Whats The Blend Good For
Cup4Cup is really a pastry flour. High in starch, lower in protein, its just a dream for pastry. Light and airy, it does just what pastry flour is meant to do: surround the cold butter in a recipe smoothly, and then puff effortlessly when the cold butter hits the heat of the oven and gives off steam.
Cup4Cup does have enough protein and structure to trap the steam given off in the oven, which is important. If you just use a high-starch blend that doesnt have the other attributes of Cup4Cup , it wont trap steam and you wont get the flaky goodness of the beautiful biscuits, scones, pie crusts and puff pastry.
How Do You Measure Gluten Free Flour
Lastlywhen you are measuring gluten-free flour REMEMBER to take a large spoon and gently dump the flour into the measuring cup. Then, once its overflowing, take a knife and scrape off the excess, so you have a nice, clean, and even line with the measuring cup. You do not want to scoop or pack in the flour, as this will make the flour the wrong ratio and you wont get the soft, just-like-wheat texture.

**PLEASE NOTE: Gluten-free flour does not rise like regular flour. So, youll notice all of my recipes call for an ingredient, xanthan gum, which helps give the rise and airy-ness that regular flour typically has. I prefer to not include this in my blend, as each type of recipe needs its own amount and to ensure Im getting the proper amount.**
What Is Xanthan Gum
Xanthan gum is a common food additive. While most people do not know what xanthan gum is, it is usually added to foods to thicken or stabilize them. Believe it or not, I first came across xanthan gum, watching a natural hair video. When I noticed it was an ingredient in most gluten-free all-purpose flours. I was bewildered and did as much research as possible to find out what this xanthan gum was.
As it turns out, xanthan gum is made fermenting sugar. The bacteria Xanthomonas campestris is used to ferment the sugar. The fermentation process results in a broth and slushy goo-like matter that is dried and ground into a powder. Xanthum gum is a popular ingredient in gluten-free cooking and baking because it adds moisture and elasticity. In addition to this, xanthan gum also replicates the fluffy texture of wheat baked goods. While most people experience no side effects of xanthan gum, some people report experiencing digestion issues. Nevertheless, most scientists and food safety experts consider xanthan gum to be a safe food additive. However, similar to psyllium husk, in large doses, xanthan gum can become a problem. Large quantities of xanthan gum can increase the rate of defecation, flatulence and create soft feces.

Dont Want To Build Your Own Blend
Use Better Batter gluten free flour everywhere my recipes call for an all purpose gluten free flour. You can purchase it on their website , and youll get the best price when you buy in bulk.
You can also use Cup4Cup gluten free flour blend, but it is relatively high in starch and wont produce best results in my recipes . But it will still work anywhere my recipes call for an all purpose gluten free flour.
Other blends: Im afraid that I dont care for Jules Gluten Free , Tom Sawyer blend , Namaste , Krusteaz , Bobs Red Mill , Pillsbury Betty Crocker Rice Flour Blend , or Trader Joes Blend .
If you use any of these blends, especially Bobs Red Mill or Namaste, your recipe simply will NOT turn out.
King Arthur Flour multi-purpose gluten free flour blend is perhaps the most widely available blend, and I would give anything to be able to use and recommend it. Unfortunately, its very high in starch so its unbalanced, and the rice flour in it is grainy. *whomp whomp whomp*

How To Store Your Gluten
Your home has what I like to call a Four-Corners Pantry that includes your:
- Working Pantry
- Extended or Prepper Pantry
Once you create your gluten-free mixes, you can store them in your working pantry, or if they have a longer shelf-life, you can keep them in your extended or Prepper Pantry.
If you dont plan to use it often, you can store your all-purpose mix or self-rising mix in your Prepper Pantry because it has a shelf-life from one and a half to two years.
The other two mixes have a shelf-life thats dependent on the whole grains that you use in the mixes. Check your whole grain packagings Best Used By date for the recommended shelf life, which can range from 6 months to a year and a half.
Just remember that whole grain flours, whether they contain gluten or not, will go rancid quicker than all-purpose flours. So your whole grain flours are probably best stored in your working pantry, where you can keep an eye on their shelf-life.

To prepare each all purpose gluten free flour blend below in whatever quantity youd like, simply apply the various percentages listed for each component gluten-free flour to the total quantity, one by one.
For example, if you wanted to put together 140 grams of flour , using the Mock Better Batter Blend, heres the math:
30% BRF = 30% x 140 grams = 42 grams Superfine Brown Rice Flour30% WRF = 30% x 140 grams = 42 grams Superfine White Rice Flour15% TS/F = 15% x 140 grams = 21 grams good quality Tapioca Starch/Flour15% PS = 15% x 140 grams = 21 grams Potato Starch5% PF = 5% x 140 grams = 7 grams Potato Flour3% XG = 3% x 140 grams = 4 grams Xanthan Gum2% PPP = 2% x 140 grams = 3 grams Pure Powdered Pectin
If you add up all of the numbers, it will equal 140 grams . So make as much or as little as you like. I generally make 10 cups at a time of my favorite blend .

Gluten Free Bread Flour
Gluten Free Bread Flour can be made by combining all purpose gluten free flour with whey protein isolate and Expandex modified tapioca starch in specific proportions.

- 100 grams all purpose gluten free flour
- 15 grams Expandex modified tapioca starch
Expandex modified tapioca starch can be replaced with Ultratex, another type of modified tapioca starch that is sold online at amazon.com in two strengths: Ultratex 3 and Ultratex 8.
Ultratex 3 is not as strong as Ultratex 8, but both are considerably stronger than Expandex modified tapioca starch. You can also try purchasing the same product, Ultratex 3, here.
Since Ultratex 3 is approximately 3 times as strong as Expandex, Ive arrived at a formula for building Gluten Free Bread Flour to use in the recipes in Bakes Bread. It is as follows :

How To Use A Gluten Free All Purpose Flour Blend
Unfortunately, the amounts of regular wheat flour and gluten free flours cant be swapped equally with reliable results. People do it, sure, but what comes out is sometimes a little sad. When you work with gluten free flours, you often have to adjust the amount of liquids in the recipe.
And with so many gluten free blends on the market , theres only one thing I can say for certain: youll get a different result with all of them.
This particular blend has been very reliable for me and Ive used it in some of my favorite traditional recipes with great success.

What Is Guar Gum
Like xanthan gum, guar gum is another food additive derived from guar beans. Guar gum is a kind of polysaccharide. Guar gum is used heavily in processed foods because it absorbs moisture and produces a gell taht acts as a thickener and a binder. The FDA deems specific quantities of guar gum safe for consumption in multiple food products. However, too much guar gum is not a good thing. The 1990s Cal-Ban 3000 incident is a clear reflection of this. This weight loss supplement had large doses of guar gum that increase about 10-120 times in quantity in the stomach to increases satiety and stimulate weight loss. Rather than stimulating weight loss, Cal Ban 300 was responsible for severe health issues such as blocking the esophagus and small bowel. Some cases even resulted in death which led the FDA to prohibit guar gum in weight-loss supplements. Nevertheless, gaur gum is considered safe as long as it is ingested in small amounts.

This flour blend may be used to make cakes, cookies, muffins, cupcakes, and pastry, to name a few. However, when used in bread or yeast-based recipes, it makes them too starchy.
UPDATE: I have been experimenting with this flour blend over the last few months. Instead of having to add additional butter or oil, I have found a new solution.
