Although we have significantly reduced our use of the ingredient in recent years, we do use high fructose corn syrup when it is right for the recipe, mostly to help deliver a smoother texture than other sugars can provide, or to keep the cost of a product affordable. High fructose syrup contains the same number of calories as table sugar and has been widely used in the food industry for more than fifty years.

As a child, my favourite soup was not one that my Mom had spent hours making, using herbs and vegetables that she had grown and harvested in her garden. Recipes passed down from her mother, who learned it from her mother. My favourite soup was tomato soup that came from the red and white tin.

Creamy tomato soup that perfectly paired with crisp salty crackers or a grilled cheese sandwich. Today, however, that red and white tin soup no longer loves me since wheat flour is the thickener used in that ready-in-5-minute soup.

That doesnt mean that I cant enjoy a quick, delicious bowl of soup. This vegan Tomato Soup actually starts with a can of tomatoes. Using whole ingredients, its also ready to eat in about 30 minutes.

In addition to being gluten free, this soup is also dairy free, getting its creaminess from the potato that is added to the mixture while it is cooking. But if you want to make it even creamier, you can add milk of your choice before serving. Coconut milk or cashew milk work great.

If you do not require a dairy-free diet, feel free to add 1/2 cup heavy whipping cream after blending the soup, just dont bring it back up to a boil once the cream has been added or it will curdle.

Low Sodium Tomato Paste – I like the low sodium version here because I can better adjust the seasoning and salt.

Broth – Either chicken broth or vegetable broth will work in this recipe.

Heavy Cream – This makes the soup especially silky and creamy, and also helps it to thicken. For a dairy free version, use coconut cream.

Onion Powder – Onion powder goes very well with tomato, and gives recipes a warm, homemade flavor.

Garlic Powder – Everything is better with a little bit of garlic, right?

Salt – Add to your taste.

Pepper – For a slight bite and perfect seasoning.

Yes, you can absolutely freeze tomato soup.

To freeze tomato soup allow it to cool to room temperature before placing it into a freezer safe container. Make sure to leave 1 inch of room at the top of the Tupperware to allow for expansion. . So if you fill the container all of the way the container will break.

Tomato Soup will last in the freezer for up to 6 months.

Meal Prep Freezer Tip: I like to freeze this tomato soup in 8 oz containers so that I can defrost it as individual servings for quick lunches and dinners. This is perfect for taking lunches to work where a microwave is available. Allow the soup to defrost in the fridge until lunch and then microwave and enjoy!

Go to your pantry. Gather:

  • 1 large can crushed tomatoes
  • 1 can unsweetened full fat coconut milk
  • Olive oil
  • A bunch of spices

Thats really it. In the time since I originally posted this recipe, Ive simplified the recipe to use onion powder instead of fresh onions, but if you prefer to go the fresh route, feel free. You can read the note at the end of the recipe for this variation.

Now, to make the soup, just heat up some olive oil, fry the spices , and then add the contents of the two cans. Stir, simmer, serve.

How To Make Cream Of Tomato Soup

Heat a large saucepan over medium heat. When the pan is hot, swirl in the extra virgin olive oil.

Add in the leeks and a sprinkle of salt. Sauté until the leeks are softened but not browned, about 3 to 5 minutes.

Next, add the minced garlic and cook for about 30 seconds, or until fragrant.

Turn off the heat and transfer the cooked leeks and garlic to a plate.

Dump the whole can of tomatoes, juice and all, into a high powered blender

and blitz on high until its smooth.

Pour half of the puréed tomatoes into a medium saucepan

and add the softened leeks to the remaining tomato purée in the blender. Blitz the tomato purée and aromatics on high until the mixture is smooth. Pour the contents of the blender into the saucepan.

Add the broth and coconut milk.

Stir well and crank the heat up to medium high to bring the soup to a boil. Then, decrease the heat to maintain a simmer for 10 minutes, stirring occasionally.

Taste the soup and adjust the seasoning with salt and pepper.

Ladle up the soup and garnish with fresh basil.

Storage & Freezing Instructions

Storage Instructions: Gluten-free and dairy-free tomato soup will keep in the fridge for about 5 days.

Freezing Instructions: If you will not be consuming all of the soup, place portions of cold soup in airtight containers and freeze for up to 3 months. Be sure to leave room in the container for the soup to expand. To thaw the soup, place the container in the fridge overnight, or let it sit in a warm water bath until thawed. Heat in the microwave or on the stove and serve.
