First, its best to gobble it all up while its hot! That way you know its good.

If you plan to make it ahead, its best to keep the macaroni and the cheese sauce separate if you know youll be reheating it later.

Some types of gluten-free pasta get soggy or weird when mixed with sauce and then refrigerated.

If you know that your macaroni wont get soggy, then you can reheat this gluten-free mac and cheese just like any other mac and cheese.

I really dont recommend reheating gluten-free pasta, and neither does Barilla because it can go south pretty quickly. Gluten-free pasta when heated a second time has a reputation of turning tasteless and mushy, so keep that in mind.

Could I Use Cornstarch Instead Of Gluten Free Flour

You can thicken your pasta sauce with a cornstarch slurry if you dont want to use a flour blend. To do that, melt your butter, add the milk of your choice reserving about 1/2 cup to the side. Add a tablespoon and a half of cornstarch to the cold 1/2 cup milk, stir well, then add that to the milk in the skillet. Bring to a simmer to thicken, and then add your cheeses.

Pro tip: remember that if you simmer cornstarch too long it will lose its thickening power and go runny on you again. Once your sauce comes to a bubble, add the cheese.

I have been playing around with a few different gluten free macaroni cheese recipes in recent weeks but hadnt really found one that worked for me. Plus our oven broke recently so I needed to create my own version that could be grilled rather than baked.

The gluten free macaroni cheese recipe below is the result of my kitchen experiments and I am really pleased with it. You make the cheese sauce while the pasta cooks, then combine before popping under the grill for 10-15 minutes. Easy peasy!

Can I Make Gluten Free Mac And Cheese Ahead Of Time

Best Gluten Free Mac and Cheese

Each mac and cheese recipe Ive outlined is best served immediately. This means preparing it, mixing it, and chowing down.

However, if you do need to prepare it ahead of time, heres what I recommend: First, cook the pasta, let it cool, and then coat it with a light layer of olive oil. You dont have to refrigerate it if youre planning to eat it the same day.

Next, prepare a gluten free mac and cheese sauce from recipes 1 or 2, let it cool, and then store it in an airtight container. When youre ready to serve, reheat the cheese in a saucepan , add the cooked pasta, and combine.

What Pasta Makes The Best Gluten Free Mac And Cheese

Ive tested a ton and my favorite forever will be Barillas Gluten Free Elbow Macaroni. Any shape of pasta will really work here as long as its short and I find that Barillas blend of gluten free flours really eliminates that sticky, goopy brown-rice nastiness I just hate.

Barilla is available in just about every grocery store these days or you can get it on Amazon here.

Pro tip: If you plan to bake your mac and cheese in the oven, make sure to cook your pasta to just al dente or a little bit firm. If you over cook it youll have mush after its been baked.

Tips For The Best Gluten Free Mac And Cheese

  • Always salt your water before cooking your pasta and taste your white sauce for seasoning after adding the cheese. If it needs more salt, add it.
  • Choose cheeses with flavor. Sometimes when people tell me their mac and cheese was bland its because they chose plain cheeses with no flavor punch. We love sharp cheddar and swiss and it works great. Avoid subtle cheeses like mozzarella and colby jack on their own. You wont get much flavor from them. You can also check out this cheese list for ideas.
  • Always grate your own cheese to avoid the additives in bagged. When in doubt buy a block of cheese and grate your own. It will melt better and wont have any powdered anti-caking cellulose in it which could make your sauce lumpy or split.
  • When making your white sauce, keep the heat low, be patient and stir like the dickens. Once your butter and flour come together in the skillet , add the milk and turn the heat to medium low and stand there and stir . Dont go feed the dog or make a snack for the kids or your white sauce may get too hot and may split or look a little grainy. If that happens, dont worry. Just use it anyway. Your texture will be a little off, but the flavor will still be fine.

Pro tip: If you dont want to bake your mac and cheese, skip it or just stick it under the broiler for 4 or 5 minutes to brown the top. It will be ultra creamy!

Macaroni and Cheese ~ Gluten Free

Step 1: Cook your gluten free pasta in a large pot according to the package directions. Cook the pasta for one minute less than the package cook time.

Every brand of gluten free macaroni seems to have slightly different cooking times so make sure to use what the manufacturer recommends, minus one minute. Empty the cooked pasta into a colander to remove the hot water. rinse the pasta in cold water to stop the cooking process.

Step 2: Preheat the oven to 350º F. Add your cheese sauce ingredients including the cream cheese, cheddar cheese, heavy cream, butter, garlic powder, salt, and pepper to a medium saucepan.

For best results, use a pot that is non-stick because this cheese sauce can be tough to clean otherwise. Cook on medium-low heat, and whisk to blend. Stir the cheese mixture frequently to avoid burning.

