This gluten free cookie dough ice cream recipe is more than just a lovely warm weather treat. Made easily without an ice cream maker, it actually keeps my gluten free son safe. Let me explain

I took my gluten free son out for ice cream, and he came home mad. At first, I was appalled at his post-Millennial entitlement. And then I got it.

Sure, the basic ice cream flavors are gluten free. Chocolate, vanilla, strawberry. *yawn* But heaven help you if you’d like something more exciting. Like perhaps cookie dough ice cream.

For this gluten free, no churn ice cream I started with chopped up Goodie Girls Chocolate Creme Cookies. These cookies taste just like I remember Oreos tasting, but of course, they are gluten free and are also made in a peanut free facility. You can buy them in boxes or snack packs.

I love the snack packs! For this recipe, you will need 2 snack packs or 16 cookies.

You take all these crushed up cookies and add them to your no churn ice cream mixture. The no churn mixture is made up of whipped heavy cream and condensed milk.

Once the gluten free no churn cookies and cream ice cream is all mixed together it goes into the freezer for a few hours or overnight. So simple.

Theres A Couple Important Tips And Tricks For Making Ice Cream

First, youll want to chill the base for your ice cream. We like to make the ice cream base before we go to bed and let it chill overnight .

Second, youll want to move quickly and keep everything as cold as possible. When your ice cream is done churning, move it into a container and into your freezer fast. I even like to freeze the container Ill store it in, prior to filling it. That way nothing is causing the ice cream to melt and refreeze .

After your ice cream is done churning it will have a mixed consistency, likely. The edges closest to the cold bowl will be practically hard ice cream. But, the center will be more like soft serve. Youll still need to freeze your ice cream for several hours to get it to be perfectly scoopable.

In other words, dont plan on trying to make homemade ice cream a couple hours before a party or dinner. Its a bit of a step by step process. But, the process itself is fairly easy.

Is Ice Cream Gluten

Im starting a new series of posts where I answer some common questions that dont really fit anywhere else, and Im starting with the sometimes desperate question , Is ice cream gluten-free? This is a little tricky to answer because the general, base answer is yes, but in most specific situations the answer is no.

The basic ingredients of ice cream are gluten-free: milk, cream, and sugar, with eggs or a gum added in some cases. If it is a simple, natural ice cream, flavorings like natural vanilla bean and chocolate are also gluten-free.

But unfortunately, ice cream ingredients are rarely this simple and natural anymore, and even natural ice creams may contain ingredients with gluten in them, the most obvious that comes to mind is chocolate chip cookie dough.

So the answer is: it varies.

To stay safe, only try ice cream specifically labeled gluten-free. Dont assume anything as many ice cream brands are loaded with unnecessary ingredients, many of which may contain gluten in a manner not specified on the label.

In addition, try to stay with simple flavors. Fancy combination flavors like Super Kitty Litter Krunch are more likely to incorporate a hidden source of gluten or to suffer from cross-contamination during its manufacturing and packaging.

Homemade Cookie Dough Ice Cream

This no-churn cookie dough ice cream is one of my favorite indulgent treats. It’s sweet, creamy, and packed with chunks of edible cookie dough.

It’s no secret that I looove making no-churn ice cream. Regular readers have heard me rave on and on about how this is pretty much the perfect Summer dessert. It’s foolproof, only calls for a handful of ingredients, and you can have so much fun with it!

And by that I mean, come up with endless variations to test out and play with. In this particular instance, I decided to go with cookie dough, simply because it’s one of my all-time favorite ice cream flavors.

I’m the type of person who will always, always “taste test” the cookie dough before it goes into the oven. It’s just inevitable! That’s kind of the best part of baking cookies, in my opinion.

So whipping up a little batch of chocolate chip cookie dough, which is safe to consume, and then mixing it up in some super creamy no-churn ice cream? That’s just a no-brainer.

