A gluten free yellow cake that’s good for eating by itself, but even better for getting crazy with that icing.

1 Stick Butter, Melted*

STEP 1

HEAT oven to 350F. Line or lightly grease the bottom only of 2, 8-inch round cake pans. For cupcakes, line muffin pan with paper baking cups.

STEP 2

WHISK together eggs, milk and butter in medium bowl until frothy. Add cake mix and stir until combined.

As much as we wanted to love the ultimate, tried-and-true Betty Crocker brand, this mix didnt quite do it for us. As far as flavor, there was a weird, chemical-like aftertaste that was rather hard to get past. One reviewer said, Something is not good. Rancid? So, not quite the reaction youre wanting from a boxed brownie. The texture was fine, but the issues with the flavor made this option one of our least favorites.

  • Beat the Mix Well this may seem odd, as were so often told with gluten-containing mixes not too beat too much. But thats not the case with gluten-free! They need to be aerated. So get beating and add air to that mix!
  • Utilize the Sugar Brown sugar is far more moist than white, so its a great alternative to make the final product moister. Also using more sugar than usual is a great way to make the mix better.
  • Use Soda Pop this may sound wild but it adds more air to the cake and I mentioned earlier how that makes the cake lighter and fluffier!

I do have to be honest with you, though, about the vanilla cake mix: If youre making gluten free vanilla cupcakes, this mix is amazing. The cupcakes have the most tender, perfect crumb and perfect vanilla taste.

If youre making a straight-up vanilla cake, though, I really prefer my recipe for The Very Best Gluten Free Vanilla Cake. Creaming the butter and sugar first, as we do in that cake, plus sifting the flour is really the only way to get a perfect vanilla cake.
