Can I make this recipe dairy free?To make this recipe dairy-free, substitute the butter used in the brownie batter as well in the frosting with your favorite non-dairy butter. My personal preferences are sticks over spreadable substitutions. I do not recommend using coconut oil.
Why are my brownies tough?Most likely you have overbaked the brownies. You may be tempted to bake them until a toothpick comes out clean. I recommend removing them from the oven while some moist crumbs are sticking to your toothpick.

Youll Know Its Ready When
The ingredients should form a well-incorporated ball and will begin to go around like pizza dough. Its okay if there are a couple of little chunks at the bottom.
Place parchment paper in a 8 x 8 glass dish and put your ball of dough in the middle and then pressing it flat into the corners and sides.
The picture below is when I ground my oats with a food processor rather than using oat flour. They are still good, but there will be a little bit of texture because not all the oats will grind down depending on your blender or food processor options. *Now I use oat flour, which I love way more because the consistency is so smooth!
Once it is flat, you can add your mini chocolate chips to the top and gently press them in.
Place the dish in the freezer for 30 minutes to an hour. Then remove and cut into bars or small squares. Keep in the refrigerator and enjoy for up to 2 weeks, if they last that long!
- 1tsp.natural vanilla extract
- 2tbsp.mini chocolate chips
First add the blanched almond flour, oat flour and protein powder to your food processor or blender and mix until combined
Next add your peanut butter, maple syrup and vanilla extract.
Pulse your blender to combine ingredients slowly at first and then more quickly
You will know it is done when it all becomes one ball of dough. You may have a couple chunks left in the bottom, but these are easily combined when you add it to your 8 x 8 glass dish
Once it is flat, add your mini chocolate chips to the top and gently press them in.

What Is A Perfect Bar
Perfect Bars are a store-bought brand of protein bars that come in many different flavors. Theyre advertised as a whole-foods based protein bar, that are extremely fresh. You can find them in the refridgerator section of most grocery stores. I personally love them because they are filling, pretty high in protein, and very satisfying served chilled!
Peanut Butter Chocolate Chip Perfect Bar Tips
When it comes time to make your bars, take these tips into account to make the process as smooth and simple as possible!
8×4 bread panI like to use an 8×4 sized pan for this recipe, but any size will work! Since its no-bake, switching up the pan size is perfectly fine.
Swapping peanut butterIf youre more a cashew or almond butter person, feel free to use them. The peanut butter can be swapped at a 1:1 ratio with any similar nut butter!
StorageKeep perfect bars sealed in an airtight container in the refrigerator. Enjoy within 4-5 days.

How To Make Paleo Pumpkin Pie Bars
Step 1: Preheat the oven to 350°F. Grease a 9×9 square pan with cooking spray and line with parchment paper.
Step 2: To make the bar crust, add all of the crust ingredients to a food processor. Pulse until a large dough ball forms. Alternatively, you can use a hand mixer or stand mixer to form the dough.
Step 3:Next, press the dough into the bottom of the baking pan. Spread across the bottom of the pan until it is flat and even. Bake the crust for 12 minutes.
Step 4: Meanwhile, add the pumpkin filling ingredients to a medium bowl. Mix with a whisk to combine.
Step 5: Remove the crust from the oven and set aside for 5 minutes to let cool slightly.
Step 6:Pour the pumpkin pie filling on top of the crust and spread it evenly. Bake for 1 hour. You can tell when the bars are done the edges have browned and the center has firmed up.
Step 7: Let cool on a rack before cutting and removing the bars. Store the cooled bars in the fridge for up to 5 days. Enjoy with whipped topping or plain!
First Up: Whats In Soft Granola Bars
GLUTEN FREE QUICK COOKING OATS. I almost exclusively use rolled oats or steel-cut oats in my kitchen, but this is a good use for quick-cooking oats. Ive found rolled make the bars too chewy, and they dont hold together as well. This brand and this brand are certified gluten free.
GLUTEN FREE CRISP RICE CEREAL. We almost always use crisp brown rice cereal, since its certified gluten free. If youre not gluten intolerant, any crisp rice will do! We usually go for Erewhon, One Degree, or Barbaras brands, which are certified GF. I get them at Sprouts, Whole Foods, Thrive Market, Natural Grocers, or in bulk .
COCONUT OIL. I use coconut oil since its subtly sweet and I dont feel like these granola bars have a strong coconut taste. You can use refined coconut oil , or swap in butter or vegan butter, depending on your needs.
BROWN RICE SYRUP.Brown rice syrup is a thick, sweet syrup made from brown rice. It works wonders binding the mixture together and is neutral enough to let the other flavors shine. I find it least expensively at Sprouts, Natural Grocers, or Whole Foods, but I have also found it at Kroger and . *Cant find it? See the FAQ + TIPS section below for a solution.
PURE MAPLE SYRUP. Just 2 tablespoons here, but pure maple syrup add a lovely sweet note.
SALT & VANILLA. My flavor balancers! I notice a difference when I forget the pinch of salt. It really brings out the other flavors. Vanilla lends some sweetness as well, though you can swap it out for other extracts
