Make sure to use the blend of gluten-free flours we recommend in the notes. We cant guarantee results with other combinations of gluten-free flours as we havent tried them. For tips on store-bought brands, we recommend checking the comment section to see what others have tried.

Crust too tough or hard?

Next time, try cooking it for less time and/or rolling it slightly thicker.

Whats the best way to freeze this pizza crust?

Par-bake crust 20-30 minutes, then let cool and transfer to a sealed container and store in the freezer up to 1 month.

Gluten Free Pizza Recipe

Those of you who follow me on Instagram will know that developing this gluten free pizza base recipe has been a labour of love for me. I wanted to develop a base that isnt too complicated and is still quick to make, but that is more pizza-like than some of the very basic no yeast recipes. And after some extensive testing, I have hit on what I think is the perfect solution.

So I am finally ready to share my creation with you and I really hope you enjoy eating it as much as my family does! This recipe should yield a lovely, pliable gluten free pizza base. Crisp on the bottom and at the edges, but with dough full of little teeny bubbles that keep it soft inside.

This gluten free pizza is even good eaten cold! It keeps its softness and doesnt go all dry and hard like some other bases . This makes it a great recipe to use for buffets and picnics too, in addition to pizza night!

Note however, that if you want leftovers you should definitely make double quantities, as this gluten free pizza is so good youll find it hard to not guzzle the entire thing in one sitting.

What Other Flours Can I Use In This Pizza Crust Recipe

Gluten Free Pizza Dough Mix

I have tested this gluten-free pizza crust recipe with Bob’s Red Mill 1-to-1 Gluten Free Flour Blend. It works incredible in this recipe and it’s my other go-to flour blend.

If you want to mix your own blend for this pizza combine 1 cup white rice flour, ¾ cup brown rice flour, ¼ cup tapioca starch.

I haven’t tried this gluten-free pizza dough recipe with other flour blends. If you do, please come back and let me know which gluten-free flour blend you used.

We’ve used this gluten-free pizza recipe several times just this month, and we’ve started passing the recipe on to friends and family member to show them how easy making your own pizza at home can be.

We usually par-bake a couple of extra gluten-free pizza crusts and store them the in the freezer for super busy nights when we need to make dinner quickly.

Simply pull a crust out of the freezer, heat your oven, top, and bake. Just like store bought pizza crusts, only better.

Tapioca Starch Is Magic

Tapioca starch is my magic ingredient for this pizza base. It gives the resulting gluten free pizza base its wonderful pliability and some stretch. You can buy tapioca starch in lots of shops , or even buy online via Amazon and similar retailers.

Youll notice that, unusually for gluten free recipes, I have not included any xanthan gum in this recipe. I discovered that tapioca starch eliminates the needs for it, as the tapioca helps with the binding. I dont mind using xanthan in small quantities, but didnt want to use a massive amount for this pizza base so was happy that tapioca cancels it out.

Aside from the tapioca, youll likely have the other ingredients knocking around in your kitchen already. Plain gluten free flour , salt, olive oil, dry active yeast and sugar.

Best Pans For Gluten Free Pizza

To bake this recipe as gluten free pizza or gluten free focaccia, I like using a pizza crisper pan covered with parchment sprayed with non-stick cooking oil.

They are usually circular pans and have lots of little holes in them to help the air flow and to make the outside of the crust crisper, while allowing the inside crust to remain chewy.

How To Make This Yeast Free Gluten Free Pizza Recipetwo Ways

The method that we use to make this yeast free gluten free pizza is very similar to the method we use to make yeasted gluten free pizzabut the rise here comes from baking powder instead of yeast.

Theres less flavor because theres no yeast development, but theres no need to allow the crust to rest in the refrigerator for at least 12 hours like with traditional gluten free pizza.

All I did to create this recipe was take the yeast free pizza crust recipe from GFOAS Quick & Easy, and combine it with the gluten free bread flour blend from GFOAS Bakes Bread. The result is nothing short of a dinnertime miracle.

To make this recipe, you mostly just dump the ingredients into a mixer and mix until its all well-combined. One of the methods of making this recipe calls for the specialized gluten free bread flour blend from Gluten Free on a Shoestring Bakes Bread.

I prefer this pizza when its made with the bread flour blend since it still crisps up like a champ on the bottom and browns beautifully. But if the extra ingredient seem overwhelming, this isnt the time to use them.

