What To Make With Puff Pastry

GLUTEN FREE PUFF PASTRY | Easy rough puff pastry

Puff pastry is a versatile dough that lends itself to making a variety of savory and sweet recipes. I admit, since Ive been on the gluten-free diet for so long, I dont know much about cooking or baking with puff pastry. Its been a steep learning curve for me.

Regardless if you buy the dough or make it yourself , the dough is typically flakey, buttery, and savory. Most puff pastry doughs do not contain sugar, so they can be used for a variety of sweet and savory recipes.

Savory recipes made with gluten-free puff pastry might include:

  • Empanadas
  • Pinwheels
  • Tarts

There are so many options, and you can have fun playing with the dough and creating fun recipes with it.

What Flour To Use To Make It

I like to use my universal homemade gluten-free flour blend. Which is a mix of the following flours :

3. Sweet Rice Flour

4. Tapioca Flour

5. Xanthan Gum

If you cant make that one, you can try with any gluten-free flour mix . The final result using different flour mix might vary slightly, depending on what flours your mix contains.

Tip 2 Allow 15 Mins To Defrost

Now, my tip number two comes down to defrosting it. One of the number one problems people come up against is that their coles gluten free pastry doesnt defrost well. There are a lot of external factors that can play into it however. Always be aware of what the ambient room temperature is like when you start defrosting it.

I have found, and if you actually follow the instructions for Simply Wize, it can take up to 15 minutes to defrost. So make sure you give yourself lots of time to allow it to defrost fully before you start trying to work with it. So if you do pick up a sheet and it tears and cracks, try leaving it a little longer and fully allowing it to defrost!

An easy way to tell when it is at the perfect rolling consistency is to put your fingers into it. If your fingers squish nicely into the pastry and leave a dent, then youre good to go.

Tip 1 Use Frozen Pastry Within 24hrs Of Buying

This ones really simple, although you might think it kind of weird. Tip number one is to use your pastry when its fresh. Now, I can hear you saying, Stacey, its frozen. That kind of defeats the purpose.. And while I hear you, and I totally get it, trust me on this one.

When you buy a packet of frozen pastry from the shelf in your supermarket, who knows how long its been sitting there for. Then you take it home and whack it in your freezer. How long are you going to leave it there for until you might decide to use it? So my hot tip is to use your pastry within 24 hours of getting it home. I know, thats short but when I started doing this, it made the biggest difference to not only the usability, but the end product. My sausage rolls and pastry cases were lighter, they were flakier, and overall, it was much easier to work with.

Are All Puff Pastry Brands Vegan

Our favorite pastries and pies rely greatly on the puff pastries that we use. However, we do not have a lot of time in our hands to prepare them from scratch.

The question is, are all puff pastry vegan? You can be sure that the one you make on your own is really a vegan puff pastry, but what about those puff pastry sheets sold in grocery stores?

There are vegan puff pastry brands that you can find in stores, but you have to check them thoroughly because some have non-vegan ingredients. Keep away from the brand’s butter puff variety since they use ingredients that have an animal origin.

Can I Freeze Gluten Free Puff Pastry

Yes, you can freeze gluten free puff pastry dough. It’s best to finish rolling it out into a 15X12 rectangle before you freeze it.

After you roll it out, roll the dough up with the parchment or wax paper and place it in a zip lock back and place it in the freezer.

When you’re ready to use it, let it sit at room temperature for 30 minutes before you unroll it.

If you unroll it when it’s still cold, it will crack.

This gluten free puff pastry recipe makes one 15×12, ¼-inch-thick sheet of puff pastry dough. It weighs approximately 22 ounces.

If you’re making a recipe that uses a store-bought puff pastry dough simply weigh out the amount you need.

Substitutions

  • I haven’t tried a dairy-free butter in this recipe. When I do, I will update this post.
  • You can substitute the potato starch or the tapioca starch with arrowroot starch, but not both at the same time.
  • You can use salted or unsalted butter, but if you use salted butter you’ll need to omit the salt.
  • You can use heavy cream instead of egg for the “egg wash”.

This rough gluten free puff pastry was designed to be an easier version of traditional puff pastry.

I’ve minimized the steps and ingredients as much as possible, while still delivering a delicious, flaky, buttery puff pastry dough. This recipe also works great for gluten free puff pastry sheets.

Rolling Out Your Pastry

This is where the fun starts – it’s time to make those lovely layers!

The layers in puff pastry are achieved by simply rolling and folding the pastry in a certain way.

However, as I said before, this relies on the pastry being cold so if your dough warms up at any point, just pop it back in the fridge.

The making of this gluten free puff pastry is really quite simple, it just takes patience more than anything.

Remove your pastry from the fridge and generously dust the work surface with gluten free flour.

Place the dough in the centre and use your hands to flatten the dough into a rectangular shape, like this:

Then, with the short end nearest you, roll the pastry out in one direction into a long rectangle.

You want it to be approximately 1cm thick .

Use your hands to keep shaping the pastry into a rectangle as you roll, so that you have reasonably straight edges.

Your rolled out rectangle should look like this, with the long ends approximately double the length of the short ends.

I was so excited to finally get my hands on some, thanks to our Anniversary sponsor Schar! Unfortunately, we still dont have it here it Arizona, but plenty of readers have spotted it in their frozen foods section across the USA!

Just make sure you defrost the puff pastry dough for at least 3 hours. Unroll it slowly and carefully and mend any cracks with a little bit of water and your finger. Then, cut the dough using a pizza cutter or knife into squares or the shapes you need for each pastry. Carefully fold the dough, working out any tears with a little water and your finger. Add on the toppings and fillings before you put into the pre-heated oven. Make sure to follow the instructions for baking on the box! Making Gluten Free Puff Pastry In Advance

Keto gluten free egg roll wrappers or puff Pastry

Once youve finished all the turns, your gf puff pastry is ready to be used. But you dont have to use it right away.

You can wrap it tightly and refrigerate it overnight to use the next day. If you plan to use it within a week, you may want to divide the puff pastry dough in half and roll out sheets that you fold more loosely like a business letter before storing.

This gluten free puff pastry dough can be frozen for months. In my experience, rolled out gluten free puff pastry sheets dont tend to freeze well for longer periods of time, as they tend to crack when you finally work with them.

I think long term storage is best accomplished by freezing the dough in a single block. Then, defrost overnight in the refrigerator before using, and expect to roll the pieces of raw puff pastry dough out a few times until its easy to work with. Try letting it sit out on the counter for about 10 minutes first, and then work quickly!

Which Is Better The Coles Gluten Free Pastry Or Simply Wize

Ive baked with not only the original Coles gluten free pastry, the new re-formulated one and the classic Simply Wize, and I can tell you, they are all very different. Often at the end of the day though it comes down to personal preference.

For me, Simply Wize wins out every single time. By following my tips above I have perfect gluten free puff pastry every time I step into the kitchen.

As for the new Coles gluten free pastry? Its nice, and using my tips definitely makes a difference in its usability. But I have to say, they definitely messed with a good thing . Now it has a tendency to dry out too quickly and crack around the edges. So be sure to let it defrost and work with it straight away.

What Is A Puff Pastry

Puff pastries are made of enriched wheat flour made into dough, and shortening is added inside and folded to create a Paton. Commonly, manufacturers use butter which contains dairy, while others add milk to enhance the buttery richness of the finished product.

To extend its shelf life, it is not unusual to have additives such as potassium sorbate or thiamine mononitrate in varying proportions. Vegan puff pastries also have these ingredients, so feel free to check them out before trying them on your next recipe.
