Whats Your Favorite Cupcake Flavor

Gluten, Egg & Dairy-Free Chocolate Cake with Chocolate Frosting!

Mine is either Funfetti or Chocolate. I really dont know if I could decide.

But, I recognize that for some of you Vanilla may be your favorite! So instead of posting more chocolate-flavor-based cupcakes, I decided to finally share a gluten-free and dairy-free Vanilla Cupcake recipe.

And these cupcakes are GOOD. They are NOT your super light, fluffy and dry cupcakes that you buy from the store.

These Vanilla Cupcakes are very moist, a little thick and dense but still fluffy, and I dont think you would even know theyre gluten-free and dairy-free.

Even though Im a total chocoholic, these Vanilla Cupcakes are seriously good and Im a huge fan. If youve got a friend or family member who loves vanilla, these are the perfect birthday party treat. Or, theyre a great fun and simple Holiday dessert too.

How Do You Keep Gluten Free Cupcakes Fresh

Store the cupcakes at room temperature in an airtight container for 2-3 days. If you aren’t going to eat them within that time, I recommend freezing them in an airtight container.

These cupcakes taste pretty good right out of the freezer but, if you want to thaw them before eating, let them sit at room temperature for about an hour.

You can freeze them frosted or unfrosted. I have done it both ways and prefer to frost them right before serving rather than freezing them frosted. They just look better in my opinion.

How To Make Chocolate Buttercream Frosting

  • In a large bowl cream butter until smooth with a stand-up or hand mixer.
  • Add the pure vanilla and almond extract to the butter. Mix until fully combined.
  • Add the cocoa powder and mix until fully combined.
  • Add the powdered sugar one cup at a time to the butter mixture and mix until fully combined.
  • Add the milk to the frosting and beat until smooth and spreadable.
  • I add the frosting to a piping bag and use a Wilton 1M tip to decorate the cupcakes.

How To Save My Frosting That Split

Gluten

A frosting splits when theres a large variation of temperature in the bowl. It can be that your almond milk or butter are too cold or you added more powdered sugar-free erythritol.

Erythritol decreases the temperature of the batter. You can fix a split frosting by adding warmer ingredients in the mix, more room temperature almond milk for example.

If it splits because the mixture is too hot, pop the bowl in the fridge.

Topping These Cupcakes: Dairy Free Buttercream Frosting

When youre making dairy free cupcakes, its key that you have a great dairy free buttercream to top them with!

I found that using a dairy free butter like Earth Balance Vegan Buttery Sticks tasted best. You can also use vegetable shortening though!

The consistency of this frosting is just as smooth as my regular American buttercream recipe, and it pipes like a dream.

I decided to decorate my favorite batch of these dairy free cupcakes with an Ateco 869 frosting tip.

Making Almond Flour Cupcakes

Almond flour is the main baking flour used for these Paleo chocolate cupcakes. Almond flour is made from ground up blanched almonds. It has a slightly nutty and hearty flavor to it.

Almond flour is the perfect grain free and gluten free flour for cupcakes. It isnt as heavy as coconut flour and adds a great texture.

How To You Make Moist Gluten Free Cupcakes

The secret to moist gf cucpcakes is using the right gluten free flour blend, measured by weight, and a well-balanced recipe.

Not all gluten free flours are created equal, so if you use one thats more starchy, its going to absorb all your moisture and leave you with dry cupcakes. Plus, they wont brown at all.

I used a mixture of Better Batter and cornstarch to perfect this easy gluten free cupcake recipe. Follow my instructions, and I promise youll end up with incredibly moist and tender cupcakes.

What Does A Red Velvet Cupcake Taste Like

The way I like to describe a gluten-free red velvet cupcake taste is that it’s a combination of flavors that pull together to form a unique, and delectable cupcake.

Gluten Free Dairy Free Vanilla Cupcakes

These cupcakes and buttercream can easily be made dairy free by using vegan butter , or butter-flavored nonhydrogenated vegetable shortening in place of butter.

