What is gluten free beer made from?

Generally, gluten free beer is made from millet, rice, sorghum, buckwheat, and corn, all of which are ingredients that dont contain gluten. This as a result, doesnt trigger an autoimmune response in people with Celiac disease.

Some breweries will still brew with barley or rye but reduce the levels of gluten to below 20 ppm.

It can be very intimidating to approach and engage with these alternative ingredients, such as millet, rice, and buckwheateven for the experienced brewer. That technical aspect is typically the part that new brewers struggle with most: getting good efficiency out of their mash. Thats a function of several factors, including proper milling, the use of enzymes, and equipment limitations.

Milling

Each of the aforementioned grains has its own inherent difficulty with milling. Millet, for instance, is very small and requires a very tight mill gap to get a decent crush. Rice, on the other hand, is comparable to barley in size but far less friable, so it can either lead to your mill getting jammed or wearing your rollers down earlier than expected. Buckwheat, being a pseudo-grain, doesnt play by the rules. It mills with ease but leaves behind a lot of fine particulate and hull.

Optionally, you could always bypass these challenges by buying pre-milled grain from suppliers for a small surcharge. At Ghostfish we have a nice mill on which weve dialed in a single setting. It can get a good crush across our spectrum of grains without having to adjust. If youre brewing at home, however, you may need to change settings frequently and make multiple passes to ensure a good crush.

Couple Opens Only Dedicated Gluten Free Brewery In Ohio

MIDDLETOWN, Ohioâ For many adults, you may not think twice about consuming gluten- but for some with celiac disease- itâs a constant everyday battle to make sure no trace of gluten is in their food or drink.

  • They decided to open a gluten free brewery in Middletown
  • Rolling Mill Brewing is the only dedicated gluten free brewery in Ohio

For one couple after they found out they couldnât have gluten because of an allergy and celiac disease, they wanted to drink beer so they decided to found their own brewery in Middletown and many people come from all over to drink it.

Josh Laubach found out ten years ago he has celiac disease- which creates an immune reaction when he eats gluten. He soon found out how serious it was.

âIâll go to McDonald’s and Iâll have a biscuit and just take the sausage and the cheese off and eat it,” Josh said. “So I really had no idea how restrictive- yeah thatâs a complete no-go, you canât do that.â

But Josh loved beer and so did his wife Megan. But they soon found out it was difficult to find any quality gluten free beer.

âThere were no options, there were zero options for any of that,” Josh said.

So they decided to start home brewing and eventually decided to open Rolling Mill Brewing Company- the only dedicated gluten free brewery in the state.

âThat was always our goal was to be able to brew good beer that just happens to be gluten free,” Megan said.

A few weeks ago, I saw a request on Best Gluten Free Beers for someone near Pittsburgh to assist in reviewing Aurochs Brewing Co. While Ive havent blogged much since the MySpace days, I would be visiting the Iron City soon and knew this would be a fun venture.

First, a little back story on me. Ive been gluten-free since 2006 after a slow separation with craft beer and a deeper relationship with wine and cider. I started homebrewing in an attempt to make something better than the more widely available GF beers and fortunately Ive been able to travel and try some craft GF beers over the years. With that said, Im very happy to have Aurochs about 3 hours from my hometown Columbus, Ohio.

My yearly visit is primarily for my other hobby: Roller Coasters! Knoebels Amusement Park is located in Elysburg, PA and the first weekend in October is the Covered Bridge Festivala large gathering of crafts and food vendors along with the parks world class rides. On the return trip through Pittsburgh is a scheduled stop at the classic Kennywood Park, but this years plans were spoiled by rain from the remnants of Hurricane Nate.
