I have to admit. I never thought I would enjoy bread of any kind again after going gluten free 9 years ago. It just didnt seem possible. How could you have soft, yummy bread without wheat flour? When it came to baking the gluten free bread myself, I knew there would be a lot of trial and error.

Fast forward to now. Ive made many, many, MANY batches of gluten free breads, rolls, scones and biscuits. Some successful, some not so much . Either way, I figured out what works and what doesnt when it comes to making gluten free bread that actually tastes good.

Lets take these gluten free vegan drop biscuits for example. They bake up beautifully and are seriously so easy to make. They are also great for making on those busy weeknights. I served them with a corn chowder and some dairy free butter . My family gobbled them right up! We dont have bread with our meals often, so when we do, its a treat.

My mom has always made the best biscuits ever. Theyre flaky, theyve got a little bit of crunch to the bottom and they taste amazing.

No, theyre not southern biscuits. Were New Englanders so you wont find a southern biscuit here. But these do not disappoint.

However, when my mom went gluten-free a few years ago, she stopped making these biscuits. Basically, she was punishing us. Just kidding.

She really did stop making them, just not to punish us. Im just a tad bit dramaticThese days, shell occasionally make her regular version of them for us gluten-eaters and she uses a gluten free box mix to make biscuits for herself and my husband.

But, since Adam missed my moms regular biscuits so much, Ive started using her recipe to make them gluten-free.

Ingredients Needed For Homemade Vegan Gluten Free Biscuits

  • Gluten free flour blend: can also use all purpose flour or pastry flour if not gluten free
  • Non dairy milk: for moisture and to make the dairy free buttermilk
  • Coconut cream: this is the key ingredient that makes these biscuits super buttery & moist without any oil or butter
  • Baking powder: to help get these biscuits nice and tall
  • Lemon juice: can also use apple cider vinegar combined with the non dairy milk makes the perfect vegan buttermilk
  • Sugar: added just for a tad bit of sweetness
  • Salt: essential for savoury biscuits

And to give it more flavour, you can add in some nutritional yeast for some cheesy-ness or some dried herbs for herbed biscuits!

What Is A Drop Biscuit

A gluten-free drop biscuit is a biscuit made by dropping spoonfuls of dough onto a pan for baking. Drop biscuits are more rustic in shape, where as a classic biscuit is uniform in shape since the dough is generally rolled out and cut using a cookie cutter, biscuit cutter, etc.

Gluten-free drop biscuits are way less time consuming to prepare, making them a super quick and easy option on a busy night.

These did not fail me. Ive made the full fledged gluten-free cut out biscuits before and they are delicious but, lets face it, I am lazy. If we have not established this after 3 years I AM LAZY.

Can I Make These Easy Gluten Free Biscuits Dairy Free

Yes. We tried a few alternatives to cream and coconut cream yielded the best results. To make these easy gluten free biscuits dairy free as well, youll need to use a dairy free flour blend. This means you cant use Cup4Cup, so our recommendation is Better Batter. You can also use either King Arthur All Purpose Gluten Free Flour or Gluten Free Mamas Almond Flour Blend, but youll get the best results with Better Batter.

In summary, to make this recipe dairy free: Substitute the cream for 2/3 cup coconut cream. Youll need to plan ahead and put a can of coconut cream or coconut milk into your fridge the day before.

When youre ready to bake the biscuits, open the can and scrape the solid cream from the top. Warm slightly in a pan or the microwave just enough to liquefy it. Continue to make the recipe as written, using a gf flour that is also dairy free.

Tools & Ingredients For This Recipe

EASY OAT BISCUIT RECIPE | Gluten free, dairy free & egg free biscuits
  • Gluten-Free Flour: My favorite gluten-free & dairy-free flour blends to use are Pamelas Artisan Blend and Better Batter. Ive been using them both with great results. They are both a 1-1 substitute. If you use another gluten-free flour blend be sure that it contains xanthan gum. If not add 1/2 teaspoon xanthan gum per cup of flour.
  • Baking Pan This is the pan that I use for most of my baking. I have the set of two and they are by far my favorite brand of baking pans.
  • Parchment paper or silicone baking mats With gluten-free baking these will be your best friends. Most gluten-free doughs are much stickier than regular wheat-based doughs and these make sure they dont stick to your pan and makes clean-up a breeze.

How To Make Dairy

Gravy Ingredients

1/2 tube Tennessee Pride Breakfast Sausage*1/4-1/2 cup gluten-free flour blend of choice1 cup cashew milk salt to taste

*If you use a different brand that has more fat in it, youll need more flour and wind up making more gravy. So if youre making gluten-free biscuits and gravy for a crowd, it will be a good idea to use a greasier brand. For the two of us, I like Tennessee Pride.

Gravy making is a skill thats best learned from observation rather than directions, and the more you make the more knack you develop for getting it just right

Brown sausage in a medium skilletSprinkle gluten free flour over sausage just enough to soak up the grease. This will be between 1/4 and 1/2 cup for the particular brand of sausage I used. Below is a picture of what it should look like.