Top Tips For This Gluten Free Mac And Cheese

  • Remember it takes about 10-12 minutes for the Instant Pot to reach pressure, so this entire dish takes about 20 minutes from start to finish.
  • You can replace the pepperjack cheese with sharp cheddar cheese if you want to mild version of this recipe.
  • As a garnish, you can replace the sharp cheddar cheese with grated parmesan cheese.
  • For a crispy crust, put the mac and cheese in an oven-safe dish and turn the oven on broil. Replace the garnish with about 1/2 to 1 cup of parmesan and sprinkle on top of the mac and cheese. Broil for 2-3 minutes or until the top is crispy.

To Rinse Or Not Rinse

Thats a good question. Normally, I would say no because it doesnt prevent the pasta from clumping, it makes it difficult for the sauce to stick to the noodles, and it cools down the pasta and cold gluten-free pasta isnt very tasty.

But because gluten-free pasta is a lot starchier than normal pasta, I rinse it. Very quickly less than 5 seconds. Then transfer immediately to the sauce.

Dairy Free Gluten Free Mac And Cheese

I have never tried to make this mac and cheese recipe myself dairy free. But I think its worth trying for 2 of the 3 methods.

Here are the substitutions I would try, dairy ingredient by dairy ingredient:

  • For the milk: unsweetened almond milk
  • For the shredded cheese: Violife brand or Miyokos Kitchen brand blocks, shredded
  • For the sliced cheese: Daiya sliced American-style cheese
  • For the butter: Miyokos Kitchen or Melt brand vegan butter

The dehydrated cheese, almost instant recipe cant be made dairy free. For the cheddar cheese powder in the third variety, I really like Hoosier Hill Farm brand

Lets dig into my gluten free pasta and cheese recipe options.

The first variety, pictured above, is the roux-based macaroni and cheese. It calls for a few more ingredients, but it makes a just-right balance of creamy and cheesy.

The second variety, called queso-style, is pulled from our recipe for gluten free cheese sauce. It makes a thick, rich sauce thats the easiest way to make the cheesiest sauce.

The third variety, called almost-instant, calls for cheddar cheese powder. Its a specialty ingredient that you probably dont already have, but it tastes like The Box and its the only type of gf mac and cheese that my non-gooey-cheese eating gluten free son loves.

What Can You Substitute For Milk In Mac And Cheese

If youre looking to substitute milk in a mac and cheese recipe, either from scratch or a boxed milk, you can use just about any dairy-free milk alternative thats available.

I prefer coconut, almond, oat, and cashew milks for most one to one substitutions for milk in recipes. All of these will provide a creamy texture and fairly neutral flavor. Cashew and oat milks have the most neutral flavors, in my opinion.

In order to make a dairy-free mac and cheese, you can make a dairy-free cheese sauce with dairy-free alternatives, like dairy-free cheese, dairy-free milk, and vegan butter.

Or you can get creative with other foods that when mixed together, create a similar flavor and texture of a cheese sauce but contains no dairy.

You can make gluten free mac and cheese sauce in a few simple steps. Most people have the ingredients on hand.

  • While your pasta is boiling, add the half and half to a small saucepan. Bring the half and half to a boil.

    Gluten-Free Mac and Cheese Fast, Easy and Delicious

    If you use my new favorite brand of gluten free macaroni, which you see in the image above, you can refrigerate the boiled pasta before adding it to the cheese sauce of your choice. The brand is Rummo, and their gluten free pasta is a cut above.

    Amazon does carry some Rummo brand gluten free pasta, but they dont often carry the elbow macaroni. Ive hunted it down, but from sources I consider too expensive for me to recommend in good conscience.

    I also regularly use Barilla gluten free elbow pasta , and theyre great, too. But Rummo actually cooks al dente and isnt hard even when its cold. Thats just a gluten free miracle.

    What Are The Best Cheeses To Use

    There is not a right or wrong one to use, as its based on preference. However, for a deeper flavor, you can use cheddar, sharp cheddar, gouda, jack cheese, pepper jack cheese, mozzarella, or Velveeta.

    Parmesan might be used for topping. Any combination used will work great in this recipe and will result in a rich and delicious dinner.

    We make a gluten free roux for the cheese sauce in this recipe. Classily a roux is made with all purpose flour and butter. For this recipe we have tested the two flours below. Both flours work to make a roux, but we do prefer the oat flour!

    • 1:1 gluten free flour
    • oat flour if you are going to use oat flour and have a serious gluten allergy, be sure you buy a brand that is certified gluten free.

    You can also make your own oat flour by blending oats in a food processor. Again, be sure your oats are certified gluten free.
