How To Make Gluten

  • Preheat oven to 375°F.
  • In a large bowl, beat the softened butter, granulated sugar, and brown sugar until creamy.
  • Add the egg , molasses, and pure vanilla extract to the butter mixture and mix until fully combined.
  • Add the gluten-free flour, baking soda, baking powder, and salt to the butter mixture and mix until fully combined.
  • Either stir in the chips with a spoon or use your mixer on low to mix the chocolate chips into the cookie batter.
  • Drop by rounded tablespoon or use a greased cookie scoop. .
  • Place the cookies 2 inches apart on a parchment-lined cookie sheet.
  • Bake for 8-10 minutes until they start to turn golden brown . Please watch your oven because all ovens are different.
  • Cool and store leftovers in an air-tight container. Enjoy!

How To Freeze Cookie Dough

If you decided to make the cookie dough but not bake the cookies just yet, you can store the cookie dough wrapped in plastic wrap for up to 4 days, or in the freezer for up to 2 months.

I recommend pre-scooping them into cookie dough balls for an easy fridge-to-bake method. However, you can also store the whole cookie dough in the freezer.

Just let the cookie dough thaw for about 2 hours before scooping!

Im sure Im not unique in ranking breakfast cereal high on the childhood nostalgia scale, but in case youre not there yet, here you go. Its a complete breakfast, folks. A jingle wouldnt lie to you.

To be honest, I treated these guys as a snack, rather than breakfast, but you could do a lot worse than to start your day off with a bowl of these dudes with some unsweetened almond milk. Theyre gluten-free, sweetened with coconut sugar, and contain no palm oil or hydrogenated fats. And though the little guys pictured here used chocolate chips, cocoa nibs would work just as well.

Bonus: Vegan Gluten Free Chocolate Chip Cookies are incredibly easy to make. The dough is very forgiving and comes together in one bowl. The big trick to getting them to hold their shape in a bowl of milk is to let them sit out on a cooling rack overnight, to get just a bit stale. If you decide to cover them instead theyll stay moister and make a phenomenal mini cookie snack .

Coconut oil OR vegan butter: The fat you use in these cookies must be solid at room temperature, not liquid. I have used refined coconut oil, which has no coconut flavour or aroma. I have also used Earth Balance vegan butter. Both worked amazing, however I slightly preferred the vegan butter.

You can use either, however it MUST be solid when you use it in the recipe, but should not be very cold. When solid coconut oil is cold, it crumbles and wont combine properly with the other ingredients.

Non-dairy milk: I like unsweetened almond milk best since it has some fat and is not too watery. But its such a small amount of milk that any nondairy milk would work just fine.
