Gluten Free Rice Krispies Treats

Believe it or not, rice crispies arent always 100% free from gluten because they often contain barley malt extract.

However, some of these products are actually certified by Coeliac UK as being safe to eat, even despite containing barley. Thats because they contain less than 20 parts per million of gluten, which according to Coeliac UK, that makes them safe for people with Coeliac disease.

But dont take my word for it if you look on the Coeliac UK app it actually shows that the below products are safe to eat.

So heres a list of all the rice crispies which are safe for us to eat, including those that are free from barley entirely, if youd prefer. Bear in mind that the barley-free products are more expensive and sometimes not quite like regular rice crispies they seem to be flatter and less puffy.

Just as a note, a lot of Tescos own brand cereal also used to be certified by Coeliac UK as being gluten-free, despite containing barley. However, theyve since been removed from the Coeliac UK app , so I wont be recommending them anymore.

    How To Make Brown Butter

    One of my favorite ways to bring a ton of flavor to a recipe is by using brown butter. Making brown butter is super simple! All you will need is a lightly coated frying pan or pot, a wooden spoon, and a stick of butter. In this recipe, we use 10 tablespoons of butter.

  • Melt the unsalted butter in a lightly coated frying pan on medium-low heat, stirring frequently.
  • Watch closely as the butter begins to melt. Within 2-3 minutes the butter will start to foam and the milk solids will begin to caramelize producing a nutty aroma and chestnut color.
  • Once the color starts to change, quickly remove the butter from the heat.

    These gluten free Rice Krispies Treats are a classic dessert with an easy gluten free makeover. Theyre great for parties, snacks, and lunch boxes!

    There are some foods the people just struggle with making. For me, those foods are toast, fried eggs, and Rice Krispies Treats. Weird, right?

    A gluten free chocolate cake is no problem for me. Neither is a homemade dairy free and gluten free funfetti cake complete with sprinkle-covered sides and piped buttercream. And Ive pretty much nailed the most perfect gluten free banana bread recipe you could ever ask for.

    But Rice Krispies Treats were the bane of my existence. The struggle was real. It took me batch after batch after batch to finally get it right. WHY ARE THESE SO HARD TO MAKE.

    My first ever batch came out so rock solid that you couldnt even bite them without worrying youd break a tooth. Im not even exaggerating.

    In my defense, its not a food I grew up eating. You know in those commercials where families are gathered around the kitchen making Rice Krispies Treats around the holidays? That wasnt us.

    We gathered around the kitchen making things like clam chowder or chili. My grandfather would sit at the table cutting up the vegetables and wed sit around and chat. Sure, we would make cookies, pies, and bread but my mom was always the one to do the baking. That was more of a solo effort it was her thing.

    Natures Path Gluten Free Crispy Rice Cereal

    Like One Degree brand, this Natures Path crisp rice cereal is puffy, not wrinkly. That is not ageist, its just a fact.

    The only really noticeable differences between Natures Path and One Degree are price and availability . Natures Path has two types of sugar and One Degree has only coconut palm sugar, but I dont detect a difference in taste or crispness.

    • Availability: Pretty good. I purchased this cereal at Vitacost.com, and have seen it available from Jet.com and iHerb.com. Amazon.com has a terrible price. In the past, Ive seen this product in Whole Foods and in my local natural foods store.

    One Degree Organic Foods Gf Sprouted Brown Rice Crisp Cereal

    I honestly had never heard of the One Degree brand before I started my search for gluten free rice crispy cereal varieties. The box is smaller than most at 8 ounces since most others are 10 ounces, a relatively universal price means that this variety is more expensive by 25%.

    I really like these little puffy grains, though. Theyre unlike the Kelloggs Rice Krispies variety, which is wrinkled like a raisin. Thats neither good nor bad. Its just a matter of personal preference.

    Theyre nice and snappy, stay crisp in milk, are only very lightly sweet, and the grains are sprouted which some say is better for your gut. They are great in Rice Krispy Treats , too.

    How To Make Healthy Rice Crispy Treats

    Making GLUTEN FREE Rice Krispie Treats

    Similar to traditional rice crispy treats, this option uses just a few steps.

    STEP ONE

    We start by melting together our honey and almond butter. Youre going to want to let the ingredients melt together, but also cook for a bit to help the sugars in the honey start to caramelize. This will also help the cereal all hold together.

    STEP TWO

    From there, youre going to pour the warm liquid over the rice cereal and stir it all together with a rubber spatula.

