugar – To add additional sweetness and moisture.

    Egg – I don’t have a egg-free option at the moment.

    Vanilla extract – For flavor and to add depth.

    Vanilla ice cream – You can use dairy-free ice cream or your favorite ice cream flavor. This no churn vanilla ice cream recipe is super simple to make.

    For The Vegan Cookies

    Ice Cream Sandwiches

    Wet Ingredients:

    • Coconut oil: replaces the butter in this gluten free cookie recipe. You want the texture to be soft, like butter and NOT melted. It gives the vegan cookies a subtle hint of coconut flavor but if youre not a fan of coconut at all, be sure to use refined coconut oil which has a neutral scent and flavor. If you prefer not to use coconut oil at all, you can try vegan butter, but I have not tested it out with that so cant ensure the results.
    • Vanilla extract: makes the cookies delicious and brings out the flavors from all the other ingredients.

    Paleo Sweeteners:

    • Pure maple syrup: a natural liquid sweetener that is vegan-friendly and adds a subtle sweetness. If you dont have it, you can try agave syrup, coconut nectar syrup, brown rice syrup or Lakanto Sugar-Free syrup.
    • Coconut Sugar: a lower glycemic sweetener that is similar to the taste of brown sugar. If you dont have it, feel free to use regular brown sugar or golden monk fruit sweetener for a low carb no sugar sweetener.
