Fresh deli meat still has sodium because its used for preservation, so look for options that say low-sodium to help cut down on the salt. Lets Talk About Cheese

Most cheese is gluten-free because the basic ingredients are milk, bacterial cultures, and rennet, the enzymes that separate milk solids from the water in milk to create curds. All of these components of cheese are naturally gluten-free.

Not all cheeses are created equal. Some go through processes where gluten could be present. For example, blue cheeses, such as Roquefort and Gorgonzola, are made with cultures from the mold Penicillium. This cheese-making process creates the characteristic blue mold streaks or spots on blue cheeses.

If the Penicillium cultures are grown on wheat or barley, they could contain gluten. The actual levels of gluten present in the final cheese product are probably low, but the safest bet is to find blue cheese that is certified or labeled gluten-free. In September 2020, GIG had testing performed on penicillium cultures at a research lab in Australia, and the findings showed the cultures contained gluten levels greater than 20 ppm.

Watch out for cheese with flavorings or additional ingredients. Any time ingredients are added to a food product, the risk of gluten being present increases. Some hard cheeses are soaked in beer, for example, depositing gluten on them and making them unsafe for a gluten-free diet. Processed cheese, such as American cheese, and cheeses that are low-salt, low-fat, or fat-free may also contain gluten.

Packaged Counter And Vegetarian Options

Plain turkey, chicken, roast beef, and ham do not contain gluten, but deli meat you buy pre-packaged or at the deli counter can contain gluten. Most brands and flavors of deli meat or cold cuts at the supermarket contain ingredients beyond meat, which means gluten ingredients and gluten cross-contamination can sneak in.

If you’re following the gluten-free diet, you’ll need to choose deli meat that’s labeled “gluten-free.” There are several brands where all of the lunch meat options are gluten-free.

Cold Cuts And Heart Health

Recipe to Try: Whole-Wheat Veggie Wrap

Eating high amounts of processed meats increases risk of heart disease, cancer and diabetes. This is related to many factors, but one culprit is sodium. Sodium is about 400 percent higher, on average, in processed meats than unprocessed meats.“Too much sodium stiffens our blood vessels and stresses our heart and kidneys,” says Sam Teece, M.P.H., R.D., a chef and dietitian at Sam Teece Nutrition Consulting.

The American Heart Association recommends eating no more than 2,300 mg of sodium per day , but we’re taking in much more. Kids in the U.S. eat an average of 3,279 mg of sodium per day, and adults average more than 3,400 mg/day. With cold cuts, the sodium adds up quickly given that just one ounce of deli turkey can have more than 500 mg of sodium. Add 150 mg from a slice of cheese and 140 mg in each slice of bread, and a sandwich may be close to 1,000 mg of sodium, not including any extra condiments like mustard or mayo.

Some cold cuts are also high in saturated fat, which is also linked to an increased risk of cardiovascular disease. But, recent research that found adverse health effects from processed meats pointed more to compounds in the meat like heme iron, L-carnitine or even sodium, than the saturated fat content. Regardless, if you’re trying to keep your heart healthy, consider other sandwich options-like tuna, salmon or even hummus-and try to keep your cold cut intake moderate.

Here’s how to healthfully incorporate cold cuts into your diet:

Which Meats Include Gluten

When discomfort and anguish persist despite staying gluten-free at restaurants, nutritionist Mia DiGeronimo, RD, LD suggests looking into these hidden culprits.

Medications + supplements

Gluten can be found in drugs and supplements as a filler or coating. Always read the label on any over-the-counter drugs or vitamin/mineral supplements to see whats in them. If you have celiac disease, check with your doctor to make sure any recommended drugs dont include gluten and locate gluten-free alternatives.

Celiac disease patients, according to research, have a higher need for minerals such B vitamins, vitamin D, and iron.

Meat, fish + poultry

Hydrolyzed wheat protein can be found in meat, fish, and poultry. Gluten may be present in processed lunch meats and deli meats such as cold cuts, hot dogs, salami, and sausage. Other gluten-containing foods include self-basting poultry and seasoned turkey breast.

Chips + fries

Although potatoes and corn are gluten-free by nature, potato chip flavoring may contain malt vinegar and wheat starch. Also keep in mind that gluten-free tortilla chips and French fries may be fried in the same oil or fryer as gluten-free items. The oil will be contaminated, and someone with celiac disease may be harmed as a result.

What Is Gluten And Why Avoid It

Gluten is a blend of proteins that occur naturally in wheat, rye, barley, and crossbreeds of these strains. It is used as a thickening agent in some sauces, soups, stews, salad dressings and more. Most breads and baked goods rely on gluten for elasticity.

Some people avoid gluten because of an allergy to wheat, which causes typical symptoms associated with allergic reaction. Others are gluten intolerant, experiencing conditions such as joint/muscle pain, fatigue, and headaches. The most serious gluten condition is Celiac disease, which attacks the immune system. If left untreated, intestinal damage can lead to other serious nutritional and immune disorders.
