How To Make Witch Finger Cookies

Almond Flour Cookies | gluten-free chocolate chip cookies!

Whisk together all the dry ingredients in a large bowl.

In a separate medium bowl, whisk together the wet ingredients.

Pour the wet mixture into the flour mixture and stir until you have a well-mixed dough.

Chill the dough for 1 hour in the fridge.

Preheat your oven to 375 F. and line cookie sheets with parchment paper. I used a quarter-sized baking sheet here, but a standard half-size works well too. My pans are pretty thick, so if your pans are on the thinner side, you may not need to bake these as long. Keep an eye on them.

Roll walnut size pieces of dough into long sausages and lay them on the cookie sheets. Give them some room because they spread. And make sure they arent too thick or youll end up with monster fingers instead.

Press a sliced almond into one end of each cookie to create the fingernails. The nail doesnt have to be perfect, it can be slightly chipped. It just looks spookier that way!

Using a sharp knife, cut shallow cuts into each cookie to create the knuckles.

Bake for 20 minutes, or until they are golden brown.

To Be Honest This Concerned Me Because I Immediately Thought That The Texture Was Going To Be Too Crispy And Too Hard

After all, if they had just gone from my grocery cart to my kitchen counter and shattered like fine china, how would they hold up when I crunched them in my mouth?

I found one of the fourteen cookies that wasn’t broken and grabbed it from the sleeve.

While the Ginger Zingers smells good like a regular cookie there’s not much of a zingy ginger scent.

To my surprise, there were little chunks of candied ginger in the cookie. The rest of the cookie was extremely crunchy, but unfortunately, it didn’t taste anything like ginger.

Is it still delicious? Yes. Would I call it a Ginger Zinger? Probably not.

How Do I Know If Theres Gluten In Cookies

The easiest way to find out if there is gluten in the cookies youre looking at while perusing the snack aisle at the store is to flip the package over and look at the ingredients list. Look for the terms flour,enriched flour, or wheat flour.

Just about any cookie that has the term flour without any more descriptors in front of it will contain gluten. Enriched flour is made from wheat and therefore contains gluten. Wheat flour comes from wheat and therefore contains gluten.

The only times youll see the term flour on an ingredient list and its safe for a gluten-free diet is when the type of flour comes from a gluten-free grain. For example, rice flour is made from rice, so it is gluten-free.

Other examples are corn flour, sorghum flour, millet flour, potato flour, cassava flour, or chickpea flour. If you know a grain is gluten-free, then the flour that comes from that grain is probably also gluten-free .

Other starches may also be used, like tapioca or potato starch. These are similar to flours, but are also used in gluten-free snack foods like cookies, because they have a light texture and hold up well in gluten-free baking.

The second easiest way to know if the cookies youre looking at in the store are gluten-free is to look for a gluten-free label on the package.

A gluten-free label will tell you that the product contains less than 20ppm of gluten and that the manufacturer has tested this product to confirm this to be true.

    Tips For Making Homemade Gluten

    These gluten-free Oreos are incredibly easy to make.

    Roll the dough out and use a cutter to cut out the wafers just like you would for sugar cookies. Cut the cookies as close together, re-roll and cut out more. The goal is to cut most of the cookies out on the first and second roll.

    You can certainly roll the dough out a third or fourth time, but the cookies will get ever so slightly more dense.

    As soon as the cookies come out of the oven, use the bottom of a glass to press each cookie down ever so slightly on the baking sheet. This will smooth out the tops and help hold the cookies together so they wont crumble as easily.

    Let the cookies cool on the baking sheet for at least five minutes before transferring to a wire rack. That little extra cool on the baking sheet will help the cookies firm up so they wont fall apart when you try to move them.

    After piping the frosting, pop the finished homemade Oreos in the fridge for 10 minutes to let the filling firm up before devouring. These homemade gluten-free Oreos will keep in the fridge for a week or on the counter for 2-3 days. You can eat them right out of the fridge, but I recommend bringing them to room temperature before serving.

    Yes, and no. Most packaged Nabisco Oreos are not gluten free.

    But theres the one package of gluten free Oreos, made by Nabisco. Theyre even the cookies we used to make our recipe for gluten free fried Oreos.

    That recipe for fried Oreos was really my way of celebrating the fact that Nabisco finally started selling a certified gluten free variety of their famous chocolate sandwich cookies.

The texture isnt perfect theyre thick and sturdy , but Ive been happily purchasing them as they were the only easy-to-find substitute for OREO-like cookies on gluten-free shelves. Theyre easy to find, pretty affordable, and I think taste the most like OREO sandwich cookies apart from actual OREOs.     Sturdy But Delicate Gluten

    Once set, these gluten-free chocolate wafer cookies are crisp and sturdy enough to hold a filling without crumbling, but delicate snd airy enough that theyll snap without filling squeezing out the sides. The texture is similar to that of a graham cracker, only softening a bit after a couple of days sitting with buttercream sandwiched between.

    Gluten Free Heavenly Oreo Dessert Recipe Notes

    A food processor makes quick work out of making cookie crumbs. Other methods, such as placing the cookies in a zip top bag and crushing them with a rolling pin works as well.

    Mixing the cream cheese and pudding together before slowly mixing in the milk keeps the mixture from splattering too much.

    Folding in the whipped topping by hand keeps the dessert light and airy.

    Sprinkling the cookie crumbs by hand allows for even coverage on top of the dessert.

    Swap out the vanilla pudding for chocolate for a different taste and recipe.

    Last I Tried Tate’s Bake Shop Gluten

    I’m a big fan of anything made with ginger, whether it’s straight gingerbread, ginger ale, or savory dishes with a ginger component. I think it’s a wildly underrated ingredient and it should be used in recipes more often!

    The Ginger Zingers come in a cute, old-timey lunch sack-type bag, and the packaging is simple and classic. Definite A+ on branding.

    However, I was disappointed to see that many of the cookies were broken when I pulled the plastic sleeve out of the bag.

    Similar to gluten, youll know if the package of cookies youre looking at at the grocery store contains dairy is to review ingredients lists. Look for obvious and less obvious names of dairy, like:

    Finally, some cookie packages have the terms dairy-free or non-dairy or free from dairy on the front. Though these terms are not regulated by the FDA, those that do include them are trying to be helpful to consumers.

    But dont take them at face value, review ingredients lists in addition to seeing this label to double check before buying.
