Rolling Out The Dough

Crispy Gluten-Free Graham Crackers (Vegan) | Minimalist Baker Recipes

Preheat your oven to 300 degrees Fahrenheit or 149 degrees Celsius.

After removing your dough from the fridge, let it warm up a bit for 5-10 minutes, then turn it out onto your work surface. Save the plastic wrap!

Using your dough scraper or a knife, cut the dough into 4 equal chunks and set 3 of them aside.

TIP: use a piece of parchment paper beneath each piece while you work on it. Once the crackers are rolled out, it may be tough to remove them from your work surface to put them on the pan. You can easily just pick up the parchment paper and put it right on your baking tray and bake!

Now were going to roll out each piece.

TIP: You might find that the dough sticks to your rolling pin. I recommend taking the plastic wrap that you rested the dough in and placing it over the ball of dough as you roll it out. This keeps the dough from sticking.

Roll out the dough till its about a quarter of an inch thick. It might look like a blobby shape, rather than a rectangle.

Remove the plastic wrap temporarily and even out the rectangle by taking some of the outer pieces and filling in the gaps.

So if I have a litte peninsula of dough on the bottom but Im missing some in the top right corner, I can pull off some extra and press it up there. Then replace the plastic and roll in that area.

TIP: Save the scraps! You can make a whole nother dough ball just by saving all your dough scraps. I just pile them in the corner of my work surface.

How To Make The Dough

Its pretty easy to make the dough.

Get out your coconut cream or vegan butter and measure it out first. We want to let it soften just a bit.

Then, add all your dry ingredients to a large bowl: flour, sugar, salt, baking powder, baking soda, and ground cinnamon. Mix them together with a fork or whisk.

Work in the coconut cream or vegan butter with a fork, pastry cutter, or I prefer my hands. The warmth and pressure from my hands softens the coconut cream up and helps it blend into the flour.

Blend until all the large chunks have been incorporated. The texture should resemble a coarse meal.

Now, add the water and maple syrup. Mix it until the mixture has darkened from the moisture and no super dry parts remain.

Add an extra tablespoon of water if you need to–I did because I used whole wheat flour, but 2 tablespoons was too much and it got too sticky. It will come together more later, if youre worried about how crumbly it is.

Mix until smooth and turn out your dough onto your work surface. It will look pretty crumbly at this point.

Using your hands, pat the dough together into one mound. Using a dough scraper if you have it , cut the dough in half and place one half on top of the other and push it down.

Repeat this process 5 or 6 times until the dough is more solidly together.

Now wrap the dough tightly in plastic wrap and refrigerate it for at least an hour or up to 24 hours.

Tips For Making Gluten

  • Due to the unique nature of buckwheat flour, I do not recommend replacing it with anything else.

  • The tapioca starch can be replace with arrowroot starch or cassava flour in a pinch!

  • The coconut oil can be replaced by melted butter, ghee, or olive oil.

  • Want to make Sugar-Free Graham Crackers? I like to use this sugar-free sweetener for replacing coconut sugar in baked goods.

  • Want to make Honey Grahams? Replace the coconut sugar with raw honey.

  • I do not recommend skipping the refrigeration step, as this is what will make the dough easier to roll out and work with.

  • I also do not recommend rolling the dough without the use or parchment or wax paper. It is a somewhat sticky dough, and the paper will allow you to roll it out with ease.

  • You can roll the dough out as thinly or thickly as you would prefer just keep in mind you may need to cook longer for thicker crackers and for a shorter period of time for thin crackers. Just make sure all is firm, golden and edges are just beginning to brown before removing from the oven.

  • These gluten-free graham crackers store well in air-tight containers at room temperature for up to 5 days.

Using A Stand Mixer Vs A Food Processor Whats The Difference Anyway

For this recipe, I used a stand mixer. In my opinion, its a lot easier to control the rate at which youre adding ingredients and how quickly they are mixed. This control results in more even distribution and a smoother texture. However, a food processor can definitely deliver amazing results as well! Make your own oat flour. Grind gluten-free rolled oats in a food blender or food processor. Then measure out the equivalent amount of grams as the gluten-free oat flour suggested. You can see how I made my own oat flour in this banana bread bars post!Butter Substitutes If youre looking to make this graham cracker recipe entirely vegan friendly, then replace the cold butter with a plant-based and NON-GMO soy-free butter. I recently discovered MIYOKOs Cultured Plant Butter and Nutiva Vegan Ghee!Nut-Free Options This recipe does call for almond flour, and although I havent tried substituting it in this recipe yet, I do think there is room to test. I would suggest substituting almond flour with sunflower seed flour, a combination of coconut flour/tapioca, or millet flour.

Not only can these Gluten Free Graham Crackers be prepped ahead of time, I recommend doing so! After all, you never know when that craving for smores will strike. To keep your crackers fresh, be sure to let them cool completely after baking. Then, store them in an airtight container at room temperature.

If you opt for the fluffier version and choose not to dry out your crackers, they will stay crispy for roughly 2 days. However, if you dry your graham crackers, they will stay fresh for up to 2 weeks!

For even longer storage times, you can also freeze your graham crackers. Personally, I like to keep the dough on hand. However, they store well when baked, too. Both versions will stay fresh for up to 4 months in the freezer.

Gluten-free flour is different than traditional wheat flour in many ways. I have found the best way to measure gluten-free flour is the spoon & level method.

I use a spoon to scoop the flour out of the bag and into the measuring cup. Then I use the back of a knife to level off the top of the measuring cup.

Please do not scoop the gluten-free flour directly out of the bag with your measuring cup. If you do, you could end up with more flour than is called for in the recipe.

Also, use a measuring cup made for dry ingredients .

Tips For Making These Allergy Friendly Graham Crackers

Here are some tips for making great gluten free graham crackers:

  • Try to roll the dough to an even thickness for consistent cooking among the pieces.
  • Even with consistent rolling, the middle pieces will still usually need a few more minutes to cook than the edge pieces. So its a good idea to remove the edge pieces from the pan once theyre browned then and bake the middle pieces slightly longer to get everything baked evenly.
  • If you rolled your dough on the thinner side, youll need to bake for slightly less time . If you rolled your dough thick, then you may need an additional couple of minutes.
  • If you cut the crackers smaller, youll need to bake them slightly less time.

Because we are baking these at a lower temperature , there is a little more flexibility with how long these are cooked and they wont burn if you accidentally leave them in the oven 1 or 2 minutes too long.

To accurately measure your flour, use the fork, spoon, knife method.

First, mix your gluten free flour with a fork to ensure it is aerated and evenly mixed.

DO NOT scoop the flour with your measuring cup, youll compact extra flour into the measuring cup and then your gluten free baked goods will be dry and crumbly because they’ll have too much flour.

Finally, level off your measuring cup using a knife.