    STEP THREE

    The final step which can be a bit sticky is to transfer the rice crispy dough into a baking pan. Since this recipe isn’t getting baked, you’re going to have to press it into the pan with your hands. You want to press it down really firmly so that everything will stick together as it chills.

    Is It Worth The Risk

    If you feel the risk is worth taking, that choice is entirely yours. But I certainly wont be trying them any time soon. Especially as Im from the UK and the barley is clearly marked.

    What I find frustrating is that it should be really simple to make a product like Rice Krispies gluten-free especially because the main ingredients are essentially sugar and rice! Even more frustratingly, in 2011 Rice Krispies launched a gluten-free cereal, but according to their website the sales were disappointing, and manufacturing constraints were an issue. The product was discontinued. Its a shame because I feel as though it would certainly be more popular now.

    Can I Freeze My Gluten

    Of course! Ive frozen them for up to 2-3 months no problem. Slice them up before freezing that way you can simply defrost slices as and when you need them.

    Plus, theyll thaw a lot quicker. When you want to eat one, each slice should take around 3 hours to defrost at room temperature. Youd never know they were frozen!

    Are Rice Crispy Treats Gluten

    Whether these tasty snacks are gluten-free or not is a very tricky question to answer. Whilst the SmartLabel of allergens and ingredients on the Kelloggs website states that the only allergens are milk and soya the list of ingredients makes me feel a little uneasy about the allergens they have disclosed.

    The ingredients listed are as follows:

    Toasted rice cereal , folic acid), corn syrup, fructose, vegetable oil, sugar, corn syrup solids, contains 2% or less vegetable glycerin, dextrose, gelatin, natural and artificial flavors , salt, DATEM, acetylated monoglycerides, soy lecithin, BHT for freshness.

    Whilst those ingredients may appear to be gluten-free, the ingredient, malt flavor, listed above makes alarm bells ring in my mind. Malt flavoring is often derived from barley, which is, of course, a no-go for gluten-intolerant individuals.

    What I find most interesting is that the UK equivalent of Rice Krispies Treats, Squares have a clear label that they are not suitable for gluten-intolerant individuals. The label clearly states that barley is an ingredient and therefore is not gluten-free. Same brand, same product just a different name. Yet the labeling is different seems odd, doesnt it?

    Rice Crispy cereal itself also has the same issue. The label states the only allergens are milk and soya but malt flavoring is listed as an ingredient. Therefore, to me this product is not suitable for anyone that lives with celiac disease or can not tolerate gluten.

    Are Marshmallows Gluten Free

    The other key ingredient in traditional Rice Krispies treats is marshmallows and the good news is that, yes, marshmallows are gluten free .

    Kraft Jet-Puffed Marshmallows do not have any gluten ingredients on the label.

    If you do not eat meat, beware that most marshmallows contain pork gelatin. There are vegan and gluten-free marshmallow options, including the following brands:

    • Dandies vegan marshmallows You will experience a slight texture different with vegan marshmallows, and they are a bit harder to work with, but if youre vegan, its a great option.
    • Trader Joes Trader Joes brand marshmallows are gluten free and vegan, and they come with a great price tag too.

    Make Your Own Rice Krispies Treats Without Gluten

    You can easily make your own gluten-free rice crispy treats without gluten .

    Simple gather a gluten-free brown rice cereal of choice, marshmallows and butter .

    Next, melt the butter in a large bowl in the microwave for a few seconds, then add the marshmallows and continue microwaving the mixture until the marshmallows are completely melted, about 60-90 seconds .

    Vegan marshmallows may take longer to melt in the microwave, and they dont melt as evenly.

    Next, add your brown rice cereal to the melted marshmallow mixture and mix well. Its sticky but you got this!

    Now youll want to add your sticky mixture to a greased casserole dish. Press down the mixture as best as you can with your spatula, but then use wax paper to help you press the mixture solidly in place by hand.

    Allow the mixture time to cool and set in place.

    Once cool, you can cut the treats into squares and eat!

    If you love chocolate, add a chocolate drizzle on top of your crispy rice treats. Why not?

    Simply melt one cup of chocolate chips along with one teaspoon of avocado oil and then use your spoon to gently drizzle the chocolate all over the treats.

    Thats more like it agree?

    I could not wait for the chocolate to set in place , so I dug in right away. You can see the chocolate isnt quite set but thats okay it still works!
