How To Make Gluten

Because I havent been able to find store-bought gluten-free puff pastry, I decided to make my own. The only issue is I didnt know where to start.

After combing the Internet to see what options were available, I landed on my friend Crystals blog. She is a fantastic baker and has a recipe for everything check out her site.

Can I Used Canned Apple Filling In This Recipe

You can but there are some things to keep in mind. Canned apple filling has other ingredients in it, so check the labels and make sure there are no glutinous ingredients included.

If you find a gluten-free apple filling please note that the apples are already cooked so they may be on the soft or mushy side if you use pre-made filling in this gluten-free apple turnover recipe.

Homemade Puff Pastry Dough

If you can’t find Schar Puff Pastry Dough in your area you can use my recipe for Gluten Free Puff Pastry Dough to make these gluten free hand pies.

These gluten-free apple turnovers are two servings each. You can make smaller apple turnovers, also called gluten-free apple hand pies, or you can cut them into triangles.

I like to make the big ones so I can stuff more apple filling in the center.

If you make smaller gluten-free apple hand pies, or go the triangle route, you’ll want to adjust how much filling you put in the center.

The most important thing is to seal the edges so your filling doesn’t run out onto the pan and burn.

A little apple juice on the pan is fine, you just don’t want it all to leak out.

Assemble The Pigs In A Blanket

Once you get your store-bought or homemade gluten-free puff pastry in order, its time to assemble and cook your gluten-free pigs in a blanket.

I was able to make 24 gluten-free pigs in a blanket using a single sheet of Schar gluten-free puff pastry. To maximize the dough, I rolled it out , and then used my pizza slicer to cut small rectangles of dough.

I then wrapped each mini hot dog in the dough, pinched the dough together and placed each assembled pig in a blanket seam-side down on my baking sheet.

I then brushed the tops with egg wash for a more browned look. This is optional and please check the instructions on any store-bought brand to see if this step is recommended. Its a recommended step when using my puff pastry recipe.

What Is Gluten Free Rough Puff Pastry

Puff pastry is made by creating layers – this is called ‘laminating’ the pastry.

As it cooks, the butter between the layers of pastry melt, causing the pastry to puff up.

You may have seen this on Bake Off, with bakers talking about how they’re making a ‘rough puff’ instead of traditional puff pastry.

In short, ‘proper’ puff pastry is made when you place a flattened block of butter in the middle of the pastry and then fold it into the layers.

But rough puff pastry is a little easier and a little less technical.

What Do I Need To Make Gluten Free Puff Pastry

This gluten free pastry recipe is very simple – you actually only need a few ingredients!

There’s a full printable recipe card below, but for the shopping list you’ll need:

  • 250g unsalted butter
  • 150ml ice cold water

And that’s it! Nothing fancy or complicated at all.

I always use either the FREEE or Asda gluten free plain flour but any plain gluten free flour blend should work.

The xanthan gum is very important for the texture of this bake.

Even if your flour blend already contains xanthan gum you’ll need to add the recommended amount in the recipe.

Otherwise your pastry will become an un-foldable, sticky mess and will be unworkable.

Apart from that it’s just unsalted butter and salt – plus some ice cold water. The colder the better.

Can You Freeze Chicken Pot Pie Casserole

Chicken pot pie made with fresh crust can be frozen, but it is a little tricky to reheat it. Its generally best to bake it before freezing it and then reheat it rather than freezing the uncooked dish. This chicken pot pie casserole is much more freezer-friendly.

Rolling Out Your Pastry

Gluten Free Puff Pastry Dough – Part 1 of 4 – Butter Block

This is where the fun starts – it’s time to make those lovely layers!

The layers in puff pastry are achieved by simply rolling and folding the pastry in a certain way.

However, as I said before, this relies on the pastry being cold so if your dough warms up at any point, just pop it back in the fridge.

The making of this gluten free puff pastry is really quite simple, it just takes patience more than anything.

Remove your pastry from the fridge and generously dust the work surface with gluten free flour.

Place the dough in the centre and use your hands to flatten the dough into a rectangular shape, like this:

Then, with the short end nearest you, roll the pastry out in one direction into a long rectangle.

You want it to be approximately 1cm thick .

Use your hands to keep shaping the pastry into a rectangle as you roll, so that you have reasonably straight edges.

Your rolled out rectangle should look like this, with the long ends approximately double the length of the short ends.

Using Your Gluten Free Puff Pastry

Once you’re ready to use your gluten free puff pastry, it’s pretty simple from here on!

To roll it out, remove it from the fridge and roll to the desired thickness dictated in the recipe.

If you have any offcuts, make sure you stack them neatly instead of scrunching them up.

This way you can re-roll the stacked-up pile out and use them for things like cheese straws!

If you scrunch them up you’ll lose all those layers and they won’t puff up anymore.

I was so excited to finally get my hands on some, thanks to our Anniversary sponsor Schar! Unfortunately, we still dont have it here it Arizona, but plenty of readers have spotted it in their frozen foods section across the USA!

However, being a celiac forEVER I didnt even know what to make with puff pastry dough. I hadnt used gluten-free puff pastry dough since being diagnosed. What was I going to make with it? Of course I went to and YouTube to explore. I found this Tasty video and decided to experiment with a few on Schars new puff pastry dough.

Its pretty easy to make these elaborate looking pastries honestly! Now, gluten-free puff pastry dough is a little more difficult to work with , but with a little bowl of water and some patience, you can really nail gluten-free puff pastry recipes! Just make sure you defrost the puff pastry dough for at least 3 hours. Unroll it slowly and carefully and mend any cracks with a little bit of water and your finger. Then, cut the dough using a pizza cutter or knife into squares or the shapes you need for each pastry. Carefully fold the dough, working out any tears with a little water and your finger. Add on the toppings and fillings before you put into the pre-heated oven. Make sure to follow the instructions for baking on the box! Pinwheels like these take a shorter amount of time than more intricate designs so dont burn them!
