If your coating is dark or has a burnt look/taste and the middle is perfectly cooked, then you probably left them in the oil longer than they needed to be.

If you ensure your cooking oil is at 170C when you put your chicken in, this is the perfect happy medium for a golden, crispy coating and the inside being cooked.

Bear in mind that if using a deep fat fryer machine which maintains 170C constantly, youll probably need to lower the temperature to 160C after a minute or so. This mimics the temperature of oil dropping once the cold chicken is placed into the oil as would happen with my method on the stove.

What Is The Best Type Of Gluten

I have found that the best type of gluten-free flour to make fried chicken is rice flour. I use a cup for cup all-purpose gluten-free flour blend. My preferred brand is Pillsbury gluten-free, but you can also use Bobs Red Mill 1 to 1, Better Batter, or King Arthur Measure For Measure.

I have not tried this recipe with almond or coconut flour.

I’ve tested this recipe for you, so I know all of the tips and tricks to get super crispy gluten free chicken tenders, every time.

  • Don’t Overcrowd the Pot: Cook 3-4 pieces of chicken at a time in your Dutch oven or pot. Too many pieces of chicken will lower the temperature of the oil more than you want, and the tenders won’t cook evenly.
  • Use Same Size Chicken Pieces: For best cooking results, you should use chicken tenders or pieces that are all the same size and thickness. If needed, you can pound thicker tenders to make them thinner. If you’re cutting up chicken breasts, cut them into 4-5 inch long, ½ inch thick pieces.
  • Keep an Eye on Oil Temperature: If the oil gets too hot, you’ll end up with burnt breading and undercooked chicken. The oil should stay at or slightly below 350°F throughout the cooking process. I highly recommend using a thermometer to check the oil temperature, but also, use your eyes to know if the oil is too hot. If you notice that when you put a chicken tender in the oil that it bubbles furiously then the oil is too hot. If you don’t see any bubbles, the oil is too cold.
  • Keep Your Hands Clean: I don’t like the way my fingers feel when I’m breading things, so I like to use tongs both while breading the chicken and while cooking it.

What Is The Best Gluten Free Flour To Use For Frying

You can buy gluten-free all-purpose flour in an individual package, or in bulk quantities. Individual packages are anywhere from 8 to 32 ounces apiece. Its a good idea to stick with individual bags if you dont plan on using gluten-free flour often, especially since gluten-free flour is only shelf-stable for a few months.

If you expect to use a lot of it on a regular basis for daily cooking and baking, youll save big if you buy gluten-free all-purpose flour in bulk. This usually entails buying three to ten packages at a time from a store or seller. The initial cash outlay may make it seem costly, but in the long run, you can end up saving a few dollars per pound.
