This Baked Vegan Mac and Cheese is so simple that youll want to make it all the time, and so delicious that youll have to! Gluten Free, Nut Free, and made with only 8 Ingredients.

If you were a child of the 90s, Mac and Cheese was probably a staple in your diet. I vividly remember mixing that neon orange powder into my fun-shaped noodles, trying to stir in every last bit . Nowadays, I try to avoid boxed processed foods, and I definitely avoid dairy.

No one said anything about avoiding Mac and Cheese, though.

Heres the hard part where I now have to convince you that this Vegan Mac and Cheese is the best. You see, there are about a million and two cheezy pasta recipes out there on the internet, each touting the same thing. Theres the cashew mac, the potato mac, the fat-free mac, the junk food mac. You name it, its probably floating out there somewhere in cyberspace.

Im actually a very humble person, but let me say this: Im pretty sure I hit the nail on the freakin head with this one. Forget best of both worlds, this Mac is the best of all worlds. Its thick, luscious, creamy, and nut free! So you dont have to waste all your money on cashews and can share it with your friends with allergies. Oh, and I think it tastes pretty darn cheesy, too.

Lets talk about that for a second, shall we?

You Will Need To Find Other Sources Of Insoluble Fiber

Fibernot so sexy, but its important!Fiber helps solidify our stools and have comfortable bowel movements . There are two types of fiber that our bodies need: soluble fiber and insoluble fiber . Soluble fiber is found in oats , citrus fruits, beans, peas, apples, and other foods. Insoluble fiber, meanwhile, is in many foods containing gluten: whole wheat flour and wheat bran. Given that a 2016 review of studies on the gluten-free diet found that it is nutritionally poor in fiber, youll need to find other sources of insoluble fiber. Fortunately, many vegetables are all good sources of this important nutrient: green peas, broccoli, turnip greens, Brussels sprouts, and potatoes, to name a few.

Best Easy Vegan Mac and Cheese (Gluten

Shad likes cheese more than I do and in the 20 years that he’s been a vegan. He has been searching for a good cheese. Taste, texture and of course melting.

So many plant based cheeses don’t have the proper fat content to get them to melt just right. Even at high temperature.

There are two brands of plant based cheese that we used in this recipe. Daiya Cheddar shreds and Mozzarella shreds melty, gooey-cheese-stretch goodness. And Follow Your Heart brand Parmesan shreds for the little kick of salty.

Both brands are absolutely wonderful and melt just right, so at last you can get the stretchy bit hanging from your fork and mouth.

    Topping Macaroni Cheese With Breadcrumbs

For the crunchiest contrast between the cheesy, velvety macaroni and the topping, breadcrumbs are a must. Added with a sprinkling of extra cheese, the combination melts and crisps in the oven to create the most delectable marriage of flavours and textures.

However The type of breadcrumbs you use matters. If using crumbs from bread which is dark in colour, the surface may look dirty. Equally, using fresh, quite moist bread crumbs, will be less likely to result in a crunchy top Fresh breadcrumbs have less resistance to absorbing moisture from the underlying cheese sauce and hence, dont crisp as much in the oven.

The answer? Use bread crumbs made from white bread that are dried and preferably PANKO. And if you didnt think gluten free Panko breadcrumbs were a possibility, think again! And head over to my post on how to make Panko Breadcrumbs at home.

Or For standard dried breadcrumbs, we have a post for that too!

What Gluten Free Breadcrumbs Should I Use For Your Gluten Free Mac And Cheese Recipe

    Vegan Mac and Cheese

I generally use a packet of gluten free breadcrumbs because its easier, but lately Tesco seems to have zero options for gf breadcrumbs anymore.

Does anyone else find they have stopped stocking them in their local?!

If so, blitzing up old gluten free bread in a food processor is a great way to do this in seconds. If you dont have a food processor, simply hand break a few slices of bread it doesnt matter if theyre a little chunky, theyll be like nice chunky croutons!

Gluten Free Mac And Cheese Thats Safe For Coeliacs

Apart from the macaroni and a little flour used to thicken the sauce, there should be nothing else gluten-based in Mac and Cheese. So, a simple switch of standard macaroni for gluten free macaroni and using corn starch in place of wheat flour, will make it safe for people with Coeliac Disease . You can usually find gluten free macaroni/elbow pasta in the free from section of larger supermarkets. And corn starch in the baking aisle.

Easy right? And it also means that whether you are gluten free or not, this is the perfect recipe. As always however, remember if you are gluten free for allergen or health reasons, it is important to double-check all ingredient labels for hidden gluten or may contain warnings.

Can You Make Vegan Macaroni And Cheese Without Nutritional Yeast

The nutritional yeast contributes a cheesy flavor to this sauce, so I recommend using it if you can for the most authentic taste. However, the sauce will still be creamy and flavorful without it! It just wont have as much of a cheesy flavor without it.

I like to add turmeric to this sauce for its almost neon-orange hue, and it also contains naturally anti-inflammatory compounds. When you add just a little, you cant taste it at all, but this ingredient is totally optional if you dont have it on hand.

Three Things To Avoid If You Want To Feel Good And You Dont Want To Gain Weight

If youve suddenly gone vegan and youre not feeling well and gaining weight, its likely because of one of three things.

  • Youre not eating enough calories. This is usually a problem for those who are eating only WFPB. If this is you, dont be afraid to eat more, more often. Its difficult to gain weight eating lots of green vegetables, fruit and some grains and beans.
  • Avoid sugar. Definitely stay away from refined sugar. It will spike your blood sugar and then drop just as fast, leaving you feel tired and cranky. Limit non-refined sugars, such as maple syrup, coconut sugar and anything that claims to be a natural sweetener.
  • Avoid processed foods. Try and avoid packaged food as much as possible. The only boxes and cans we open are filled with beans or grains. We never buy frozen prepared meals, cookies, or anything that has a long list of ingredients on the package. Those are the foods that are high in calories and low in nutrients, even if theyre vegan.
  • The more sweets you eat, the more youre going to crave. Check this out, andthisto learn more.

We chose this Easy Chickpea Salad with Easy Lemon Dressing for lunch because its something that we eat often. Like the name says, its super easy to make. Its also delicious and nutritious.

There are chickpeas for protein, hearts of palm, tomatoes, basil and Kalamata olives. This salad is tangy, salty, fresh and yummy. The lemon dressing gives it some zip and vitamin C.

    Can I Freeze This

Yes! Once cooled, you can happily divide this up into portions, pop into an airtight container and freeze for up to 2-3 months.

Try your best to keep the breadcrumbs on top when you put it in the airtight container. That way, when you reheat it, youll still get that lovely crispy top.

A single serving should take 4-5 hours to defrost at room temperature.

Baked Vegan Mac and Cheese (Gluten Free, Nut Free)

What dairy free milk should I use for this vegan mac and cheese?

I recommend a very thick dairy free milk, such as coconut cream or oat milk. If you dont want a coconut after taste in your vegan mac, then I recommend going with the oat milk. Thats my personal favorite. The thicker the milk, the creamier your healthy mac and cheese will be! You can also use homemade nut milks if you dont have a nut allergy. I dont recommend using store bought refrigerated almond milk: it just wont be thick enough and will yield very watery results. Though this mac and cheese is healthier, you still want it to taste good!

This baked vegan mac and cheese can easily be made gluten-free . I recommend using Jovial chickpea pasta, lentil pasta, or your favorite brand of gluten free pasta .

Yes, you can definitely easily make this mac and cheese ahead of time, especially to save on time during the holidays.