Any unsweetened nondairy milk works well in place of cows milk. I like unsweetened almond milk because it has some fat and is less watery than some nondairy milks.

These cupcakes are more tender with buttermilk. If youre dairy free or dont have buttermilk, you can make a buttermilk replacement with half milk and half plain yogurt by volume.

Do Gluten Free Cupcakes Taste Different

No! Well, they certainly shouldnt have a strange aftertaste or a gritty mouthfeel. They should have a moist and tender crumb, just like youd expect from a cupcake in a bakery. A good bakery!

If youve had gluten free vanilla cupcakes in the past and found them to be good, for gluten free, you werent eating the right cupcake, made with the right recipe and ingredients.

A gritty mouthfeel is from an all purpose gluten free flour blend made with a gritty rice flour. A strange aftertaste or mouthfeel likely means the flour wasnt good quality and well-balanced.

A dry cupcake might be made with the wrong recipe, so the ingredients were poorly balanced. Or, again, the flour blend wasnt good quality.

Cupcakes: Mini Cakes Or Not

Gluten

Did you know that not all cake recipes make good cupcakes? Its true! Just like not all muffin recipes can be made as quick breads .

When you bake cake batter in miniature portions, even if it bakes flat in a round or square cake pan, it may dome quite a bit when portioned into the wells of a cupcake tin.

How Do You Make Gluten Free Dairy Free Cupcakes

Its really very simple. I use this Sage stand mixer so after creaming the margarine and sugar together, all the other ingredients can be added and mixed to form a batter.

If you dont have a stand mixer you can use a hand held electric whisk. Or failing that, you can use a wooden spoon and your muscles but you wont get such light cakes.

If you want to make your gluten free cupcakes extra moist then make a sugar syrup to pour over the top. Youll find out how to do that in my recipe for gluten free chocolate cupcakes.

Can I Make These Gluten Free White Cupcakes In Advance

These gf cupcakes will keep at room temperature for about two days, so if youre making them for a party or other event, Id recommend making them only the day before.

If you need more time, go ahead and bake them, but then freeze them until needed. To defrost, just leave them on the counter for a couple of hours, covered with a dome so they dont dry out.

For The Assembly Of The Cupcakes

Once the cupcakes are cool, you need to make little holes in your cupcakes to fill with the jam, use something circular to make a small hole just make sure you dont go too deep as you need some of the cake beneath to hold the filling!

Spoon some filling into the hole youve made in each cupcake.

Spoon your buttercream into a piping bag with a large star nozzle. Then pipe your buttercream on top. If you dont want to pipe it, you can spoon it on top too!

How To Make Dairy-Free And Gluten-Free Chocolate Cupcakes Recipe

Get out your Hamilton Beach mixer and favorite mixing bowl. I will walk you through each step of baking these beautiful confections.

  • Pregame! Preheat your oven to 350 degrees. Line your cupcake pan with liners. This recipe makes 12 cupcakes.
  • Make sure your Dairy Free butter is at room temperature. Add it and your sugar to a bowl and mix on high for five minutes until it’s light and fluffy. This process is called creaming.
  • Add your wet ingredients. The slow start technology of the Hamilton Beach 7 Speed Hand Mixer makes this step mess free. Mix until everything is combined.
  • Fold in your strawberries. Fresh is best.
  • Divide the batter between the 12 cupcake tins. Bake for 25-30 minutes, or until a toothpick comes out clean.
  • Allow your Gluten and Dairy Free Fresh Strawberry Cupcakes to cool completely before frosting them.
  • To make your frosting add all of your ingredients to a bowl and mix until smooth, creamy, and fluffy. Just like with the cake you want your Dairy Free butter to be at room temperature.
  • While this recipe is written to be Dairy and Gluten Free, you can easily substitute ingredients.
  • Pipe on your frosting to the cooled cupcakes.

