They brought back plastic bags full of corn chips, strangely orange-colored dips in a cans, neon peanut M& Ms, andif memory serves mebeer

My focus at that moment was primarily on the tiny human that I was now supposed to keep alive, but the Super Bowl sideshow did offer a moment of normalcy in an otherwise upside down moment in my life.

In the birthdays since then we have always celebrated Elles birthday on Super Bowl Sunday, andup until this yearhave limited the party guest list to immediate family.

The menu has expanded beyond grocery store artificially-flavored and -colored foods, with the exception of those peanut M& Ms, which my family inexplicably requires for Super Bowl viewing.

This year, however, Elle requested a real birthday party with friends outside of our family circle.

She had a very specific plan in mind: a My Little Pony/unicorn/butterfly themed party including making and decorating individual pizzas, a butterfly piñata, and decorating homemade double chocolate chip cupcakes.

The girl does not mess around.

Together we planned the menu, sent the invites, and picked out her outfit, including her favorite birthday gift .

We decorated the house, prepared the pizza crust, and baked the cupcakes.

And then she waited for guests to arrive.

While she waited, I prepared the 7-Layer Dip, an essential part of any party as far as Im concerned.

As birthdays and dips go, Id call both a success.

How To Make Mediterranean Vegan Dip

  • Slice the eggplant into 1 inch rounds and place on a parchment paper lined baking sheet.
  • Bake in the oven at 425F for 20 minutes. Take the eggplant out of the oven, quickly turn the eggplant slices over on the baking sheet and bake 5-10 more minutes. After baking, allow the eggplant to cool on the counter for 10 or more minutes, until it is cool enough to touch.
  • After cooling, use your fingers and pull the skin away from the eggplant .
  • Add the skinless cooked eggplant to the food processor with the tahini, lemon juice, fresh parsley, garlic powder, cumin and salt.
  • Process on high until smooth.
  • Store in the fridge for up to 5 days!

    As you can see on the packet, the brand is Kroger. Kroger goes by many names, depending on where you live. For example, I found it at my local Fred Meyers

    Ive also had readers tell me that theyve found it at: Smiths, Food for Less and Frys. Let me know if you find it anywhere else! Ive even had a reader, who lives in a different state as her mom, mail her some packets. When you have dietary restrictions, you get creative!

    Make sure you get the one that looks exactly like my picture, as their ranch dressing packet will have milk in it.

    Note that this packet doesnt call out anywhere on it that its dairy free, in case youre looking for that, its only until you turn it over and notice the wonderfully simple list of ingredients that it is.

    How To Make Dairy Free French Onion Dip

    So, lets talk about how this dreamy dip goes down.

    Caramelize the onions. First up, well cook some diced onions over low heat for about 40 minutes until deeply, gorgeously, caramel brown in color.

    Blend up the base. Next, well add cashews, water, lemon juice, spices and worcestershire to a high speed blender and process until perfectly smooth and creamy.

    Mix em together. Well combine the creamy base with the caramelized onions and then transfer to a container.

    Chill for several hours. Finally, well pop the dip in the fridge to chill until it thickens slightly and the flavors have had time to meld.

    Dairy Free Sour Cream Options

    There are several brands of dairy free sour cream, but the only one Ive tried so far is the Follow Your Heart dairy free sour cream. If you cant find any locally, you can try making some of your own.

    Whichever brand or recipe you choose, its best to have one thats thick for this tzatziki recipe, or it can get a little runny when you add cucumbers, even after theyve been squeezed dry.

    How To Peel The Eggplant

    Easy Gluten Free Crab Dip

    The skin should off of the cooked eggplant rounds easily just using your fingers. The cooler the eggplant, the easier this will be.

    This step can be a little time consuming so if you dont want to bother with removing the skin after cooking, you can peel the eggplant first before slicing it into rounds.

    How To Make Dairy

    Mix two cans of refried beans with diced green chiles and taco seasonings. Spread evenly into a 9×13-inch casserole pan.

    To make the guacamole layer peel four small avocados and smash with a fork or use a pastry cutter or potato masher. Mix in about 1/4 cup of salsa into the mashed avocados. Then spread this over the refried beans.

    Next layer the dairy-free sour cream, the remaining salsa, and the shredded lettuce over the guacamole.

    Next cover the layer of lettuce with shredded dairy-free cheese, then slices of green onions, and diced tomatoes.

    Can be served immediately or cover with plastic wrap and refrigerated until ready to serve. Can be made up to a day in advance and will stay fresh for 2-4 days refrigerated.

    What Are The Ingredients In The Vegan Ranch Packet

    Here are the ingredients listed on the label of a Kroger Ranch Dip Mix:

    • Maltodextrin, salt, onion*, Monosodium glutamate, Garlic*, Parsley*, Contains less than 2% of Calcium Stearate , Dextrose, Spices, Carrageenan
    • *Dehydrated

    If youre worried about calcium stearate being a dairy or animal ingredient, I called the phone number on the back of the label and the representative that I talked to said on Dec 30, 2020 said their calcium stearate source is vegetable based. If you need stricter vegan requirements than listed above, youll need to contact the manufacturer.

    How To Make Dairy Free Tzatziki

    To shred/grate the cucumber, I used an extra coarse microplane to get smaller shreds than a regular grater but bigger than a regular microplane. But if you only have a regular grater, you can try that out too and it should be fine, the cucumber pieces will just be a bit bigger.

    Once your cucumber is grated, youll need to strain the shredded/grated cucumber by either pressing it in a small sieve, or putting it in 1-2 layers of cheesecloth and squeezing the water out.

    You dont have to worry about trying to get every last bit of water out since the dairy free sour cream is thick, but make sure that youre getting most of it out so your tzatziki isnt runny.

    I used an English cucumber to make sure that my tzatziki isnt bitter since I leave the peel on. Sometimes regular cucumbers can be bitter, but the hothouse/English cucumbers are usually not bitter at all and the seeds are smaller so they are perfect for this recipe.

    Youll notice that there is no dill in this recipe like most tzatziki recipes have. My husband doesnt like dill that much, so we made this recipe without dill.

    But if you want dill, you can add a little bit of fresh or dried dill to this recipe. We loved this tzatziki without dill, so you dont have to add dill if you dont want to. You get to choose!
