Teff Flour: Tough And Tasty
Rich in nutrients, teff flour is a healthy and versatile gluten free flour. It is particularly rich in fibre, iron, phosphorus, calcium and B vitamins. Teff flour is best used in combination with other gluten free flours because it may leave your baked goods dry and coarse if used alone. Keep in mind as well that teff comes in several colours lighter colours have a mild flavour while darker colours are earthy in taste. Often used in breads, pancakes and cereals, teff flour should only be used in small amounts because it has a strong multigrain flavour. You can substitute it directly for millet in recipesor use it in combination with other flours. Try it with buckwheat to make pancakes and waffles or for injera, a type of sourdough flatbread typical in Ethiopia and Eritrea.
Gluten Free Alchemist Flour Mix A
This is my own GFA general baking gluten freeflour mix, which I formulated over many months after first becoming gluten free.It is based on my then understanding the qualities of various glutenfree flours, combined with lots of tweaking and testing. This blend iseasy to produce at home as all the individual flours it contains are readilyavailable in the UK. In bakes, I mostly add a little extra protein on arecipe by recipe basis in the form of ground almonds, oats or sorghum to ensurestability.
This flour blend has produced cakes, biscuits and other bakes which are light and have atexture and taste which rivals any gluten-based food.
I no longer add any xanthan gum to the base blend, as this also allows greater flexibility on choice of binder for each recipe.
What Type Of Gluten
First youll need to decide the types of gluten free flours youd like to use in your recipe. For this example, Im going to use my Crazy Good Gluten-Free All-Purpose Flour ingredients and percentage of total weight. Bobs Red Mill began offering gluten-free flours and mixes years before other brands. Therefore, its not surprising that their gluten-free flour blend is one of the best on the market. The only problem when youre dealing with a producer with such a varied product line, is which Bobs gluten-free flour blend youre talking about.
My favorite, hands-down, is their Gluten-Free 1-to-1 Baking Flour Blend not to be confused with their Gluten-Free All-Purpose Baking Flour. The Baking Flour blend, made from a mix of rice flours, sorghum flour, and tapioca and potato starch, steps in for wheat flour in recipes for muffins, cakes, and cookies nicely. What Is The Best Gluten
My simple answer is Cassava Flour.
Its also light and powdery in texture, rather than grainy or gritty.
These characteristics, together with the fact that it can be substituted for wheat flour in many recipes, make cassava flour a popular flour for gluten-free, grain-free baking and cooking. Its also an excellent nut-free flour.
Cassava flour has an earthy, mildly nutty flavor, which isnt surprising given that its formed from a ground-up root vegetable. But its worth noting when tasting your completed dish.
If youre controlling your weight, cassava flour is a smart choice because it has fewer calories than other flours. Its also strong in vitamin C, which serves as an antioxidant to help alleviate stress, activate your immune system while boosting your skins health.

How Do You Measure Gluten Free Flour
Lastlywhen you are measuring gluten-free flour REMEMBER to take a large spoon and gently dump the flour into the measuring cup. Then, once its overflowing, take a knife and scrape off the excess, so you have a nice, clean, and even line with the measuring cup. You do not want to scoop or pack in the flour, as this will make the flour the wrong ratio and you wont get the soft, just-like-wheat texture.

In the past several years there has been an explosion of gluten-free flour substitutes on the market to replace wheat flour. While they make it more convenient, rather than buying several flours to make your own mix, most still lack considerably in taste and texture.
The problem lies in the infinite possibilities of starch blends and varying ratios they can be blended together. Unfortunately, not all gluten-free flour blends are created equal, leaving vast differences in baking results. I experience this time and again when testing recipes for the site and writing my gluten-free cookbook.
For instance, white rice flour gives a neutral taste, but gritty texture. Sorghum flour, buckwheat flour, and teff flour can have very strong, off-putting tastes. While tapioca flours and oat flour has a more neutral flavor, they need complimenting starches to build elasticity.
Using a mixture of gluten free starches, such as rice, tapioca starch, potato starch, brown rice flour, coconut flour, and cornstarch can balance each other out, hopefully creating the best gluten-free flour. However, many products on the market fall short, resulting in disappointing baked goods.

You can buy gluten-free all-purpose flour in an individual package, or in bulk quantities. Individual packages are anywhere from 8 to 32 ounces apiece. Its a good idea to stick with individual bags if you dont plan on using gluten-free flour often, especially since gluten-free flour is only shelf-stable for a few months.
If you expect to use a lot of it on a regular basis for daily cooking and baking, youll save big if you buy gluten-free all-purpose flour in bulk. This usually entails buying three to ten packages at a time from a store or seller. The initial cash outlay may make it seem costly, but in the long run, you can end up saving a few dollars per pound.
