Notes On Ingredients And Substitutions For These Gluten

  • Non-dairy milk. Since I wanted these to be nut-free in addition to dairy-free, I opted to avoid nut milks and used Original Flax Milk. If you are baking for those that can nuts and prefer nut milks, use your favorite. If youre using a vanilla flavored milk, then use half the vanilla extract called for in the recipe. If you can have dairy, you can use regular milk in this recipe.
  • Pure vanilla Extract: As always, I recommend you buy and use pure vanilla extract. Its free of funky additives, and gives the best flavor.
  • Gluten-free Flour: I used gfJules flour blend in this. Because it has xanthan gum already in it, no additional gum was needed. If your flour blend has xanthan gum or guar gum already in it, omit the xanthan gum called for in the recipe. Many flour blends have almond flour or dairy in them, so be sure to read labels thoroughly if baking for others with allergies.
  • Non-dairy butter alternative: I used Earth Balance buttery sticks both times I tested this. I used them in both the cake and the icing and it worked very well.
  • Eggs: Use large fresh eggs. Did you know that using extra large eggs in a recipe, especially one like this with 4 eggs, can affect the results? I dont recommend that!
  • Chocolate chips: I felt these mini cakes needed mini chips instead of full-sized chips. I used Enjoy Life semi-sweet chocolate mini chips which were perfect. If you want to go darker, you can use the Enjoy Life dark chocolate morsels in this!

Preheat oven to 350°F and spray a 10-cup bundt pan generously with nonstick spray. Whisk together flour, baking powder, baking soda, salt, cinnamon, allspice, cardamom, cloves, ginger, and nutmeg in a medium bowl. Beat butter and sugars in a large mixer bowl on medium speed until creamy. Reduce speed to low and add eggs one at a time.

Preheat the oven to 350 degrees. Grease and flour four mini bundt pans and place on a rimmed baking sheet. Place the dry ingredients in a bowl and whisk together. Add the Libby’s 100% Pure Pumpkin, organic canola oil, vanilla extract, apple cider vinegar, and water. Mix well with a spoon until smooth and combined.

Beat in pumpkin mix well. Gradually add baking mix until combined. Pour into a greased and floured 10-in. fluted tube pan. Bake at 350° for 55-60 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to wire rack. Combine glaze ingredients drizzle over cooled cake.

Make the Cake. Preheat oven to 350F. Line an 8×8-inch pan with aluminum foil and spray with cooking spray set aside. To a large bowl, add the eggs, sugar, pumpkin, oil, pumpkin pie spice, vanilla, and whisk to combine. Add the flour, baking powder, baking soda, salt, and stir until just combined, dont overmix.

How To Make A Gluten

  • Add sugar, flour, cocoa, baking soda, baking powder, and salt to a large mixing bowl.
  • Mix until combined and no lumps of cocoa remain.
  • Add the eggs, sour cream, oil and vanilla.
  • Beat on medium speed for 1-2 minutes. Add hot water and stir until combined. If desired, stir in chocolate chips.
  • Poor into a non-stick bundt cake pan. Tap sides to help it settle.
  • Bake as directed. Allow to cool for 10 minutes in the pan, then loosen the sides of the cake with a rubber spatula. Invert the cake on a cooling rack and allow it to settle onto the cooling rack. You can frost this gluten-free chocolate bundt cake, drizzle it with melted chocolate, or enjoy it as-is.

    UPDATE: After becoming sick after eating some of my sons gluten free Nothing Bundt Cake, I can no longer recommend that these are safe. Sad to say as they are delicious, but there was obviously some kind of cross contamination problem and I wont be having them again. If you have a minor allergy, they might be ok, but if you have Celiac, Id avoid it.

    For my recent birthday, we celebrated in style with Nothing Bundt Cakes gluten free mini cakes. This place was a favorite of mine pre celiac. Its been off limits until I learned this past fall that they have ONE gluten free flavor .

    The location near me is now offering a gluten free chocolate chip bundt cake. Its not my first choice if I had the ability to pick from all of their flavors, but that doesnt make it any less delicious. Their cake is moist and fluffy. The frosting is melt in your mouth cream cheese frosting yumminess thats just the right amount of sweet.

    A HUGE thank you to Nothing Bundt Cakes for making my birthday especially delicious this year. If you have one of these near you, I highly recommend checking them out. The non limited people in your family will love their many other amazing flavors.

    And thanks to my hubby and kids for continuing the trend of random ages. I love that Im getting younger each year. Lol.

    Leave butter for your full-size cakes, bundts, and pound cakes I am not big on all the spices, so I kept it simple: 1 tsp. of cinnamon and 1/2 tsp. of pumpkin pie spice, that’s it!
