Gluten Free Pancakes: Griddle Vs Pan
You can make these gluten free pancakes anywhere and any way you would have made conventional pancakes in the past. They dont behave any differently.
If you have a nonstick stovetop or electric griddle, by all means use that. A griddle is especially good for making big batches of pancakes at once.
If you dont have a griddle, any nonstick pan will work. But whether you use a pan or griddle, make sure its nonstick or youll end up having to use so much grease that youre basically frying the pancakes not just cooking them.
If your nonstick surface is new enough that its still really nonstick, you dont have to grease it. You can just make lovely, fluffy pancakes with an even, golden brown color on both sides.
But if youd like to make pancakes with the slightly darker edges, be sure to grease the nonstick pan. You can greasing it with some cooking oil spray, a pat of butter, vegan butter, or even coconut oil.

How To Make Gluten Free Dairy Free Pancakes
In the pancake recipe, the only dairy is cows milk. Simply replace the cows milk with your favorite non-dairy milk from a carton . My favorite is unsweetened almond milk.
In the pancake bites, there is also some melted butter. That can easily be replaced with Earth Balance buttery sticks, Spectrum brand butter-flavored nonhydrogenated vegetable shortening, or virgin coconut oil, each melted and cooled.
Why Sift Flour And Other Powder Ingredients
There are a number of benefits to sifting flour and other ingredients like cocoa ingredients:
It removes any unwanted debris and you can get a more accurate measurement than when packed tightly in a bag.
It also removes any lumps that can get into the batter and be hard to break up later, or be missed altogether before baking.
If you sift the powdered ingredients together, it helps combine them and mix more evenly with other dry ingredients like sugar.

How To Make This Vegan
To make these Gluten Free Muffins vegan you can sub applesauce for the eggs. Store bought is fine and if you do not have it you can make your own applesauce at home. The idea is to add moisture to the recipe. Additionally, if you do not have apples you can use mashed bananas or pumpkin puree instead, just make sure to use a vegan substitute. You will use 1/4 cup for each egg.
Homemade Gluten Free Flour Blend
Using a homemade mix of gluten free flours made the very best, soft, fluffy pancakes.
I think this is because I was able to adjust the amount of gum needed and I used the bare minimum per recipe as any more than that tends to make them sticky, this is a problem with most ready made blends that have gum added which is often too much in my opinion.
I tested and retested this recipe with various gluten free flour combinations and the best results I got were using a combination of white rice flour, brown rice flour, and potato starch. If you can find those specific flours I recommend using them in the quantities listed in the recipe below. You could substitute one or more of the flours but the result will probably be different.

If you want to make this a xanthan gum free recipe, just use a gluten-free plain flour blend and add an extra 1/2 tsp of baking powder instead.

Pamelas Gluten Free + Non
One thing that makes this gluten free pancake mix great is that its based on whole grains. Pamelas uses a base of sorghum and brown rice flour, along with some starches to lighten it up. The end result is a REALLY nice textureits fluffy and light, has a really nice taste and the texture is a lot like gluten pancakes. Its also vegan-friendly, which is nice!

How To Store Your Gluten
Im sure youll instantly eat these as soon as theyre fried like I do! But any leftovers can be store in an airtight container in the fridge, once cooled.
To refresh, simply pop them in the oven at 170C for 5-10 minutes until warm, or microwave for 2 minutes until piping hot.
To freeze them, pop into an airtight container, once cooled, and store in the freezer for 2-3 months. Allow to defrost at room temperature for 3-4 hours before following the reheating guidance above.
Bobs Red Mill Gluten Free 1
Please note that Bobs has TWO gluten free flour blends that are not the same as they contain different gluten free flours. I do not recommend you use their all-purpose blend as it is primarily made up of ground up garbanzo beans whereas their 1-1 baking flour thankfully has no bean flour.
Out of the store bought blends I tested this was one made the best pancakes, not quite as good as using my own blend of flours but the pancakes were still nice and fluffy. They were more sticky than with the homemade blend, probably due to the level of gum in the flour blend.

How Long Can I Store Gluten
This mix can be stored in an airtight container for up to three months at room temperature.
It may stay fresh longer, but I wouldn’t know because we usually griddle our way through a triple batch of this gluten-free pancake recipe every other week.
For store bought gluten-free pancake mixes, always check the expiration date printed on the box.
Gluten And Dairy Free Pancakes

- 1 3/4 cups gluten-free flour
- 2 tbsp sugar
- 2 tsp gluten-free baking powder
- 1/2 tsp baking soda
- 1 1/2 cups soy milk, rice milk or almond milk
- 3 tbsp cooking oil
- Melt a little margarine in a frying pan. Using a ladle, spoon mixture and drop into the pan. Once bubbles appear on the surface of the pancake, flip and cook on the other side. Repeat as necessary.
