Top 10 Healthiest Gluten Free Foods At The Grocery Store

Asian food is one of the few ethnic culinary dialects that is somewhat conducive to gluten-free dining. However, when dining out, there still exist gluten-free danger zones, namely the presence of gluten-filled soy sauce and other glutenous ingredients. As a busy college student with a shortage of gluten-friendly restaurants in town, I have come to rely on Feel Good Foods vegetable egg rolls as a staple meal in my collegiate dining rotation. Feel Good Foods brings the deliciousness of Asian cuisine right to your freezer, and serves up a side dish of peace of mind as all meals are gluten-free and designed to be free from preservatives or artificial additives. Recently, they expanded their line to include Asian meals and other favorite dishes. Eager to put them to the test, I made sure to load up on a recent Whole Foods trip and came home with pad see ew, mu shu chicken, and vegetable dumplings.Starting first with the dumplings, which are the first gluten and dairy-free ones on the market, the preparation method was a little new to me, but explained well on the packaging. Simply add oil and water to a nonstick skillet and the dumplings will literally pan fry themselves as the water evaporates. My first go at cooking the dumplings, I must admit did not go too well as I tried to cook too many dumplings in the size pan I used. I also made the mistake of trying to flip the dumplings mid-fry which resulted in ripped open, stuck together dumplings .

Can I Make Gluten

If you need to avoid xanthan gum, rest assured, you can still make gluten-free dumpling wrappers! Instead use ground up chia seeds.

To do so, grind up chia seeds into a powder using a coffee grinder and sub in 6 tablespoons ground chia seeds in place of the xanthan gum. Since chia absorbs more water, add 2-3 tablespoons more warm water to the dough. Either white chia seeds or black chia seeds will work, but ground black chia seeds will produce a light greyish dumpling, while white chia seeds will only minimally change the appearance of the dumpling to look a little more whole grain.

While the chia seed wrappers are easier to roll out into rounds, they’re a bit more delicate when it comes to pleating, so handle them more gently. Work quickly because once you wet the edge, the dough gets softer much quicker. After they’re pleated into potstickers, they cook up and taste exactly the same as the xanthan gum version!

Making The Gluten Free Won Ton Wrappers Ahead

It is nothing short of a labor of love to make these gluten free potstickers. Even if you could buy gluten free won ton wrappers in a ready-made package , it would still take time to fill, shape, and cook them.

The time it takes to make the wrappers, though, is what might scare you away from ever attempting this recipe, though. I don’t have a solution, but I have a coping technique: make the wrappers days ahead of time.

You can make the gluten free won ton wrappers according to the recipe instructions, pile them up, wrap them very tightly and place them in the refrigerator. They will keep that way for at least a week.

For longer storage, you can freeze them. They may become a bit icy, since they are a tiny bit moist to the touch when fresh.

But if you wrap them very tightly, you can keep them there for a couple months. Before working with them, defrost them overnight in the refrigerator, and allow them to come to cool room temperature before using them in a recipe.

Make The Gf Potstickers Ahead

If you’d like to make the potstickers themselves ahead of time, I support your good decision-making! Just form them completely and freeze in a single layer on a baking sheet.

Once they’ve frozen solid, pile them into a tightly sealed bag. Defrost in the refrigerator before cooking, and proceed with the recipe as written. You’ll be so happy you did!

You can also freeze the finished potstickers too cook them later – here are all of Lisa’s tips on freezing potstickers. If you don’t plan on cooking your gluten-free potstickers immediately, freeze them, even if just for a couple of hours!

When I go through the effort of making homemade dumplings, I always double the recipe and store more than half in the freezer. To freeze the pleated uncooked potstickers, make sure none of the dumplings are touching one another on a baking sheet and place the baking sheet uncovered in the freezer for at least an hour. Once the dumplings feel firm, you can transfer the dumplings to a freezer-safe storage bag, using a metal spatula to lift them from the pan if needed.

Cook frozen dumplings straight out of the freezer without defrosting, adding 1-2 minutes to the fry and cook time.

I mentioned this above, but if they crack a tiny bit while freezing, don’t worry! The steam from cooking will seal the cracks back up.

How To Freeze Or Refrigerate Gluten

You can store your gluten-free dumpling wrappers in the fridge or freezer to pleat into potstickers or gyoza later. To store them for later, lightly dust each wrapper with tapioca starch before stacking them up.

Wrap the stack tightly in plastic wrap and store in a freezer-safe bag or airtight container. Lisa warns that you must wrap the stack in plastic wrap before putting in a bag or container or condensation will form and your wrappers will stick. Trust her.

Refrigerate for up to 2 days or freeze for up to a month. When you’re ready to use the dumpling wrappers, you must defrost and bring them to room temperature before folding or pleating them or they’ll crack. To speed up this process, I placed 4 to 6 wrappers on the surface to warm up for a couple minutes, replacing one each time I used one.

