    After reviewing brands of gluten free bread and later brands of gluten free pasta, I asked those of you on my email list what I should review nextand for some of your favorite brands. Many, many of you responded and the general consensus was to review packaged gluten free tortillas.

    My goal in all of these product reviews is plain and simple: to help you spend your hard-earned money wisely. Reviews on sites like amazon.com are great, but its often hard to judge the perspective of the reviewerespecially when it comes to gluten free products.

    Im so excited about this one! Finally, gluten-free flour tortillas!

    Really, I dont need to tell you why flour tortillas are awesome. You either love em or you dont. Me? Im in the love camp. So it thrilled me when this recipe finally came together.

    This recipe makes a chewy, flexible wrap. Ready to begin?

    In a medium bowl, whisk together the dry ingredients. Be sure to select a bowl with an opening large enough to reach into. This is important.

    Add shortening or lard. While this recipe is gluten-free, dairy-free, egg-free, and nut-free, it isnt fat-free. And thats a good thing! The fat adds a pleasant flavor and texture to the wraps. Dont skip it!

    Its best to do this recipe by hand. Reach right into the bowl and work the shortening into the flour with your hands. A snapping motion of your fingers accomplishes this task quickly. You dont want any large pieces of shortening to remaining.

    Add the water. At first, just half a cup cold water. Stir it into the flour mixture.

    The flour mixture will be dry. VERY dry. This is normal.

    Add 1/4 cup additional water. Stir. If the dough just begins to hold together, stop adding water! If the dough remains dry, add another tablespoon or two of water.

    You want to add the water slowly. If this dough gets too wet, its impossible to work with. Dont let that scare you! Just be cautious when adding the water and the dough will be fine.

    Cover the dough with plastic wrap. This prevents a skin from forming.

    You can also use the lid of a large pot if it has sharp edges. Then, cut out the round cleanly, and remove the scraps to reroll with any remaining dough.

    How To Serve & How To Store

    You can double the recipe and make a bunch of gluten free tortillas for meal prep. They are also perfect to take to school, university, or work. Furthermore, these gluten-free wraps are a great side dish for hearty Indian dishes such as Red Lentil Dahl or Chickpea Curry.

    You can also make them very thin so that they turn out like crepes. If you leave out the salt, you can also enjoy them with a sweet filling .

    Storage: Let the tortillas cool completely. I recommend stacking them on a plate and putting some wax paper between the individual wraps so that they dont stick together. You can store them in the fridge for up to 3 days, ideally, wrap the plate in plastic wrap.

    They dry out a bit in the refrigerator, but you can easily reheat them individually in a pan . They will become soft and elastic/pliable again.

    You can also freeze them in freezer bags for up to 3 months!

    Ill cut to the chase on this one. Yes! Ground psyllium husk is ESSENTIAL to getting the right texture and hydration for these gluten free tortilla wraps. The psyllium husk absorbs good amounts of liquid when the dough is made, locking in moisture which is required for the flexible texture of the final wrap. I am aware of no other ingredient that does this quite as well.

    I would advise NOT to use psyllium powder , as it is super-fine and does not work as well in cooking. If you cant source ground psyllium, simply buy whole husks and grind them at home in a blender.

    Okay, these NewGem wraps are SO WEIRD. But I absolutely love them. They are not a typical wrap or tortilla . Theyre sort of like a vegetable-based fruit roll up but in a really good way.

    Theyre flexible to roll and contain any savory fillings you like. The descriptive words that I want to use dont sell these wraps, I realize. How can I convince you to give them a try?

    I highly recommend using Better Batter all purpose gluten free flour blend in this recipe, or our mock Better Batter DIY blend if you cant or dont want to buy Better Batter itself. That is the blend that has the best moisture balance and protein content to make these tortillas.

    Assuming that you use an all purpose gluten free flour blend in this recipe thats dairy free and gluten free, this recipe makes tortillas that are vegan and gluten free. If you use Cup4Cup gluten free flour, a high starch blend, you will probably need more water or your dough will be crumbly.

    Using A Tortilla Press

    Line a tortilla press with a small plastic bag that is open on all sides, but one side . Lightly dust the inside of the bag with gluten free flour.

    Roll dough into 2-inch balls and place a dough ball into the floured-bag on the press. Close to flatten. Slide the bag off the tortilla press. Gently remove the gluten free tortilla from the bag.
