Cook On A Hot Greased Griddle

A nonstick or cast-iron griddle is the perfect pan for pancakes. Its flat, even surface and lack of sides makes it easy to flip the pancakes.

Before cooking, heat and grease the griddle. If you cook pancakes on a cold pan, they wont brown or rise nicely.

Heat the griddle to about 350 degrees. If youre using an electric griddle, its easy to know when it reaches the right temperature. But how can you tell if youre using the stove? Do the water test. Place a few drops of water on the pan. They should bubble and then disappear. If the water sits on the griddle for more than a few seconds, the pan isnt hot enough. If the water sizzles and quickly disappears, its probably too hot.

Im leading with King Arthur Flour gluten free pancake mix because everyone in my family agreed that it was the best of the bunch. Since Ive never liked their all purpose gluten free flour , I was really very surprised.

Typically I find that King Arthur rice flour blends are gritty and contain way too much starch. This mix doesnt suffer from either of those limitations. Since the instructions call for having the batter sit for 10 minutes before you begin making pancakes, perhaps the rice flour softens just enough.

The pancakes werent super puffy like my buttermilk pancakes, but they were very light and fluffy. The taste of the pancakes alone, without any added sugar, honey or maple syrup, was really excellent. I really like this blend!

  • Ingredients: whole grain brown rice flour, potato starch, tapioca starch, rice flour, cane sugar, baking powder , natural flavors, salt, vitamin and mineral blend , reduced iron, thiamin hydrochloride , riboflavin , xanthan gum.
  • Here is the recipe that I used, based on the package label:1 1/3 cups pancake mix1 large egg3 tablespoons melted butter1 cup milkWhisk together eggs, butter or oil, and milk. Whisk in the mix. Allow the batter to sit for 10 minutes to thicken. Preheat griddle to 350°F/medium. Scoop 1/4 cup of batter onto lightly greased griddle.Cook 1-2 minutes, until bubbles form on top and bottom is golden brown. Flip and cook for 1-2 minutes more. Serve hot.

Bisquick Gluten Free Pancake Mix

Bisquick is known for being quick, easy, and inexpensive, but Id never tried their gluten free mixes. On the plus side, Bisquick is fairly easy to find and its budget friendly. As for taste and texture, we found the flavor to be pretty bland, and the mixture produced VERY thick pancakes and dense waffles. I thinned out the mix a bit with more milk to get thinner pancakes, and while they cooked better, they still tasted bland. If you go with this mix, I suggest adding some vanilla or cinnamon and maybe an add-in like blueberries, chocolate chips, diced bananas, etc.

OVERALL SCORE: 4/10

  • Taste: Pretty bland. Could be improved with vanilla, cinnamon, or mix-ins
  • Texture & Fluff Factor: VERY thick pancakes that were fairly dense. I thinned out the mix a bit with more milk which helped, but I still didnt feel like they nailed the texture.
  • Color: The waffles didnt brown at all, even after several rounds in the waffle iron. The pancakes fared better, but with the thick ones , the outsides often browned well before the centers were done, even with reduced heat.
  • Waffle Notes: It can be made into waffles. The directions and ingredient amounts needed are clearly listed. We found the waffles pretty bland, and fairly dense.

How To Reheat Frozen Pancakes:

Toaster or Toaster Oven: Warm pancakes in the toaster/toaster oven for 3-4 minutes – use a medium level of heat.

Oven: Warm at 350° for 3-4 minutes. I like to just place them on the open rack so that they warm and get a little crispy on all of the surfaces.

Microwave: Place pancakes in a single layer on a paper towel lined plate. Warm pancakes for 15-20 seconds. Check and add an additional 5-10 seconds until pancakes are warmed through.

Frozen Pancakes in Air Fryer: Use the reheat setting to warm your pancakes for 1-3 minutes. Check after 1 minutes and add more time as needed.

Pamelas Gluten Free + Non

One thing that makes this gluten free pancake mix great is that its based on whole grains. Pamelas uses a base of sorghum and brown rice flour, along with some starches to lighten it up. The end result is a REALLY nice textureits fluffy and light, has a really nice taste and the texture is a lot like gluten pancakes. Its also vegan-friendly, which is nice!

  • Taste: Really nice and well-rounded. It had a subtle vanilla taste, which was really nice. Not too sweet, and had a nice neutral flavor.
  • Texture & Fluff Factor: Crispy browned exterior and light fluffy middles. They were medium in thickness . They were great.
  • Color: The pancakes browned nicely! The waffles got moderately browned. Cooking longer to get more color resulted in overcooked waffles, but I think if I turned up the heat on my iron, it would probably work better.
  • Waffle Score: Waffle instructions are clearly give on the package. No change to the batter is needed. They were nice and fluffy. The exterior didnt get quite as crisp as the pancakes.

