If youd rather create your own soy sauce substitute at home, here is my favorite recipe that you can easily make yourself.
The best thing about making your soy sauce is that you are in control of what goes into it. If youre truly changing up your soy sauce intake for health reasons, this is the only way you have complete knowledge of what youre eating.
That said, making your own condiments is a great way to take control of your health. Soy sauce alternatives are better for you, in addition to homemade ketchup, mustard, salad dressing, and pickles. So much salt, sugar, and chemicals are pumped into store-bought condiments. Just go to your fridge and read some of the ingredients on your condiments bottlesyou will be surprised!

So Which Sauces Are Gluten Free
Finding out which sauces are gluten free is not as simple as just giving you a list.
Sure, I can let you know the sauces which definitely are NOT gluten free, or the sauces which are gluten free 99% of the time.
But then what about the different brands? For example – did you know HP Brown Sauce isn’t gluten free, but the Tesco and Asda cheapo brown sauce IS gluten free?
Then you’ve got mustard – most English mustard contains wheat flour, but did you know a handful of brands are actually gluten free?
And let’s not even get started on the ‘free from’ branded mayonnaise and ketchup – most brands of these are gluten free anyway and you’ll pay three times the price for a free from one.
But don’t worry – before you get super confused, I’m here to help!
I’ve broken this guide to gluten free sauces down to try and help you find out exactly which sauces and condiments are gluten free.
This is based on my experience in the UK – if you’re visiting this site from the US or another country the ingredients of the same brands may be different where you are!
Please note this guide was last updated in January 2021. I will do my best to keep it up-to-date but ALWAYS double check the labels and sometimes brands change their ingredients and they may differ to what is written here.
What Can I Substitute For Dark Soy Sauce
A small amount of dark soy sauce is usually called for in a recipe mostly for color, so if you dont have any, you can simply omit it. Your dish will be lighter in color, but still tasty.
That said, if you really want your version of a recipe to look like the photographs, and that recipe calls for dark soy sauce, dont leave it out.
You can also mix together molasses, regular soy sauce, and a pinch of sugar to make a passable substitute.

Which Is The Best Plum Sauce In The World
The Kikkoman plum sauce is not like the average plum sauce that is just sweet with no complexity in flavor. A bit saltier than tamari, soy sauce also tends to have a bit more of a kick to it – with a sharp and almost vinegar-like flavor profile.

Buyer Beware Soy Sauce Vs Tamari
Soy sauce and tamari do not taste the same and neither do any two brands of soy sauce. Trying new products and modifying recipes goes hand in hand with any dietary restriction. There is nothing like a head-to-head comparison to find out what you prefer, help you learn about the products you consume and have a little fun in the process. I wont say any more about product labels, they are self explanatory and a tasting event will put you on the right track.
Other Differences Between Soy Sauce And Tamari
Soy sauce and its many forms are found widely throughout Asia, but tamari is specifically a Japanese form of soy sauce, traditionally made as a byproduct of miso paste.
The differences in production give each sauce its own unique flavor. Tamari has a darker color and richer flavor than the common Chinese soy sauce you may be more familiar with. It also tastes more balanced and less salty than the sometimes harsh bite of soy sauce, which makes it great for dipping.
Instead of keeping one or the other in your cupboard, consider stocking up on both sauces and experimenting with them in dishes that call for soy.

Why Is Soy Sauce Not Gluten
Traditionally, most soy sauces are made out of soy and wheat, so calling it soy sauce can be misleading for people who need to avoid gluten.
Soy sauce contains crushed wheat and soy that ferments for a few days or longer.
Soy sauce can have a lot of wheat in it which can irritate those sensitive to gluten. Typically, the soy and wheat ratio in soy sauce is 1:1.
As a result, many brands will have gluten in them because soy sauce usually has wheat in it. It would be best to check the ingredients list before you buy soy sauce.
However, not all soy sauces will have gluten because there are some gluten-free brands that contain very little to no wheat. You may also check out gluten-free alternatives to soy sauce.
Why Is Some Barley Malt Vinegar No Longer Gluten Free
Coeliac UK has recently updated its guidelines stating that it will no longer be listing products containing barley malt extract or barley malt vinegar unless they are labelled as gluten free.
This is placing a greater responsibility on the manufacturers to confirm that products contain less than 20ppm of gluten and can be labelled as gluten free.
It means 187 products have been removed from Coeliac UKs safe list including Branston Pickle, Lea and Perrins and Sarsons Malt Vinegar.
However, a couple of products which are still listed as safe, and a good gluten free alternative, include:
- Heinz Rich and Tangy Sandwich Pickle
- Blenders Malt Vinegar 10ml sachets
- Heinz Chunky Classic Ploughmans Pickle
Obviously Coeliac UK is continuing to contact manufacturers and if any of the removed products appear safe again, I will update this guide and let you know!

