- Serve on top of a warm gluten-free brownie or alongside your favourite desserts.
- Create the ultimate gluten-free ice cream sandwich by sandwiching a flat layer of gluten-free Oreo ice cream between two chocolate cookies.

Actually, the first coconut condensed milk I came across was in a favourite local wholefood store. So, check and shop local first if possible.
I do confess to being a little excited when I found it. Actually excitement doesnt do the reaction justice I was seriously ecstatic Resulting in an almost possessive siege-like mentality .
Looking around suspiciously to see whether anyone else might have spotted my find almost the whole shelf-load was bundled into a basket, before I sidled up to the counter trying to look normal.
Who was I kidding? I looked like some crazed loon with the oddest addiction on the planet. But you know what? Those cans have brought happiness and lots of new-found creativity . And I feel smug that I snaffled them before anyone else got their hands on them.

Making gluten free bread is no easy feat. Gluten gives bread its light, airy structure and enables it to hold together as it rises. Trying to mimic that is downright hard. Once you dive into the world of gluten free bread baking you will soon discover recipes with ingredients as long as a thesis!

What 4 Ingredients Are Used To Make Vegan Chocolate Ice Cream
I am almost certain that any of my no churn ice creams can be made dairy free as well, because the recipe for this Vegan Chocolate Ice Cream is pretty much the same Except that it is vegan . The method also makes it one of the simplest ice cream recipes on the planet.
But what ingredients are used to make it that easy? Well basically, the usual whipped double cream and dairy condensed milk has been subbed for the vegan coconut versions of the same ingredients. Chilled well and whisked with care, coconut cream and coconut condensed milk give the same amazing result, but totally plant based! And I promise the taste of coconut is barely noticeable.
For best flavour and to make this a Vegan chocolate ice cream, I have added raw cacao powder which offers a deep natural chocolate hit and a hint of an anti-oxidant boost as well. The slight bitterness of the cacao perfectly offsets any excess sweetness from the condensed milk.
Although I prefer to use cacao, cocoa can be used instead. And adding a little vanilla extract gives a wonderful, slightly exotic backdrop too.

Gluten Free Dairy Free White Bread Tastes Like Real Bread
If you are gluten free, I know you know what I mean. Most gluten free bread doesnt taste like real bread. Let me tell you about my recent adventures in making Gluten Free Dairy Free White Bread. I could eat this bread all day long. The texture is just a little different than wheat bread, a bit more gummy, but really good. I am so thrilled to be able to eat good bread again.
If you need an egg-free bread, you can substitute ground flaxseed meal for the eggs in this recipe. It works perfectly. The ratio is 1 tablespoon ground flaxseed meal plus 3 tablespoons water per egg. I include this as an option in the recipe.

Coconut Ice Cream By Ingredient
Coconut Water comes from the inside of a coconut. Young coconuts have more water and less coconut meat compared to the familiar brown-husked mature coconuts. Coconut water out of a young Thai coconut, is a refreshing and delicious beverage popular for its nutritional value. One young coconut will yield about 1½ cups of coconut water, enough to have a taste and still make this recipe. Canned coconut water from the grocery store will also work in this recipe.
Coconut milk is made from the pulp of mature coconuts which is pressed to extract the thick milk. It is sold in cans labelled with the fat content the same way cows milk is. Choose full fat coconut milk with a fat content greater than 20% or about 30 grams of fat per cup. Light coconut milk is about a quarter of this and will not give the same delicious results. Unless you eat a steady diet of coconut milk I would not recommend using the light variety.

Soft Gluten Free Vegan Bread Recipe
A couple of years ago, I posted a Soft Gluten Free Sandwich Bread Recipe that still gets a lot of attention. I hear from hundreds of people every month who love it & at least as many begging me to create a Vegan version of it. For gluten-free graham crackers, I really like Kinnikinnick Smoreables. But Ive heard good things about Pamelas Honey Grahams, which are also egg-free . Graham crackers arent always vegan, since many brands contain honey. But check your local store brands there is usually a vegan gem somewhere in town. Alternatively, you can use Enjoy Life Crunchy Cookies. The non-graham varieties are vegan, in addition to being gluten-free and allergy-friendly. Ive used them quite a bit for dairy-free ice cream sandwiches.
