How To Make Vegan Gluten Free Carrot Cake

- Add gluten free all purpose flour to a mixing bowl along with brown sugar, baking soda, baking powder, salt, cinnamon and nutmeg and mix together.
- Then add in grated carrot, flax eggs , applesauce, oil, vanilla, apple cider vinegar and chopped walnuts and mix into a thick batter.
- Divide between two 8-inch prepared cake pans and bake for 30-35 minutes.

Baking with these is most similar to baking with straight whole wheat flour resulting in dense, dark baked goods that dont rise very much so make sure only one of the flours in your blend is high-protein and the others are lighter. But too much of it can make your bakery gummy, and well, not very good- again, I have experience with that too, haha. Generally I like to stick with just a teaspoon of psyllium husk powder in my batter, but in larger recipes you may want to experiment with more. I used 3 teaspoons in my Snickers Cinnamon Rollsand they were perfectly fluffy.
