How to make Gluten Free Cream of Mushroom Soup

My favorite kind of mushrooms to use for mushroom soup are brown Cremini mushrooms also known as button mushrooms. They have a very neutral and light flavor and are healthier than white button mushrooms. If possible buy the ones that have been pre-sliced and washed. Prepping the mushrooms is by far the most tedious step of this recipe. If you can avoid it, why not?

If you cant find Cremini mushrooms you can also use Portobello mushrooms. Theyre also light in flavor.

For The Cream Of Mushroom Soup

  • Saute minced mushrooms and minced shallot in extra virgin olive oil in a small saucepan over medium-high heat until the mushrooms release their liquid, the liquid cooks off, and the mushrooms become tender, 5-7 minutes. Scoop the mushroom mixture into a bowl then set aside.
  • Melt butter or vegan butter in the pan then sprinkle in gluten free flour and whisk for 1 minute.
  • Slowly stream in chicken or vegetable broth while whisking to create a smooth sauce then add milk plus salt, garlic powder, and pepper.
  • Simmer until thickened, 3-4 minutes. then stir the mushrooms back into the soup.

    This soup is healthier than the canned variety because the quality of the ingredients used is decided by YOU! The big brand lists water as the first ingredient. Shouldnt it be cream or milk?

    Other ingredients in the canned variety are Soy ProteinConcentrate, MSG, Yeast Extract and Flavoring. What does flavoring even mean?Your guess is as good as mine.

    Some of those ingredients are probably in bouillon cubes andpowders so read your packaging. Find agood brand that works for you and your family.

    I really recommend using Authentic Foods brand superfine white rice flour. Vitacost also has a superfine white rice flour that has a relatively fine grind, too.

    If you dont have a truly superfine white rice flour, you can try using arrowroot in its place. You can also try using tapioca starch/flour, but it may make the sauce gummy so try using 20 grams instead of 30.

    If you use too little thickener in your soup, you can continue to cook the soup over medium-low heat to thicken it further. The more water that evaporates, the thicker the soup will be.

    Is Cream Of Mushroom Soup Gluten Free

    Store bought cream of mushroom soup is not usually gluten-free, as its thickened with wheat flour, not to mention filled with hidden carbs and preservatives.

    This cream of mushroom soup without flour doesnt need any flour or xanthan gum to thicken it, its thick enough on its own, thanks to the cream and pureed mushrooms.

Thick and creamy, no-can-required cream of chicken and mushroom soups that are not only gluten-free but easily made dairy-free, and concocted from 100% fridge and pantry staples. The holidays are filled with reasons to create casseroles green bean casserole and Party Potatoes Deluxe immediately come to mind which usually call for store bought, canned creamy soups. A few problems though:

  • Store-bought condensed creamy soups are usually not gluten-free, and the GF ones can be hard to find/expensive.
  • They are PACKED with sodium. Ben has to watch his sodium intake and the canned stuff is a hard no for him. Theres 36% of your daily value of sodium in 1/2 cup of the leading brand of cream of mushroom soup!
  • Even the gluten-free store-bought condensed creamy soups contain dairy, which is a no-go for my dairy-allergic dude Lincoln.
  • We are a mess.

    Next time you make this delicious soup, you may want to double the recipe to freeze half for later.

    1. Store the soup. You can pour the soup into freezer-safe food storage containers.

    Some people also like freezing soup in gallon Ziploc freezer bags. This can be a bit tricky to do. But then you can stack the frozen soup, which saves space.

    To pour the soup into the freezer bag, place the bag in a bowl. Then cuff the bag over the edge of the bowl. Ladle the soup into each bag.

    Then carefully press out any air. Seal up the bag.

    Remember to label and date the containers or bags with a Sharpie.

    2. Freeze the soup. Stack the containers or lay the Ziploc freezer bags flat in a single layer in the freezer. After the bags freeze, you can then stack them to save freezer space.

    The soup should remain good for at least three months.

    Cream of mushroom soup is a thickened cream-based mushroom soup made with a roux, made with flour and fat . You begin by cooking the vegetables until theyre soft and fragrant.

    Remove some cooked mushrooms. Well add those back into the soup when its nearly done, and smooth.

    Then, make the roux by melting butter and cooking it for about 1 minute with superfine white rice flour, freshly ground black pepper, and some salt. It will clump up, so keep whisking.

    Add the liquids: vegetable stock, and evaporated milk. The roux will thicken them as it cooks.

    Keep cooking the mixture so some water evaporates. This will concentrate the flavor and thicken the soup even more.

    Then, puree all the soup until super smooth. I like to use an immersion blender since the liquid is hot, so a standing blender will spurt and splatter the soup if you use it with hot liquid.

    Then, add back in the reserved mushrooms, and serve hot!
