How Do I Make A Gluten Free Chocolate Cake

5-ingredient Peanut Butter Cake (Gluten-free!)

Making the gluten free chocolate cake is the same old story of sifting together the dry ingredients, adding the wet ingredients, mixing it all up, and baking the sponges until risen and fluffy and wonderful.

But lets start at the beginning.

Sift together gluten free flour, xanthan gum, baking powder, baking soda and cocoa powder.

Add in the sugar and salt. Whisk it up.

Pour in the vegetable oil, milk and crack in the eggs.

Whisk it all together until you get the most luscious chocolate cake batter. At this point, you might think that this is it it looks like it has the perfect consistency and you might be tempted to bake it as is.

But nope, theres one more thing, and its boiling hot water. I know it sounds kind of out there, but it really truly works. This will ensure that the gluten free chocolate sponges stay moist and delicate. No, it wont scramble the eggs. And no, it wont make the cake puddingy. Dont worry, mmkay?

The final cake batter will be runny, and it will look like a super luxurious hot chocolate. It will be oh-so tempting to have a taste , but al least try to resist.

Pour the cake batter into lined round cake pans, and bake. Thats all there is to it.

The heat index has been in the upper 90s for the past few weeks and while Im someone whod normally sit outside until my blood starts to boil, even I have to admit its brutal out there. Not as brutal as summers in my parents house growing up though, where they had two rules once school let out:

  • No TV. Just straight up canceled cable for three months.
  • No air conditioning until it reached 90 degrees. Inside the house. INSIDE THE DANG HOUSE.
  • We were totally unplugged, and as much as we complained in the moment, Im so glad they did what they did. Let me be clear Im so glad they canceled cable and shooed us outdoors every single day, NOT that they were so strict with the AC. Going to bed with fans blasting hot air 5 inches away from your face is not a good time!!

As a result of my parents rules though, my brothers and I left the house each morning after breakfast, maybe stopped home for a quick lunch, but most days didnt come home until dinnertime. Our days were filled with friends, swimming, creek walking, bike riding, chalk drawing, bug collecting, and doing anything that didnt involve sitting in a hot house staring at a blank television.

Notes On Ingredients For This Flourless Chocolate Cake:

    How to Make Gluten-Free Brownies | Gluten-Free Recipes |
    • Chocolate: The chocolate is the star of this recipe, so I recommend using a good one! Some people like using bittersweet chocolate, but I really prefer semi-sweet chocolate. You can chop your own bars of chocolate or use semi-sweet chocolate chips like I did. I make with Guittard semi-sweet chocolate chips.
    • Butter: I prefer using salted butter. It has better flavor.
    • Eggs: There is no subbing the eggs in this theyre important for giving this lift, and the incredible texture. Youll be separating yolks and egg whites. I prefer using this egg separator to perfectly separate eggs without breaking any yolks or getting any shells in there. Ive had this one for probably 20 years, so its worth investing in one!
    • Sugar: Just plain white sugar is all you need for this!

See, just 4 simple ingredients for the flourless cake portion! You probably have all of these on hand already too!

For the whipping cream, youll want to grab a quart of heavy whipping cream, some powdered sugar and some pure vanilla extract.

Briannes Pro Tips For The Best Gluten Free Cake

    • Use parchment paper: Always line your cake pans with parchment paper to avoid having them stick.
    • Freeze your bowl: Put the bowl that youll use for whipping the cream in the freezer for a few minutes and use very cold heavy cream to help it whip better. Try to whip it just before you are going to assemble the cake.
    • Dont over beat: Be sure not to over beat the whipped cream or it will separate and turn into butter.
    • Make in advance: You can serve the cake right away, but I recommend making it a few hours in advance or the night before so that the cake gets super moist from absorbing some of the moisture from the whipped cream. However, I wouldnt recommend storing leftovers for more than a day or so. It tastes best when fairly fresh.

Place one cookie at the bottom of each glass, topping with a few spoonfuls of whipping cream-peppermint extract mixture, and sprinkle with crushed candy canes. Of course, this can be modified to become more of an alcoholic dessert but should be served chilled.

    Does Baking Powder Have Gluten

Another one of the frequently asked questions. Baking powder is a mixture of three ingredients: baking soda , an acid and a starch to absorb the moisture and keep it from clumping together.

The starch is where the gluten question comes in. However in my experience, the starch is usually rice flour or cornstarch, which dont contain gluten.

So its safe to say that baking powder in general doesnt contain gluten, but it might be produced in a facility where gluten in processed or be a special brand that uses a gluten-containing starch. Therefore always make sure to carefully read the label and check the ingredients list.

Beans: A Secret Ingredient For Springy Moist Cakes

    3 Ingredients Dessert Recipe in 5 mins! PANNA COTTA /No gelatin/ Gluten-free/ Guilt-free!

Yellow cupcakes made with cannellini beans and a chocolate cake made with chickpeas?

You read that right. Beans are one of the secret ingredients youll find in many of our dessert recipes here at Healing Gourmet. Used properly, they provide light, springy structure, moisture and tenderness to baked goods. One word of caution: Baked goods made with beans can have a slight beany flavor for up to 12 hours after baking. This flavor will dissipate, so be patient. Its worth the wait.

When using canned beans, opt for Eden Organic. In addition to being grown without the use of pesticides, Eden also packs their beans in BPA-free cans.

Along with canned beans, bean flours are another good option to have on hand. Bobs Red Mill is a great brand, found at most food retailers across the U.S.

Because bean flours are dense, try adding bean flour for up to 25% of your gluten free flour mix. Here are the most popular bean flours and how to use them:

    • Garbanzo Bean Flour: Use 7/8 cup to replace 1 cup of wheat flour in baked goods.
    • Black Bean Flour: Use as part of your baking mix for chocolate cakes and brownies.
    • White Bean Flour or Fava Bean Flour: Mild in taste, white bean flour or fava bean flour are suitable for use in most recipes calling for white flour. Substitute 1/4 of the white flour for bean flour.

Get creative with canned beans, bean flour and nut flours in your baking.

Because I do not personally have a sensitivity to gluten, Im able to test most recipes side by side with traditional flour, so that when I tell you that something tastes every bit as good as the traditional version you can trust that it does.