Krusteaz Gluten Free Buttermilk Pancake Mix

The BEST Gluten-Free Pancake Recipe EVER!

I wanted to try Krusteazs pancake mix for a similar reason to why I wanted to try Pamelas baking mix. Since their products tend to be available in wholesale warehouses like Costco, many of you have asked me if I like them.

Ive never tried their all purpose gluten free flour blend, but I imagine I should. The Krusteaz gluten free pancake mix made pancakes that tasted good and had very good texture.

However, two of my three kids didnt care for the pancakes overall because they have a slightly bitter aftertaste. I find that products with an aftertaste or products that have a gritty rice flour blend are best described as good, for gluten free.

Something being good, for gluten free bothers me so much, since we really should have moved past that by now. But I do still think the brand is worth a try since one of my kids enjoyed them. But only if you can find the mix for a really good price. Then, its worth a go.

How Long Can I Store Gluten

This mix can be stored in an airtight container for up to three months at room temperature.

It may stay fresh longer, but I wouldn’t know because we usually griddle our way through a triple batch of this gluten-free pancake recipe every other week.

For store bought gluten-free pancake mixes, always check the expiration date printed on the box.

What Is The Best Way To Reheat Pancakes

I like to reheat my pancakes three different ways.

  • My favorite way to reheat pancakes is to pop them into the toaster. Heating them in the toaster keeps the outside crisp as if it were just cooked. It prevents the pancakes from getting hot and mushy. Toast them on a low setting.
  • You can also reheat your pancakes in the air fryer. I heat my pancakes at 325º F for 4-5 minutes. Be sure not to overlap your pancakes so the air can circulate around each pancake.
  • Lastly, and my least favorite, is the microwave oven. The microwave is good if you are in a hurry. Microwave the pancakes for 30-40 seconds, depending on how many pancakes you are heating and how large and thick they are.

How To Use This Gluten Free Pancake Mix Recipe

A pancake mix like Bisquick is generally considered quite versatile, for all sorts of gluten free breakfasts. And this mix works just like the store-bought kind. Bisquick does make a gluten free mix, actually, but its gritty and really awful.

Ive tried nearly all the available gluten free pancake mixes and come up with a list of my favorite store bought gluten free pancake mixes.

Should Pancake Mix Be Thin Or Thick

The batter, once prepared, should be thin enough to easily pour and spread onto a hot, greased griddle but not so thin that it runs all over the griddle. Aim for it to spread to about 1/4-inch thick. If the batter seems too thick, add a little more water or milk. If it seems too thin, add a couple more tablespoons of batter.

Preparing The Gluten Free Pancake Mix To Store

Bobs Red Mill Gluten Free Pancake Mix

Gluten Free Pancakes Recipe (The Fluffiest!)

When you write to me and ask if you can use Bobs Red Mill flour blends in my gluten free baking recipes, Im always so sorry to say that I dont recommend you do it.

Typically, Bobs Red Mill products use a gritty rice flour and are of very inconsistent quality. Since Bobs Red Mill products are very well-priced, reliably gluten free and are available nearly everywhere, I so wish they would improve their rice flour.

I decided to give the Bobs Red Mill gluten free pancake mix a try anyway. The blend doesnt have white rice flour in it . Since pancake batter can sit before being cooked, I was hopeful that there wouldnt be any grittiness.

Im happy to report that I did not detect any grittiness. The pancakes had great flavor and taste. Unfortunately, they really could use some more leavening, as even with 2 eggs for 1 1/2 cups of the mix, they just were rather flat.

To keep this product review fair and true, I never tinker with the mixes. I may provide notes about how much liquid I think should be added, though, but thats it.

I really did have to restrain myself from adding some more baking powder to see if these pancakes were thicker as a result, though. Cutting back on the liquid might help, too, but I didnt see any feathered edges like I normally would when pancakes have too much moisture. It might even be that they need a touch more xanthan gum. Im just not sure.

Stonewall Kitchen Gluten Free Pancake Mix

My next favorite gluten free pancake mix is from Stonewall Kitchen . First and foremost, please be sure youre purchasing their gluten free pancake mix, based on the red gluten free stamp on the side.

And please note that the mix does not have a certified gluten free seal. If youre uncomfortable with this product because of the relative lack of proof of gluten free status, please dont purchase it.

All that being said, I decided to include this brand because its just simply really, really good. In fact, if it werent for the lack of certified gluten free status, it probably would have beat out King Arthur Flours mix for first place.

The pancakes turned out incredibly tender, not gritty at all , and not at all dense. I generally dont like most things that contain soy, since it tends to make baked goods tougher, but these pancakes are really quite perfect.