The purpose of this recipe is ease. So you can absolutely make it with one of our all purpose gluten free flour blends. The dough just needs some more water, and it wont be as easy to handle.

Par Baking Pizza Crusts

Gluten Free Pizza Dough Recipe with YesYouCan Pizza Base Mix

Who doesnt love the convenience of pulling a frozen pizza out and shoving it in the oven? Well next time you make this recipe , make two and freeze one!

My gfJules Pizza Crust Mix actually makes 2-3 large pizzas already , so if youre not in the mood for two large pizzas today, youll be set, because you can easily par bake one and freeze it for later!

You can even make these delicious, authentic gluten free pizza crusts into HEART shapes

Heres how to par bake any shape crust and freeze them for later:

Follow the instructions for making, spreading and rising the pizza just as you would normally, but then bake it at 450F for only about 5 minutes, or until the dough has puffed and is starting to look a bit dry but not brown.

Remove the crust to cool to room temperature and then either cover with toppings or not, your choice. Either way, at that point, wrap the pizza well with plastic wrap twice. This will prevent freezer burn. If you know youll be keeping it in the freezer for a few weeks or even a month, Id suggest another layer of foil, as well.

When youre ready for gluten free pizza next time, preheat your oven to 500F, then remove the foil and plastic wrap. If you havent already topped it previously, add sauce and toppings now.

Place the frozen gluten free pizza on your favorite pan or pizza stone and place it in the preheated oven, baking until the crust is browned and your toppings are melted, at least 10 minutes.

How To Make Gluten Free Pizza

Okay, normally I try to avoid too much spiel before a recipe . However, for this one I want to have a bit of a chat about it before you crack on with the making.

Firstly gluten free pizza dough does not behave like regular pizza dough. Dont expect to be spinning this dough round your head pizza chef style ! Its a much wetter dough and youll need to work with it slightly differently. So if youve made gluten free before, forget everything and approach this recipe with a blank mind.

Wet gluten free dough yields a much lighter base and is worth the handling issues. This dough is quite sticky and not the easiest the work with, UNLESS you follow my tips and then it should be quite straightforward :). Youll see in the recipe that Ive included a tip about wetting your hands if you need to handle the dough. With wet hands, youll find the dough doesnt stick to you at all and its much easier to work with.

Once youve transferred the dough to the baking sheet, a good dusting of flour with absorb the sticky-ness and you can push and spread the dough out with your fingers to form a nice pizza base shape.

This is the BEST gluten free pizza dough recipe! Its so easy to make, perfectly chewy and requires no kneading. Plus, this crust can be frozen for easy dinners throughout the week!

My go-to gluten free pizza dough! This crust recipe requires no kneading, is totally freezer friendly and can be made into a thick or thin crust depending on what you like!

It only requires about 15 minutes of prep time, plus an hour to let the dough rise and then youre good to go!

Pizza was one of those foods I missed most when I was diagnosed with Celiac, and while I love a cauliflower crust every now and then, sometimes you just need something that more closely replicates the real deal.

Freeze The Parbaked Gluten Free Pizza Crust

If youd prefer to have a half-baked crust on hand, dinner can be as easy as a premade, packaged frozen pizza crust. Just follow the recipe instructions through step 3 below.

After the crust has been parbaked for about 7 minutes in a 400°F oven, allow it to cool completely. Once the crust has cooled completely, wrap it very tightly. I like Glad Press n Seal freezer for this sort of thing.

Place the parbaked crust in the freezer for up to a month. Even better than Press n Seal is a food sealer that removes all trapped air from the container, since trapped air is what causes freezer burn.

Rolling Out The Dough And Building A Pizza

Dump the dough onto a well-floured surface and knead it briefly, until it comes together into a fairly smooth ball. With a bench scraper, cut the dough into portions about 5-6 ounces each. Roll each of these into a somewhat smooth ball. Roll the pizza dough into about 10-inch rounds . You can make larger pizzas, but youre limited by the size of your steel/stone and your pizza peel.

Be liberal with the flour on your counter because this dough has a tendency to stick. Constantly roll and lift the pizza crust so it doesnt stick, adding more flour as necessary. Youre looking for it to be a thickness of about 1/8th of an inch. Cover your pizza crusts while you prepare your oven for baking.