Ingredients for this flavor include:
- Chickpea Miso
- Total Carbs- 21g
- Protein- < 1g
Kikkoman is widely known for their soy sauce products that are found at almost every restaurant with dedicated Asian cuisine. Their hoisin sauce, unfortunately, does not boast a vegan label. Though there are no visible animal byproducts in the ingredients, we havent put this brand on the vegan-friendly list until the brand states otherwise.
The ingredient caramel color could be the reason for such, as sometimes caramel color is made with white sugar, which can be processed using bone char . Its safe to say this is up to the individuals discretion, but we have put this on the Be Wary Of list just in case.
What Is Kikkoman Manjo Mirin
Manjo Aji-Mirin by Kikkoman is a product of Japan and is a common cooking essential for Asian cuisine. Traditionally, it is added to dishes like stir fry, teriyaki and tempura. It adds a traditional flavor to these and other dishes. Aji-Mirin literally translates to mirin type condiment.

Japanese Tamari Soy Sauce
Japanese Tamari soy sauce tamari is a form of traditional soy sauce produced as a by-product during the production of miso paste. Unlike any conventional soy sauce, it contains no wheat and is made with a higher volume of soybeans.
This soy sauce has a rich texture and thicker sauce as it is made with mainly soybeans. Any soy sauce that has the Tamari name should be gluten-free.

Varieties Of Soy Sauce
Once upon a time, way back in the 20th century, selecting soy sauce at a local grocery store was a simple process. The prevailing variety was what we now know as koikuchi. The choice boiled down to a few brands, not flavors. Peruse the Asian foods aisle at a mainstream supermarket today and the options are seemingly endless. Serious Eats breaks it down. In addition to Japanese-style all-purpose koikuchi, youll likely find lighter, richer, and slightly sweet usukuchi. Koikuchi and usukuchi are interchangeable in most recipes, but taste test to be sure youre not overdoing it with the richer blend. Tamari, made without wheat, is the best choice for gluten-free diets. Shiro, also known as white soy sauce, is blended with a higher percentage of wheat resulting in a lighter color and flavor.
According to The Woks of Life, Chinese soy sauce is saltier than its Japanese counterpart. Available in both light and dark blends, Sous Chef describes the light version as strong and pungent with notes of beans, while the dark blend is intense with a forward sour bitterness and strong umami flavor. Top brands of Chinese soy sauce include Koon Chun, Pearl River Bridge, and Lee Kum Lee .

How Harmful Is Soy Sauce On A Gluten Free Diet
If you are on a gluten-free diet, note that usually soy sauce that is not labeled gluten-free contains wheat. In some countries outside the United States, it may contain barley. While there are gluten-free brands of soy sauce on the market, including tamari sauce, you should know what to expect if you accidentally ingest some glutenous soy sauce.
There are two different methods of making soy sauce. The one used in making the most flavorful soy sauce is fermentation. The other process is chemical hydrolysis, where 3-MCPD occurs, which is a known carcinogenic . Once processed, molasses or caramel color is added to make it darker in color.
In a soy sauce study, 22 brands of gluten-containing soy sauce were tested for gluten content from grocery stores and Asian markets using the R5 sandwich assay test or the R5 competitive ELISA test. All of the soy sauces tested with the R5 sandwich assay proved to be negative for gluten content. The ones tested using the R5 competitive ELISA test showed that 21 contained less than 20 parts per million gluten and the other contained 22.8 ppm.
The FDA plans on releasing separate gluten-free labeling laws on fermented and hydrolized food.
How To Make Sure Your Soy Sauce Is Gluten
Like other condiments that claim to be gluten-free there is no exact way to make sure that the soy sauce you are using is gluten-free. So, for this, you just must rely on gluten-free labeling and trust in the integrity statement of the brand you are using. For this, you must check the brand site first and sift through their FAQs.
