My Crispy Coating Is Too Dark What Did I Do Wrong
If your coating is dark or has a burnt look/taste and the middle is perfectly cooked, then you probably left them in the oil longer than they needed to be.
If you ensure your cooking oil is at 170C when you put your chicken in, this is the perfect happy medium for a golden, crispy coating and the inside being cooked.
Bear in mind that if using a deep fat fryer machine which maintains 170C constantly, youll probably need to lower the temperature to 160C after a minute or so. This mimics the temperature of oil dropping once the cold chicken is placed into the oil as would happen with my method on the stove.
What Is The Best Type Of Gluten
I have found that the best type of gluten-free flour to make fried chicken is rice flour. I use a cup for cup all-purpose gluten-free flour blend. My preferred brand is Pillsbury gluten-free, but you can also use Bobs Red Mill 1 to 1, Better Batter, or King Arthur Measure For Measure.
I have not tried this recipe with almond or coconut flour.

Tips For Making The Best Gluten Free Chicken Tenders Recipe
I’ve tested this recipe for you, so I know all of the tips and tricks to get super crispy gluten free chicken tenders, every time.
- Don’t Overcrowd the Pot: Cook 3-4 pieces of chicken at a time in your Dutch oven or pot. Too many pieces of chicken will lower the temperature of the oil more than you want, and the tenders won’t cook evenly.
- Use Same Size Chicken Pieces: For best cooking results, you should use chicken tenders or pieces that are all the same size and thickness. If needed, you can pound thicker tenders to make them thinner. If you’re cutting up chicken breasts, cut them into 4-5 inch long, ½ inch thick pieces.
- Keep an Eye on Oil Temperature: If the oil gets too hot, you’ll end up with burnt breading and undercooked chicken. The oil should stay at or slightly below 350°F throughout the cooking process. I highly recommend using a thermometer to check the oil temperature, but also, use your eyes to know if the oil is too hot. If you notice that when you put a chicken tender in the oil that it bubbles furiously then the oil is too hot. If you don’t see any bubbles, the oil is too cold.
- Keep Your Hands Clean: I don’t like the way my fingers feel when I’m breading things, so I like to use tongs both while breading the chicken and while cooking it.
Buy In Bulk For Better Value
You can buy gluten-free all-purpose flour in an individual package, or in bulk quantities. Individual packages are anywhere from 8 to 32 ounces apiece. Its a good idea to stick with individual bags if you dont plan on using gluten-free flour often, especially since gluten-free flour is only shelf-stable for a few months.
If you expect to use a lot of it on a regular basis for daily cooking and baking, youll save big if you buy gluten-free all-purpose flour in bulk. This usually entails buying three to ten packages at a time from a store or seller. The initial cash outlay may make it seem costly, but in the long run, you can end up saving a few dollars per pound.

What Flours Are Good For Frying
Rice flour and cornstarch work particularly well because they fry up crispier than wheat flour. They also absorb less moisture and fat during the frying process, making the products less greasy. This is why rice flour is often used when making tempura because it produces a very thin and crispy, dry crust.
What Type Of Gluten
I would recommend only certain gluten-fre flours for this recipe. You will want to use a flour that is very fine in texture so that the coating, once fried, has the consistency of a normal breaded and fried piece of chicken.
If you don’t use a finely ground flour type you will end up with a chunky breading that is crumbly and has a grainy texture. You don’t want that.
So you will want to look for either cassava flour or chickpea flour…. tapioca flour would be your third best option if you do not have access to cassava or chickpea flours in your area.

What Measure For Measure Means
Gluten-free all-purpose flour has a totally different formula than regular flour. Since cooking and baking boils down to basic chemistry, its no surprise that a certain amount of recipe adjustment or balancing is required when it comes to gluten-free cooking. If youre not thrilled at the thought of measuring, weighing, and figuring out ratios, opt for gluten-free all-purpose flour that is marked measure for measure.
Measure-for-measure flour means you wont need to deal with the headache of balancing or substitutions. Instead, these flours have unique combinations of ingredients that mimic the cooking qualities of regular flour. As a result, if a regular recipe calls for one cup of flour, you can use one cup of gluten-free flour. While it sometimes makes the flour more expensive, its a real time-saver when it comes to food preparation.

Will My Gluten Free Flour Mix Work In All Recipes
No. In my experience there is no single gluten free flour or flour mix that will produce excellent results in all types of recipes. Cookies have a high fat and sugar content and cook quickly. Bread bakes slowly and needs to rise. I could go on and on but this is the science of baking.
I recommend you just start with the foods that are most important to you. What matters is whether you can repeat the recipe and that you enjoy eating it. Learning how to use a gluten free flour mix in new ways can help you do that.

Gluten Free Fried Chicken

Ive gone for a classic buttermilk fried chicken recipe, although have also included the option for a buttermilk alternative. Sometimes its not readily available in the shops, or you might want to try a dairy free version.

What Chicken Pieces Should I Use For Your Gluten
Use whatever you like! This recipe uses 750g of chicken on the bone . So in that sense, feel free to use drumsticks, thighs, or even wings bear in mind that chicken wings will likely only need 5-6 minutes frying.
Of course, you can use boneless, skinless chicken too like boneless chicken thighs and chicken breast. If using chicken breast, Id recommend slicing it into strips to make goujons that way you get lots of crispy coating instead of a whole chicken breast with more meat than crispy coating.
Bear in mind that chicken breast goujons will be quicker to cook and likely only take 7-10 minutes. The same goes for chicken wings too.

Frying Chicken Without Flour
What is a healthy substitute for flour when frying chicken, you ask? Chicken, luckily, doesnt need much dressing up to taste phenomenal. Thats right, you dont need flour or anything else for chicken when you are frying it. Yes, the crunchy breading does add something special, but it isnt essential.
If you want to fry chicken without flour, simply leave the skin on. Marinade the meat however you want for about 12 hours. Dont use a lot of oil when you go to fry it up. The skin will caramelize and come out super crunchy.
Again, you can also lightly dust the skin on your chicken with baking powder or cornstarch before dropping it into the oil for a deep fry. You will be surprised by how light and crispy the fried chicken comes out.
