I love serving the sweet potato pie waffles as a late breakfast, drizzled with pecan or hazelnut butter, with coffee or tea. But they also make a great base for a savory sandwich, next to eggs and bacon.

I prefer these sweet potato waffles cold. They are great even the second day, after theyve been stored in the refrigerator, in stasher bags.

I havent tried yet, but I dont see why freezing them would not work. They can be reheated in the oven.

This easy potato flatbread requires just ONE ingredient a potato, for a wheat-free, gluten-free, yeast-free, paleo flatbread perfect for making quick and healthy wraps or pizza!

Im all about those simple hacks and recipes that seem so simple theyre too good to be true. Ive worked my way through 5-ingredient , 4-ingredient , 2-ingredient , and now a ONE ingredient easy flatbread recipe. Loosely inspired by Norweigan Lefse bread and Slovakian loke, this potato flatbread is made with potato dough.

However, unlike other potato wraps, this recipe contains NO other ingredients. Even better, you could even use leftover cooked potatoes: boiled, steamed, oven-baked, and mashed ! All you need to do is mash and roll the potato into a thin, even layer and bake it in the oven for a super simple, flavorful, potato flatbread/wrap.

Once baked, fill with your favorite fillings like the breakfast flatbread, Ive created below, and enjoy!

Next time you want to make a wrap and there are no tortillas in sight, but you have a bag of potatoes starting to sprout in the corner, I only have one suggestion for you mashed potato flatbread!

Before you begin, make sure you have a baked potato or mashed potatoes on hand. You want it already cooked, peeled, and mashed in a bowl.

Cool completely before slicing!

I know, waiting can be hard, especially when there is warm bread waiting nearby. But, the texture of potato quick bread is soft in the middle. So, its important to wait for it to cool. Otherwise, the slices will just crumble apart.

Storing and freezing instructions

Store in the fridge, wrapped in plastic wrap to keep it fresh. Or, wrap it in foil and freeze it for up to 3 months.

Serving suggestions

Consistency Of The Potato Roll Dough

Along the way, you learn the difference in consistency of gluten free bread dough. For these potato rolls, you will be looking for a dough that is more like cake batter than bread dough.

Theres a range of flour used in this recipe, therefore 390 grams should give you this consistency, but if you find it too loose add an additional ¼ cup.

The true test will be: does the dough hold shape on a scooped spoonful but still soft?

If it passes that test, then its ready! Simply spoon large heaps of batter onto a greased pan into even rows. You should have 12 even potato rolls in your 9 x 13 baking dish.

  • For the gluten-free flour blend: In a large bowl, whisk together the rice flour, tapioca flour, potato starch, xanthan gum and salt.
  • For the buns: In the bowl of a stand mixer fitted with the paddle attachment, mix together the potato flakes, dry milk, sugar, yeast, salt, 2 tablespoons butter and 1 3/4 cups plus 2 tablespoons gluten-free flour blend on medium-low speed. With the machine running, stream in the buttermilk and mix until the dough is combined and pulls away from the sides of the bowl.
  • Line your countertop with a large piece of parchment paper and sprinkle lightly with some of the gluten-free flour blend. Grease an 8- by 8-inch baking dish. Roll the dough out gently to about 3 inches thick. Cut the dough into 8 equal pieces and place in the prepared baking dish, evenly spaced from one another. Cover with plastic wrap and let rise until doubled in size, about 1 1/2 hours.
  • Preheat the oven to 350 degrees F. Bake the buns until golden and fluffy, about 24 minutes remove from oven and brush with butter. Serve warm or cooled.