What Flour Do You Use

I choose to use my wholegrain gluten free flour blend in cakes these days. It has no rice flour in it and subsequently, no arsenic. It also means that the final bake is not gritty like cakes made with blends that contain rice flour.

I created the flour blend when I couldnt find anything nutritious on the market to bake with. I also couldnt find one single flour blend that I could use in all my baking from gluten free bread to biscuits, pasta, pastry and cakes.

With my science degree I spent two years testing different gluten free flours until I came up with a blend that could be used for everything whilst having a high wholegrain content. You can find out more about my rice free wholegrain gluten free flour blend here.

What Sized Pans Should I Use For A Smash Cake

I like to use three, 4-inch round cake pans to create the perfect mini cake that has lovely layers. The layers also give your kiddo the opportunity to really smash the cake, which he or she will love!

Of course, you can also use 6-inch round cake pans, but I find 4-inch cake pans to be the best option for this smash cake.

What Kind Of Oil Should I Bake With

Okay, weve settled that oil is going to produce the most amazing cupcakes. Now we gotta figure out what kind of oil to use in these gluten-free and dairy-free carrot cake cupcakes. I personally bake with all-vegetable oil. While I know it can get a bad rap, its affordable, accessible, and honestly, its not like Im chugging it.

That said, a few other oil alternatives to use would be avocado oil, olive oil, sunflower oil, or even liquid coconut oil. Be aware though that these other oil substitutes can leave a bit of a stronger taste and might be detected in the cupcakes.

Learning What Alternative Dairy Products Are Out There

I drink regular milk on a daily basis, so Im not an expert when it comes to alternative dairy products.

I had a lot to learn. There are so many dairy free alternatives these days, I knew this wasnt going to be a simple recipe test.

I wanted to try a ton of different types to see what worked best.

After spending about 20 minutes in front of the alternative dairy section at Whole Foods, I made my selections.

I tried to pick alternative products that are relatively easy to find, and frequently consumed by those who are lactose-intolerant or dairy-free.

Can I Make Your Gluten

Of course you can, but you definitely dont need to. I use both a stand mixer and an electric whisk for this recipe. Heres a link to the electric whisk I use.

A stand mixer makes making buttercream a breeze and an electric whisk speeds up mixing the cake batter.

You can of course, use either for both tasks too, just make sure you clean your stand mixer bowl in between of course.

How To Make It

Its weirdly easy and quick. Heres how you do it:

Preheat the oven to 325º Fahrenheit.

Combine all the dry ingredients for the paleo cupcakes in a large mixing bowl whisk well. In a medium bowl, combine all the wet ingredients for the paleo cupcakes whisk well. Stir the wet ingredients mixture into the dry and stir until completely smooth and free of lumps.

Line 12 cupcake tins with cupcake liners, ideally parchment paper liners. Fill each liner 3/4 of the way full. Bake for 16-17 minutes, checking at 14-15 minutes, or until a toothpick inserted into the center of a cupcake just comes out clean. It will have crumbs but should not be coated and look like the center is still liquid.

Remove from the oven and let sit for 5 minutes remove cupcakes and let cool fully on a wire rack.

Make frosting: microwave all frosting ingredients together in 60-second bursts, stirring very well in between. Once totally melted and completely smooth, set aside until room temperature or chill until very firm but scoopable.

Frost completely cooled cupcakes with frosting and top with chocolate jimmies, if desired. Try using a piping bag to frost for extra fanciness!

Can I Make This Using The Creaming Method

Healthy Banana Cake Recipe (Gluten Free, Paleo, Dairy Free)

Of course I prefer to use the all-in-one method for these as I find its always a safe bet with cupcakes.

But of course, youre more than welcome to cream the sugar and softened butter together, then add the eggs and mix, THEN add the flour and mix once more.

It works perfect both ways so its totally up to you!