Notice how theres not so much flour that you see any white, but theres enough that theres no longer visible, shiny fat on the sausage or in the pan.

Pour 1/2 cup cashew milk over sausage mixture and stir. Pour remaining 1/2 cup cashew milk and observe consistency. If you like a thicker gravy, add less milk and if you like thinner add more. Note that the gravy will thicken slightly as it cools.

Salt to taste. Since youre using nut milk, you might want to salt it more than usual to bring out the savory and mask the slightly sweet taste. Hubs is good with it either way.

How To Make Drop Biscuits That Are Still Light

We still need lightness in our biscuits, but were not going to get it from layers of flour alternating with layers of cold butter that puff and expand in the heat of the oven. So we have to get it another way.

With drop biscuits, we go with smaller pieces of butter, just the right ingredients , a wetter dough, and a light, light touch. In fact, more often than not these days, I grate the butter on a standard cheese grater. So easy!

Theres very little actual hand-on-ingredients action going on here. Keep those ingredients cold!

Why Are My Biscuits Dry

  • Incorrect Measurements of Flour or Liquid: When making the dough, use precise measurements of flour. If the measurements are off and you have too much flour, it will yield dry biscuits. Additionally, ensure that you use enough buttermilk.
  • Overworking Dough: In order to prevent tough and dry biscuits, do not overwork the dough.
  • Over-baking: After 15 minutes in the oven, watch the biscuits in order to prevent them from over-baking and drying out. Remove once the tops are golden brown. They will continue to cook as they cool down so let them sit for a few minutes before eating.

Others may claim to be the best, but these are THE BEST. The texture is perfect and the taste is divine. You could serve these up to gluten-eaters and theyd never know the difference. Best of all, these gluten-free dairy-free biscuits couldnt be easier!

I was not given payment or samples by any particular brand to create this recipe, but Im going to tell you exactly what brands I used anyway just because gluten-free cooking can be so persnickety and I want you to enjoy the awesomeness of the best gluten-free drop biscuits in existence.

Recipe Step By Step Directions:

Step 1: Add your dry ingredients to a bowl and whisk the ingredients to blend them. Add the 5 TBSP of cold butter.

Use a pastry blender to cut in the butter into the flour. Many wonder if they can use a food processor to cut the butter in. I find a food processor overmixes the butter in and you lose some of the flaky layers.

Step 2: Your flour mix will look like it has crumbs like this photo.

Step 3: Add the milk and mix.

Step 4: Your dough should look similar in consistency to this.

Step 5: Put the dough on wax paper. You may want to dust it with a tiny bit of gluten free flour. It depends on which gluten free flour blend you use. Press to 1 ½ inch thickness. Use a biscuit cutter to cut out biscuit shapes from the dough. If you prefer, you can use a large ice cream scoop or cookie scoop to make drop-style biscuits.

Step 6: Brush the top of each biscuit with milk. This will help your biscuits get that nice golden color on top.

Step 7: Bake at 425º F for 15 minutes.

Step 8: Here are the test batches. I baked one at a time so each cooled on the wire rack then was transferred to another tray while the next set cooled.

  • 1 cup brown rice flour
  • 3/4 cup millet flour
  • 1/2 cup arrowroot flour/starch
  • 1 tsp xanthan gum

  • 1 cup carrots, chopped
  • 2 cloves of garlic, minced
  • 1/3 cup gluten free all-purpose flour

How To Make Homemade Gluten

  • Prepare your ingredients. Slice the butter into cubes then place it in the fridge to chill before using it. If you are making your own buttermilk, do so first and place the mixture in the fridge to chill and curdle.
  • Whisk the dry ingredients together. Be sure to measure the flour accurately for the best results. When measuring the flour, do not stick your measuring cup into the flour. Instead, use a spoon to scoop out the flour and transfer it to your measuring cup until you have the necessary amount. This helps to reduce any inconsistencies when making the biscuits.
  • Add the cold butter cubes into the flour mixture using a pastry blender or fork. Mix until the butter is broken down and is the size of small peas.
  • Then slowly add the chilled buttermilk and mix until a dough is formed.
  • Using lightly floured hands, place the dough onto a lightly floured surface and pat the dough to ¾ thick. Chill the dough in the freezer for 10 minutes.
  • Using a lightly floured measuring cup, scoop out the dough and form it into biscuits. Place the shaped biscuits on a parchment-lined baking sheet. You should be able to make 10-12 biscuits.
  • Transfer the biscuits to the freezer and chill for 10 minutes before baking.
  • Brush the tops with melted butter .
  • Bake the biscuits in a preheated oven at 400°F for 15-18 minutes.
  • When done baking, let the biscuits cool for 5 minutes on the baking sheet. Finally, serve with your favorite dish and enjoy!
