Tempeh can be made with gluten-containing grains, but you can find gluten-free varieties quite easily. In addition, recipes may call for flour for thickening or structure, but you can swap out corn starch for thickening, and a gluten-free flour blend for most recipes. One trick is to look for the gluten-free label on food products to assure that the product is gluten-free, and does not have risk of cross contamination.

Arrowroot: Made of dried and ground tubers, arrowroot is a fine snow-like flour with excellent thickening power. It can be used for sauces and gravies, but it can also lighten the crumb when using denser flours like almond. It also helps create pliability in recipes like gluten-free crepes or pancakes.

  • Baked goods: Try 24 tablespoons to hold moisture, help bind, and yield a buttery, delicate crumb.

  • Sauce, gravy, or soup: Use like you would flour or cornstarch make a slurry by stirring together 1½ teaspoons arrowroot starch/flour with ¼ cup water until dissolved, and whisk it into warm sauces and soups. The warmth activates thickening properties, while cooling finishes it.

Starchy additions: Blend ½1 cup of these ingredients with 1 cup water and add to soups, stews, sauces, gravy, and stocks to add bulk and thicken:

  • Cooked potatoes
  • Cooked short-grain brown rice
  • Gluten-free oats

How To Make Some Delicious Vegan Taco Meat

Take your beans and walnuts and spread them out on a lined baking sheet. Then, sprinkle your beans and walnuts with your spices and mix using a spoon to make sure everything is coated.

Place in the oven to bake for 15-20 minutes and remove from the oven to cool.

Add all ingredients including the chipotle peppers to a food processor and pulse until the mixture starts to come together and resemble crumbles.

When ready to serve, heat your grounds in a pan with a little oil and sauté to heat through.

In just two years, food technology has moved consumers from browsing for wan veggie patties in the frozen aisle to selecting fresh plant-based burgers sold next to the ground beef.

Behind the scenes at the supermarket, giant battles are being waged: Meat producers are suing to have the words meat and burger restricted to their own products. Makers of meat alternatives like Beyond Meat and Impossible Foods are vying to capture the global fast-food market, as big players like Tyson and Perdue join the fray. Environmental and food scientists are insisting that we eat more plants and less processed food. Many vegetarians and vegans say the goal is to break the habit of eating meat, not feed it with surrogates.

I would still prefer to eat something thats not lab-grown, said Isa Chandra Moskowitz, the chef at the vegan restaurant Modern Love in Omaha, where her own burger is the most popular dish on the menu. But its better for people and for the planet to eat one of those burgers instead of meat every day, if thats what they are going to do anyway.

Fruits are the natural plant-based convenience food. I take them everywhere with me to ensure I will always have a healthy snack on hand.

Choose a variety of fresh and frozen fruit each shopping session and alternate these on a weekly basis. I tend to gravitate towards fresh produce that is in season to keep the cost to a minimum.

Try to grab at least one type of berry and one type of citrus fruit each time you shop. Some berry varieties include raspberries, blueberries, strawberries, and elderberries. Different citrus options may include grapefruit, oranges, limes, and lemons.
