This ones really simple, although you might think it kind of weird. Tip number one is to use your pastry when its fresh. Now, I can hear you saying, Stacey, its frozen. That kind of defeats the purpose.. And while I hear you, and I totally get it, trust me on this one.
When you buy a packet of frozen pastry from the shelf in your supermarket, who knows how long its been sitting there for. Then you take it home and whack it in your freezer. How long are you going to leave it there for until you might decide to use it? So my hot tip is to use your pastry within 24 hours of getting it home. I know, thats short but when I started doing this, it made the biggest difference to not only the usability, but the end product. My sausage rolls and pastry cases were lighter, they were flakier, and overall, it was much easier to work with.

Rolling Out Your Pastry
This is where the fun starts – it’s time to make those lovely layers!
The layers in puff pastry are achieved by simply rolling and folding the pastry in a certain way.
However, as I said before, this relies on the pastry being cold so if your dough warms up at any point, just pop it back in the fridge.
The making of this gluten free puff pastry is really quite simple, it just takes patience more than anything.
Remove your pastry from the fridge and generously dust the work surface with gluten free flour.
Place the dough in the centre and use your hands to flatten the dough into a rectangular shape, like this:
Then, with the short end nearest you, roll the pastry out in one direction into a long rectangle.
You want it to be approximately 1cm thick .
Use your hands to keep shaping the pastry into a rectangle as you roll, so that you have reasonably straight edges.

There are an endless amount of things we can make with this glorious gluten free rough puff pastry! How The Layers Of Gf Puff Pastry Multiply And Why They Must Be Cold
After that first turn, the tripled dough is made up of 3 layers of butter surrounded in alternating fashion by 6 layers of dough. When the turns are repeated between 4 and 6 times, the layers multiply exponentially.
In pastry-making, the butter is kept cold before going into the hot oven. Like ice, when butter is cold, it contracts or is made smaller. When it is heated quickly, like in an oven, it expands. When the butter is in many, many layers, and is surrounded on every side by the dough, it pushes out the dough and creates all those flaky layers we love.
Larger pieces of butter can warm, but once chilled will regain their original shape, rather than melting into the surrounding dough. If you try to shape the butter packet when the butter is rock solid, youll find it almost impossible to shape.
If you begin with slightly warmer butter in creating the packet, you can shape it as you like, and then chill it until its firm. It will then retain its proper shape during the rest of the shapingand during baking.

Choosing The Right Gluten Free Flour Blend
Its understandable to think that a recipe that calls for an all purpose gluten free flour will work with any all purpose gluten free flour. Unfortunately, that is never the case, as some blends simply arent good. They can be poorly balanced, have gritty rice flour, or just other poor quality or unnecessary ingredients.
In this recipe, as in all my pastry recipes, you can use any of my recommended all purpose gf flour blends, namely Better Batter classic blend gluten free flour or Cup4Cup gluten free flour . Cup4Cup works particularly well here, since its balanced most like a pastry flour itself.
I still get emails from readers who are very frustrated with a recipe, telling me they followed the recipe to a T and that it failed. Theyre angry! But more often than not, they used a flour blend that just wont work, like GFJules or Bobs Red Mill gf blends. Quality in, quality out!

For years and years I was terrified of trying to make gluten free puff pastry.
I thought it would be impossible, that it would fall apart or make a sticky mess or just…not puff.
But when I finally nailed my gluten free shortcrust pastry recipe, it made me realise you can make gluten free pastry which is as good as the ‘normal’ version!
So I put my Big Girl Pants on and attempted to throw together a gluten free rough puff pastry.
I cannot tell you how happy I was when I sat in front of the oven and watched it ACTUALLY PUFF.
That’s right, with a few tweaks this has now become my failsafe gluten free puff pastry recipe for sweet and savoury recipes.

Is Puff Pastry Always Vegan
Puff Pastry a dough that turns into a flaky, buttery bread when cooked is not always vegan. In fact, puff pastry is traditionally made with butter and usually made with egg.
However, many store-bought puff pastries are made without dairy or egg because it makes them more shelf-stable. And in most cases, removing these ingredients leaves us with an accidentally vegan puff pastry.
But as we all know, milk and eggs arent the only non-vegan ingredients out there. So although some puff pastries might appear plant-based, you have to dig through the ingredients looking for hidden animal products.
But Ive already done the research for you! Below, Ive compiled a list of store-bought vegan puff pastry brands and where you can find them. If the brand has a product locator, Ive linked directly to it so you can quickly find the product you want!

How To Make This Gluten Free Puff Pastry
Puff pastry is in the category of doughs called laminated doughs. This means it is made up of layers. Laminated doughs involve three steps:
1. Preparing a base dough détrempe this is usually made of flour and ice-cold water. However, because gluten-free flour makes the dough tear I added lactose-free sour cream. Sour cream gives moisture and contains fat, which works perfectly with the gluten-free flour.
2. Enclosing fat beurrage inside the dough this is essentially a fat pocket that gets folded in the dough.
3. Rolling, folding, and layering the resulting dough After you enclose the beurrage in the détrempe, you then roll and fold the dough several times to create layers of dough separated by layers of butter. The fold is a key step to making puff pastry. You roll and fold the dough several times to make layers. There are two types of classic folds used in puff pastry. I like to use the single fold in which you fold the dough as you would a letter. The other type of fold is called double or book fold. This type of fold accomplishes twice the fold as the single fold.

What Is Vegan Puff Pastry Made Of
Vegan puff pastry is usually made of wheat flour, water, margarine containing palm oil, salt, and a few other ingredients. Sometimes a bit of sugar is included, as well. The key is that butter is not used, and no other animal products.

Why Isnt My Gluten Free Pastry Dough Puffing Up
If your puff pastry isnt rising into flaky layers in the oven, the butter most likely wasnt properly distributed throughout the dough. That can happen for many reasons, but the most common is that it melted during preparation, so melted into the dough, rather than being layered alternately, and kept cold.

There’s one absolutely, completely vital trick to making sure your gluten free puff pastry works….
Keep. It. Cold.
Nothing complicated – just pure temperature!
If your puff pastry dough gets too hot, the butter in those lovely layers your creating will begin to melt.
If the butter melts, you’ll lose those layers. No layers = no puff.
You’ll just end up with a tough-as-old-boots shortcrust pastry which trust me, doesn’t taste too great.
The best thing you can remember is: if in double, refrigerate.
Making gluten free puff pastry is definitely easier on a colder day.
In fact, if it’s really cold you may even be able to do the whole thing without having to stop and refrigerate the dough once.
But as soon as it starts to warm up, you’ll need to chill the pastry in the fridge .
This way it’ll stay super cold and you won’t need to worry about losing those layers you’re working so hard to create.
So if it’s a warm day, prepare to have lots of pauses to chill your dough between folds. Trust me, it’ll be worth it!