It’s All About The Texture Of The Wrappers And Filling

Good potstickers or any dumplings, really, are all about the texture. The filling should be pleasantly savory, but you can get that in a meatball. The potsticker’s claim to fame is the crisp-tender texture of the wrapper.

You can make a tender won ton wrapper by boiling it or sautéeing it. But the way to get it to be crisp and tender is by starting with the sauté, and following it with steaming. And it can all be done in the same skillet.

It’s best to use a cast iron skillet since it gets so hot and retains that heat without a very high flame. But any heavy-bottom sauté pan with a tight-fitting lid will work.

Ingredients You’ll Need For Yummy Air Fryer Dumplings

To make dumplings in the air fryer, you’ll need some frozen vegetable potstickers and some avocado oil spray or olive oil spray.

Just be sure to use a non-aerosol, propellant-free oil spray to avoid damaging your air fryer’s non-stick finish.

You can also use a spritzer bottle and fill it with your own oil if you prefer.

Can You Make Gluten Free Egg Free Potstickers

The eggs are the absolute most difficult thing to replace in the recipe for gluten free won ton wrappers. You can change up the filling any which way, and even use water in place of the egg wash to seal the potstickers.

But replacing the eggs in the won ton wrapper recipe is not something I know how to do. The recipe is so incredibly simple, composed of little more than gluten free flour, eggs, and water.

The eggs provide structure and bind the ingredients together. You may be able to replace the eggs with a combination cornstarch slurry and additional xanthan gum, but it would require some serious experimentation. I’m working on it!

Can You Make Gluten Free Potstickers Without Meat

Yes! If you’d like to make these with an alternate filling, there are plenty of options. You can replace the ground chicken or pork with a combination of the two, or a combination of chopped, raw shrimp and either ground chicken or pork.

You could also make the filling with crumbled tofu in place of the ground meat, but you’ll need an additional binder. Adding some beaten egg to the filling might work.

Both gluten free soy sauce and tamari are soybean-based. If you can’t have soy, try using Coconut Secret coconut aminos, which is soy free.

Coconut aminos sauce tends to be a bit sweeter, so it’s not a perfect substitute but it does provide that umami flavor we’re looking for. Bragg’s brand liquid aminos contains soy, so it’s a soy sauce alternative but not one that is soy-free.

How To Create That Crisp

Heat just a couple tablespoons of a neutral oil until rippling, which is just when you see ripples where the light hits the oil in the hot pan. Add the formed, raw potstickers to the hot pan in a single layer, and allow them to brown on the underside. It won’t take much more than a minute.

The next step is to add just enough water to the hot pan to steam the potstickers with the lid on, and then evaporate after removing the lid. Be sure to work quickly to avoid splattering oil that comes from adding water to hot oil.

During 5 or 6 minutes that the potstickers are in the pan with water, covered with the lid, the filling and the rest of the won ton wrapper will cook to perfection. Remove the lid, and restore any crispness that was lost during steaming.

How To Air Fry Frozen Potstickers

If your air fryer has a separate elevated crisping tray or plate, be sure to insert it.

Lightly grease the crisper plate or bottom of the air fryer basket with the avocado or olive oil spray.

Place the potstickers in a single layer in the air fryer.

Lightly spray the tops of the potstickers with the avocado or olive oil spray.

Air fry at 350° F for 5 minutes.

Then, carefully flip each dumpling using tongs.

Continue to air fry for another 4-7 minutes.

Serve as desired.

Even if you avoid the obvious wheat-based foods, Chinese restaurants are challenging due to the soy sauce used in most dishes so that’s why I choose P F Changs or their sister company Pei Wai. How To Pleat Gluten

If you’re new to pleating potstickers, first read Lisa’s tutorial on pleating potstickers using the v-method and watch her .

The main difference for gluten-free potstickers comes in handling the dough. Treat the gluten-free dough very carefully and refrain from attempting to stretch the dough for each pleat. Instead, simply fold and press the dough for each pleat.

Before filling, you can wet the edge of the wrapper in one of two ways. You can dip the ¼-inch edge of the wrapper in the water about of the way around. Alternatively, wet your index finger in the water and run it along the edge of the upper half. If using the dipping method, your pleats and dumplings will seal easier, but you’ll need to work faster as the dough will soften and get more difficult to work with. If using the finger method, your dumplings may not seal as easily, but they’re easier to work with.

I found it was easiest to learn to pleat with the finger method first before doing the dip method. Once I got the process of pleating down, I exclusively switched to the dip method. Experiment and see what works best for you!

If you develop any very small cracks in your dumpling while pleating or freezing, dont fret! Once you cook the dumplings , the steam will seal the cracks up. For larger tears while pleating, you may want to remove the filling and start over with a new wrapper.