Instructions: Cookie Dough Nice Cream

So Delicious Dairy Free Gluten Free Coconut Milk Cookie Dough Frozen ...

Step 1:Prepare the Bananas. Peel the ripe bananas, then slice them into even chunks. Place them on a baking sheet lined with parchment paper, and freeze for 2 hours. Note: If you already have frozen bananas ready to use in your freezer, prepare the cookie dough bites first because they need time to freeze.

Step 2:Prepare the Cookie Dough Bites. In a small bowl combine the almond flour, almond butter, and mini chocolate chips. Fold together until the almond flour is completely combined.

Step 3: Scoop the cookie dough into bite-size pieces. Using a ½ teaspoon, scoop the cookie dough into bite-sized pieces. Place in a small baking dish lined with parchment paper. Freeze for 2 hours.

Step 4: Blend the bananas. After two hours have passed, using a food processor or high-speed blender, add the banana chunks, and almond milk. Process until the bananas have a smooth soft-serve consistency.

Step 5: Combine the bites with nice cream. Transfer the nice cream to a bowl medium-size bowl, or 9-inch loaf pan. Remove the cookie dough bites from the freezer. Gently fold them into the nice cream. Optional: Sprinkle with additional mini chocolate chips. Freeze for an additional 30 minutes for a firmer consistency, or enjoy right away for a soft-serve consistency.

Is Tillamook Ice Cream Gluten Free

Im on the fence about Tillamook ice cream because, while many flavors do not contain any gluten ingredients, theyre produced using the same equipment. Tillamook says that they consider allergens when creating production schedules and equipment is thoroughly sanitized and swab-tested for allergen remnants.

All Tillamook Ice Cream flavors contain milk, and most contain pasteurized egg yolks as well. Some also contain other major allergens like wheat, tree nuts, peanuts, and soy. Please note that all of our ice cream flavors are produced with the same equipment. Production schedules are carefully prepared by considering allergens and their potential risks. Tips For Making The Best Homemade Cookie Dough Ice Cream

  • As I mentioned, when it comes to making the edible cookie dough, we’ll be heat treating our flour. I talked a little bit about the process in my cookie dough truffles post. I just microwave the flour until it reaches 165ºF. This particular recipe doesn’t call for much flour at all, so it should warm up fairly quickly. I would recommend stopping to stir and check the temperature around the 30 second mark.
  • Make sure your heavy whipping cream is COLD. Like, straight out of the refrigerator. If you can, I’d also recommend storing the bowl of your mixer in the refrigerator too before using it.
  • While it may feel like your whipped cream is taking a while, it’s important to keep a close eye on it. You’ll know it’s ready when you lift the whisk attachment up out of the cream and see stiff peaks that don’t sink into the cream.

What To Watch For When Buying Gluten

When buying GF ice cream, youll want to avoid anything with cookies , brownies, or cone pieces unless the product is from one of the certified gluten-free ice cream brands.

Many sauces may be thickened with wheat flour, which contains gluten.

Additionally, malted products are made of malted barley and wheat flour, which are not safe for celiacs or those with non-celiac gluten sensitivity. Avoid malt in any form, even if the label lists malt powder.

Remember, the allergen information on the label does not always contain enough data to keep you safe if you have to avoid gluten. Thats because manufacturers only have to list the top eight allergens, which doesnt include gluten . Barley malt extract, for example, contains no wheat ingredients, so wheat wouldnt be listed on the allergen label of a product containing malt but no wheat. The absence of wheat does not necessarily make the product safe.

Additionally, look for phrases like, Manufactured in a facility that processes wheat, because you could get sick from cross contamination, depending on how sensitive you are.

Start by freezing the ice cream for 30-45 minutes, stirring after 30 minutes to ensure that it does not become icy.

Then stir in the cookie dough balls and chocolate chips. Waiting to add in the cookie dough ensures that they dont sink to the bottom of the ice cream. Stir the ice cream again after an hour, then allow the ice cream to chill for 2-3 hours or until set.
