    • 1Grease and dust with GF flour an 8×4 loaf pan. Heat oven to 200 degrees.Combine GF Flour Mix, xanthan gum, salt, sugar, and dry yeast in a medium sized bowl and whisk together. Set aside.In mixing bowl, combine the coconut oil and warm water together and then add the dry ingredients. Mix on high for 2 minutes, this activates the yeast. It should resemble a thicker cake batter.
    • 2Pour batter into prepared pan and cover with a tea towel. Turn OFF the oven and set the covered bread in the warm oven to rise. Carefully shut the oven door.The bread will take about 30 min. to rise to just below the top of the pan. Take the bread out carefully and set aside. Preheat your oven to 400 degrees.
    • 3Place bread in preheated oven and bake 45-55 minutes. After the first 10-15 minutes, tent tinfoil over the bread for the remainder of the baking time to prevent the crust from darkening too much.Test the bread with a toothpick. After youve removed the bread from the oven, immediately rub the top with butter . Remove loaf from the pan to a wire rack to cool.
    • 4Let cool completely before cutting. This makes a big difference on how well it will slice and stay together.

    This dough is wet and sticky. After youve beaten it, it will look almost like buttercream frosting. There is no way you could knead this dough without having to add TUNS of extra flour, which would inevitably ruin the breads texture.

    After the first rise, brush a spatula with oil or coat it with cooking spray. Youll fold the dough gently using the spatula and pour it into a prepared loaf pan. It wont pour into the pan like a cake batter, youll need to use your oiled spatula to guide it into the pan. Then you can use your spatula to smooth the top. You may need to re-oil your spatula a few times during this process.

    In fact, Ive made this bread a handful of times over the past few weeks for family and friends who have to follow gluten-free diets. And let me tell you, its always a hit! I couldnt let another week go by without sharing the recipe, so here I am.

    This delicious pumpkin bread is perfect for any cozy holiday gathering, and would make an excellent addition to your Thanksgiving dinner.

    Mixing The Ingredients And Kneading The Dough

    First, mix the yeast and sugar with some warm water to activate the yeast. After 5 10 minutes, it will become bubbly and frothy, which means that the yeast is active. If theres no bubbles and/or foam formation, youll know that its inactive and you should open a new yeast package.

    Next up, prepare the psyllium gel by mixing the psyllium husk with some water. The gel will begin to form within seconds.

    Then:

  • Add the potato starch, brown rice flour, buckwheat flour,
  • and salt to a bowl,
  • and mix thoroughly to combine.
  • Make a well in the middle and add the yeast mixture,
  • the psyllium gel, and
  • the apple cider vinegar.
  • Now, we come to the mixing and kneading stage theres really no right or wrong way to knead gluten free bread, as you dont have to go though the stretching motions youd typically use to build up the elasticity in a gluten-containing wheat bread.

    Once the wet and the dry ingredients are combined, I tend to squeeze the dough through my fingers until smooth and homogeneous. After a few minutes youll notice the dough coming away from the sides and it will be easy to form it into a rough ball.

    While it wont have the same super-stretchy elasticity of a gluten-containing wheat dough, theres enough elasticity there that you can stretch portions of it without them breaking off.

    Once you complete one 360 degree rotation of the dough, you should be left with a ball of dough. Flip it seam side down and rotate in place to seal the seams.

  • turn the bread out onto a piece of baking/greaseproof paper ,
  • score the dough with a sharp knife or a bread lame,
  • transfer the dough into the hot skillet,
  • place the skillet/Dutch oven/combo cooker in the oven,
  • pour hot water into the bottom baking tray,
  • add 3 4 ice cubes around the bread , and
  • close the oven door.
  • Bake the dough with steam at 480 ºF for 20 minutes, then remove the tray with water, reduce the oven temperature to 450 ºF and bake for a further 40 50 minutes.

    A couple of years ago, I posted a Soft Gluten Free Sandwich Bread Recipe that still gets a lot of attention. I hear from hundreds of people every month who love it & at least as many begging me to create a Vegan version of it.
